3/4/07- Cooking Ahead

So what are you making today (or made yesterday) for the upcoming week?

I have a quiche in the oven and have diced/cooked a pound of bacon. I still need to boil some eggs and I am going to make some Splenda/cayenne spiced pecans. I've had a bag of pecans in my freezer forever and it's time to get them out! I also froze leftover taco meat into 1/3 cup portions (in a muffin tin) for a quick taco salad.

I'm making a pot roast in the pressure cooker at the moment... Will add cauliflower and turnips to the juice to cook as well... this will be for the week.

I'm cutting up a big thing of romaine lettuce for this weeks salads.

I made up Chicken salad and egg salad also for this week.

I will be making another batch of flax muffins.

Sundays are always my cooking day.. and MmMMMMM that roast smells so delicious... Can't wait until it's done.

I made a yummy quiche and some Stroganoff with Dreamfields. I have some steaks to cook up for dinner and some roasted asparagus. I will have left overs of these as well.

I should be set for the week.

Have a batch of chicken soup in the crockpot, made a mashed-cauliflower casserole which will last all week and a batch of Rev Rolls.

I cant cooked bacon ahead cause i wouldnt have a problem eating one pound...even while in deep ketosis

I cooked a turkey breast in the crock pot, broiled some salmon to eat on a bed of spinach, stir fried some chicken breast to eat on salads and I have pork chops in the oven for dinner. It's gonna be a yummy week!

I love the tip about freezing the taco meat in the muffin tins, what a great idea.

So far, I made a big batch of taco meat, meatloaf in muffin tins, and a huge broccoli casserole. Having steaks on the grill and a salad for dinner.

I made a huge pot of red kidney bean chili. Enough that I had my mom come over and bring a large container to take some home for her and my stepdad and I still have a TON left for the week.

I grilled about 12 chicken breasts, sliced them and bagged them into individual servings (about 8 servings). I washed and dried my romaine lettuce leaves that I use to make my chicken and ranch wraps.
