just made my version of crackslaw - cabbage, white meat chicken, green onion, garlic, soy sauce, just a drizzle of sesame oil. Yum. I could eat this daily.

I need to check in here to get ideas, since sometimes I feel like I eat the same thing over and over. Hmm, I guess that is what the Recipie Room is for, right?
Breakfast: Yummy scrambled eggs with a little cheese Lunch: Salad; chicken, bacon bits, cucumbers, celery, lettuce/spinach and ranch dressing. Snack: Yogurt (sugar-free and low-carb) Dinner: Not sure yet - eating out at Applebees. |

B: Atkins Morning Apple Crisp Bar, 1/2 package of "Just the Cheese" Herb & Garlic (I ate in the car cause I woke up like 20 minutes before I had to be at work due to my alarm dying)
S: Atkins Caramel Fudge Brownie Bar (these are my addiction) L: Chicken Salad (pretty much diced chicken and mayo with some salt) S: Atkins Caramel Fudge Brownie Bar (again, my addiction) D: Don't know yet! Liquids for the day have been 34oz of water and 20oz herbal tea (non caf). Will probably drink another 30-40oz of water before the day is through. Now if I can just scrape together the energy to exercise (i.e. play DDR exercise mode!) before dinner I will be doing alright! |

Pumpkin Sausage Soup
I love this stuff. There are several different recipes and the one I make is as follows:
One pound jimmy dean sausage (in the tube) I get mild 1 to 2 cups minced fresh onion 2 cloves minced garlic 2 cups minced mushrooms 1 cup cream 1 cup water 2 cans chicken broth (I use one swansons and one campbells) 2 15 oz. cans pumpkin white pepper, kosher salt, curry powder to taste Brown the sausage (really leaves no fat to be drained) and add onions, garlic and mushrooms. Keep stirring and browning everything. Add everything else stirring and combining after each addition. Simmer for 45 minutes. I then put it in the fridge and wait till the next day when the flavors have melded and then I nuke it! I had 2 servings for brunch today. And it's snowing outside so it's perfect!!! Marieze

L: Ok, now this is the amazing part, I'm a mexican food addict and I went to my favorite restaurant and ordered a salad (lettuce, tomato, cheese) and put queso and salsa on it. Absolutely no chips or tortillas!! Yea me! D: prob another hot link and low carb beer. Wed. night is bike night and they serve free hot links. |
