Good morning!

B'fast: 2 eggs, scrambled w/2oz sausage patty; coffee
Lunch: not sure. Probably tuna and salad
Dinner: pork chops, broccoli, salad

Need to make some 'spinach bread' later so I can have a sandwich lol
Just thaw and squeeze dry a 1lb pack of frozen spinach, beat 4 eggs and mix with the spinach along with 1oz shredded cheese (parmesan is good)and a little salt and pepper.
Spread in a 9x13 pan that's been sprayed really well with non-stick spray and bake at 350 until the whole thing is firm, about 15 minutes. Let cool and cut into 6-8 squares.

I made some mini Peanutbutter cheesecakes, too! (for that sweet tooth). Very easy spin on the cream cheese muffins.
This makes 6 regular sized muffin tin ones:

8oz cream cheese
2T crunchy peanutbutter
3pks splenda or 6tsp(2T)
1/2 tsp vanilla extract
1 large egg

Microwave cream cheese and peanutbutter for 30-45 seconds until it's soft enough to mix with a spoon. Add everything but the egg and beat with a spoon for a minute to cool it down. Add the egg and mix until it's incorporated.
Fill a 6 cup muffin tin (spray really well with non-stick spray) about 1/2-2/3 full.
Bake in a preheated 350 oven for 15 minutes. (toaster oven took about 11 minutes, but the hear source is closer).
let cool completely before removing and chilling.

b- I had Flaxmeal hot cereal for breakfast. Either I'm getting used to the taste and texture (which was difficult to swallow at first) OR I'm just learning how to flavor it better with a touch of 1/2 and 1/2, a TB of butter, and a tsp. of DaVinci's Gingerbread flavoring.

l- I'll have some green salad and tuna fish for lunch.

d- I'm not sure what I'll have for supper yet, but it'll probably be a grilled chicken breast.

For snacks I often microwave a cheese stick (any type) on a paper plate for 1 minute. It turns into a type of cheesy cracker that I can eat as it is, or spread a bit of cream cheese or low-carb peanut butter on. It helps me to feel as if I'm indulging even when I'm not.

Crunchy snack (I have the munchies tonight-must be cuz I am freezing-shoveled 4 inches of snow off our sidewalks. Brr)

B - Egg O'Muffin - mixture of eggs and sausage baked in a muffin cup

L - Deviled Chicken Salad - mixture of mustard, mayo, chic and HB eggs

D - stuffed pepper with mild Italian sausage, diced tomato, zucchini and topped with grated romano and mozzarella

Lots of water, 2 cups black cofeee - a.m. and decaf mandarin orange tea in p.m.
