Marieze

On that pumkin sausage soup or some call it chilli....doesn't the pumpkin add a lot of carbs. I bought the canned pumpkin yesterday and my can that I picked up had 9 carbs. Then it called for diced tomatoes...is that canned or raw? The canned tomatoes had 5-6 carbs. I was just wondering. How much of it can you have...a cup?

It is nearly noon here and all I have had so far is my leftover steak from last night.
It is just me and 4 of my kids during the day tho and we usually only eat one meal and then snack until dinner.
For snack later I may have salad or yesterday at Sams I got this yummy spinach dip, just not sure what I will dip into it!

Dinner-not sure yet!

mommy

My pumpkin sausage soup doesn't have tomatoes at all and is NOTHING like chile

You might want to do a search and see the various recipes for it, but here is my tweaked version;

2 15 oz. cans pumpkin
1 medium onion, minced
2 cloves garlic, minced
1 pound of jimmy dean sausage
1 to 1 1/2 cups minced fresh mushrooms
2 cans chicken broth
1 cup water
1 cup whipping cream (whole cream)
salt, white pepper and curry powder to taste
1 tea. italian spices

brown the sausage in a pot. then add the garlic, onions and mushrooms. add the pumpkin, stir and then all the liquids. I do this over medium heat and then add the spices. I let simmer for about 45 minutes then I'm good to go!

Like most soups, even better the next day. Not sure of the carb count, but I lose just great eating this all week!

Marieze

I'm getting back on track after being away for a few days. 3 days with no eggs!! I went hungry most of the weekend (I think next time we'll spring extra to get a kitchenette so it's easier).

Monday:
Breakfast: 4 eggs
Snack: 0 carb chocolate bar
Lunch: Chicken drumsticks and lettuce with mayo
Snack: Chayote with cinnamon and sweetner
Supper: Hamburgers, salad
Snack: egg drop soup (if I'm hungry; just broth with a few veggies and egg swirled in)
