FYI - I made the one above AND the Sausage, chicken and mushroom casserole from Linda Sue's recipe's (It tastes like meat and potatoes, its' awesome!) They both came out great. So, now I have a little variety for the next couple of days!

Question--and I don't know how to do the quotes but which casserole tasted like meat & Potatoes? I'd like to make that!

B - faux stuffed french toast (3 egg omelette w/cream cheese, cinnamon & splenda)
L - Chicken saldad (shredded roast chicken breast w/mayo) 1/2 cucumber.
D - "Portabello Skins" - baked portabello mushrooms topped with cheese, bacon, tomato & chives.

Gave DH a portabello mushroom growing kit for christmas and we are on our 2nd harvest. Last harvest we didn't use them all - I am not as big a mushroom fan as him, but with the recipe above (that I just found today) I could be!

I seriously look forward to posting on this thread everyday

B: Late!! 2 peices of salami, 2 peices of cheese. Coffee w/ SF french vanilla creamer.

S: Diet Wild Cherry Pepsi. Pickle.

L: Very small bowl of Broccoli Cheese soup catered at the office. I'm sure it was loaded with carbs somehow. Didn't bring any lunch from home, so I only ate a bit. Pickle.

S: Green Tea.

D: Burger w/ provolone, onions, peppers, mushrooms, pickles, mustard. DH wants some Buffalo Chicken Tenders, so making those too.

Few glasses of wine. Can't wait to sit down and relax! *Sigh*

B: 3 sausage links drizzles with SF syrup and 1 container of Kroger Carb Master yogurt and coffee w/ heavy cream

L: Salad w/ grilled chicken and way to much Ranch (I wasn't paying attention and it all globbed out at one time)

Snack: A 2 pod cup of Vanilla coffee from my Senseo (Love, love, love it!) and 1/2 a EWBW bar.

D: Not sure yet, will try to talk my husband into mexican, so probably fajitas.

MandaSue, what kind of LC wine do you like? Every once in a while I'll drink a Michelob Ultra, but I really would like a nice glass of wine.
