Breakfast anyone

What is your favorite L.C. breakfast

I still enjoy a couple fried eggs and a piece of sausage but im sure i will get tired of that soon, I need ideas.

I like scrambled eggs with bacon, a little green onion, and cheese. Sometimes a boiled egg.... Today I had left over homemade chicken nuggets and crystal light.

Crustless Quiche with spinach, ham, cheese, mushrooms and 4 eggs. mix and bake 30 min at 350. delish.

That sounds great i will go to the store tonight and make it for me and my wife in the morning.

Maybe a stupid question but do you use canned spinach?

1 slice of sauteed onion, 2 sauteed mushrooms with 2 scrambled eggs poured on top to make an omelet.

when the egg is cooked I add a 1/2 tablespoon of fresh pesto (not jarred gross glop) a sprinkle of feta and a slice of ham.

MMmmmm and less than 300 calories

Xcarbolicone, I'm not Stella but when I make the quiche, I usually use a package of frozen chopped spinach, thorougly defrosted and all the moisture squeezed out of it. I also sometimes use fresh baby spinach. The canned might do. (Popeye sure got strong using it!)

I love hard boiled eggs I have 6 every morning...4 without the yolks and 2 with

The quiche sounds really good though...maybe I need to try something new too

This may sound strange, but my favorite breakfast (eat it everyday) is Pumpkin Sausage Soup. I make a pot of it every week, freeze it in 1 cup portions and pop it in the microwave for 4 mins at half-power. It is the quickest breaky I could find that would actually hold me over til lunchtime.

One Minute Muffin

I discovered this at another low carb website and absolutely love it! I'm sure others here know about it too.

If YOU haven't read about it, try it:

Melt 1 or 2 tsp of butter or coconut oil in a small bowl. Mix in 1/4 cup of flaxseed meal, 1/4 tsp of baking powder, 1 egg, 1-2 packets of Splenda or 1 TBS of SF syrup (I use blueberry). Pour into a silicone muffin container or just zap in same bowl if it's very small.

Microwave on high for 1 minute. Turn out and let cool.

Then for a frosting, I mix 2 TBS of cream cheese and 1/2 tsp of SF blueberry syrup and coat the warm muffin top.

Enjoy!

p.s. If you omit the sweetener, you can make buns out of this recipe as well. Play around with it to see how creative you can get!

Some interesting ideas so far! I usually just have a 2 egg omelet with diced bell peppers and cheese with 2 tbsp of salsa on the side for dipping.

I use fresh spinach, just chopped up in bite-size pieces.

Broccoli works well too.

Curious... what do you do with the other yolks? ... Reason I'm asking is I'm trying to do a lower-fat low-carb plan (per doctor's orders) and still love my hard boiled eggs...

There's a great crustless quiche lorraine in the recipe room. I use fresh spinach. BTW - there's never a STUPID question. We all learn from these posts.

I have low carb flax seed pancakes sometimes, with turkey bacon or sausage. I love land o lakes sf whip cream sprayed on top of the pancakes.

Sometimes I have leftovers from the the night before.

Breakfast cups baked in the oven. Cook up some sausage and crumble it in the bottom of your muffin tins. Place a strip of bacon around the inside of each muffin tin, pour in egg beater or a regular egg, top with cheese and bake. They are very good and reheat well. You can also add onions, green peppers, mushrooms, etc, to them.

My favorite omelette is egg beaters, colby cheese, and Mrs Dash Southwestern chipotle seasoning sprinkled on top.

Here is another favorite:



Greens, Eggs, and Ham


Serving Size: 2

-= Ingredients =-

1/4 onion, diced
1 clove garlic minced or pressed
2 cups fresh spinach leaves
4 ounces cooked ham or Canadian bacon ; diced
1 teaspoon olive oil ; 1 T butter
6 whole eggs ; beaten
2 ounces cream cheese ; cut in 1/2 inch cubes
salt ; pepper

-= Instructions =-

Heat oil and butter in a skillet. Saute onion and garlic until translucent; do not burn

Add spinach leaves and wilt

In a bowl, beat the whole eggs, add salt, pepper, diced ham, and cream cheese cubes. Add the egg mixture to the sautéed ingredients in the skillet and cook over medium to medium high heat, gently turning the eggs as the cheese melts.

Serve immediately

I've been loving Flaxmeal Pancakes lately.

I mess around with the recipe a lot, adding different things, but here's the base that I use:

2 Eggs (Sometimes I use whole eggs, sometimes I use "Just the Whites")
2 T Flaxmeal
1 packet Splenda
Dash of cinnamon .. few drops of vanilla extract.

To this base I've added ..

Pumpkin Puree or LC/SF Jams. I have tons of Walden Farms and Jok n Al fruit spreads .. so they make a nice addition. Can also use some SF Davinci (your choice of flavor) to bump up the flavor.

eww! don't do it! Not only does it smell bad, but it makes the quiche too runny... definitely advise using frozen or baby spinach.

Haha! No prob. As soon as I get home from class, I will break out my naturopathic diet book and your tastebuds will thank me!


The quiche is awesome though... i make it the night before as it reheats really well for my breakfast throughout the week or a yummy snack.

I'm kindof a yogurt, cottage cheese & berries, or protein shake kind of girl in the mornings, but when I want something a little more substantial, I LOVE a pumpkin mock danish! If you like Pumpkin Pie, you shuld try it.

Pumpkin Mock
2 oz. cream cheese, softened
1/4 c. pumpkin
1-2 pkts. Splenda
1/2-1 t. pumpkin pie spice
1 egg

To make it smooth, I mix everything in one at a time in the order listed above, starting with the cream cheese softened in the microwave for a few seconds. Once its smooth, nuke it for about 1.5 minutes. It should be cooked mostly around the edges but still soft in the center. a lot of people like to eat it this way, so that they have the "danish" center "filling", but at this point, I like to stir it all up, put a squirt of SF whipped cream on it and enjoy!
