Coconut Bark is a recipe that is made with Virgin Coconut Oil, there's a recipe at the Tropical Traditions website if you Google it up. You can add anything into as you wish.... Like today, my bark has some crushed raw almonds and unsweetened shredded coconut mixed in as well.

B - Mexican omlet, decaf
L - was at a ladies meeting where a serve yourself luncheon was provided by the hotel. They served scalopped potatoes and 2 pasta dishes!!! green beans and salad along with about 5 different kinds of full sugar deserts. I had salad, green beans and picked a couple pieces of chicken out of one of the pasta dishes. I was certainly wasn't stuffed when I finished.
D - a baked chicken breast, spinach sauteed in olive oil with onions and fresh garlic, faux potatoes, ice tea.

Sharon, your lunch is one of my favorite meals. I could have it every day. I have sworn off peanut butter until Christmas, and I miss it.

On another thread I read of someone who put her coconut bark in her coffee. It sounds like it would make a delicious mocha type drink.
