We are having roasted prime rib with mashed brocoli/cauli.

Whats everyone else having? Looking for more menu ideas.

Pecan crusted salmon with a fresh spinach/strawberry salad. Homemade olive oil, vinegar + poppy seed dressing (will sub the sugar with Splenda).

Hmm... proteins, fats, veggies, berries... we all eat so unhealthily.

my *lunch* was what was good yesterday..........chopped up roasted chicken (from walmart deli.......the whole chik) chopped avocado, chop tomato, green onion..some sour cream and mayo.....yum!!

I lucked out---hubby is testing some recipes for a BBQ contest, so he is cooking me boston butt and smoked chicken. I'll toss a salad, might make something chocolate creamy like a mousse.

We had a nice brunch of sausage, bacon, and overeasy eggs with fried cheese to dip into the yolks. And a Bloody Mary.

i had chicken and pepper sausages (1 carb each, i had two) with green beans...(DELICIOUS)
followed by jello with cool whip and da vincis hazel nut syrup...

was a good meal! *yum*!

I don't see the menu thread for this week. So I'll post my eats here.

B - spinach/bacon/pepper jack cheese casserole

L - BLT steak salad w/ homemade dill dressing

S - couple of nibbles from veggie platter (cucumbers, celery, grape tomatoes) w/ sour cream/salsa dip

D - peanut thai chicken on spaghetti squash

S - yogurt mixed w/ raspberry Davincis & flax

Isn't LCing wonderful?

Getfitmom, do you have a recipe for the thai chicken or is it from a restaurant? Sounds yummy

Mine is B: 3 scrambled eggs with dill in butter.

Wooohooooo! I'm free as a bird!
My house is full of fisherMEN. I loaded up on steaks, I pre-assembled side dishes, desserts, and a big bowl of salad to get them through the weekend on their own.

I'm doing chef salad for me, then hitting the bingo hall with my girlfriends.
Saturday, more salad then out for a jam session followed by a game or two of pool.

I haven't had a girls weekend for a long long time, as a 'housewife', I rarely get a weekend off!!!! WooooHooooooooo!

Almond, green beans and cauliflower soup. It was wonderful but a bit high in carbs so I'm only going to make it once in a while.
