OWL Menus and Cooking Ahead

M-Pork chops with splenda-sweetened spicy mustard and thin slice of onion, wrapped in bacon and fried in dry skillet, slaw, green beans
T-chicken and broccoli alfredo, salad
W-hamburg steak, mashed cauliflower, green beans....bleh, I give this to hubby and I eat chef salad
T-homemade hot wings, salad, maybe jicama fries or fried green beans
F-leftovers with salad, or burgers at the moose lodge
S-a party, there will be oysters there, and I'm taking cottage cheese salad and a cheese ball with celery for me and crackers for them. and also will unload the carby stuff in the freezer...remnants of cupcakes I baked for volunteer effort, turn garlic bread into bruchetta, etc.
Su- roasted venison with oven-fried jicama, and some other vegetable, not sure yet.

Cooking ahead--really challenged by hubby's lunch packing needs.... he's Mr. Hoover with the leftovers lately...
-extra portions of each dinner will be cooked for the following day's lunch
-broccoli and bacon salad to have on hand
-scrambled eggs and sausage for me and hubby
-I'm precooking tons of chick wings, will season and freeze them for instant hot wings.
-making up extra mashed cauliflower for the freezer.
-will make chicken soup for freezer if I can get to Trader Joes for non-injected chicken breasts... what's up with that dang "enhanced with 15% solution" junk?????

Hmmm I seem a tad bit negative today lol, must be mopey monday

Monday's Maintainer Menu

1/2 decaf black coffee, 4 cups all day
Brunch: 1 poached egg, 1 zucchini muffin
1:00: tacoless salad w turkey chili, lettuce, cheddar cheese, few tomatoe slices
4:00: Carbquik pumpkin bar
psyllium fiber in 8 ounces water
6:00: Chicken enchilada using lc tortillla
2 cups mixed greens, fresh veggies, 2 T ranch
6 oz wine
Snack: reduced fat string cheese grilled on flatout bread, CF diet soda
70 ounces water

Emel, mopy Monday, or not you sure have your whole week's menu planned WTG That is what I call organized. Some days I sure don't know what to cook for supper.

Thanks Loretta,
Things are looking better already---just found out I get Sunday off from cooking--wooohooooo!
Hubby is testing out 2 recipes for a BBQ contest, so he's in charge and we'll have chicken legs and thighs and either pork ribs or picnic loaded up on the grill.
And to think I thought his usefulness was limited to reaching top shelves and opening jars....

So scratch Sunday plan, and put me down for just slaw and fried zuchini (veg oil, salt/pepper, egg whites and a sprinkle of pork rind crumbs while the first side is frying).

I've pretty much used my above menu as a springboard, changes happen.

I'm thinking about getting a folder or recipe box and jotting down the very successful meals. I cannot descibe to you how good those pork chops were with the fried 'apples' on Linda Sue's site.

Challenging week--hubby will call me when he is able to make it in time for dinner (new work assignment), so I have planned some meals and will serve them when the timing works.

legal pizza with salad. anchovies on the side.
meat loaf, green beans, mashed cauliflower or jicama fries
small steaks with shrimp, mushrooms, onions, and pea pods, salad.
creamy chicken, mushroom, and broccoli soup with salad
baked chicken, salad, green beans or delicata squash
chicken and broccoli alfredo with salad (big hit last week)
Tuna chef salad with soup or leftovers

Cooking ahead:
-I made hubby a sausage, onion, and cheddar quiche
-made plenty of pizza crust for the freezer
-the meat loaf is big enough for lots of leftovers.
-will double the cauliflower and freeze individual portions (I don't eat this often, hubby likes it a lot)
-I'm making a chocolate pudding thing to have on hand
-I have a new staple for lunch side dishes....cottage cheese with finely chopped cukes, green pepper, celery, radishes, a touch of onion, and some grape tomatoes, salt and pepper. Awesome on romaine. Doesn't hold more than a couple days, though.

OWL (berries rung) meals and cooking ahead

Mon-Crockpot boston butt w/Frank's hot sauce, fake fried apples, slaw
Tue-baked chicken, broccoli alfredo, salad
Wed-burgers with grilled onions and muenster, mashed delicata, salad
Thur-Hot wings and salad

weekend-- hubby has fishing buddies in this week so I will have:
steaks, chicken for the grill, cauliflower "stuffed potatoes" salad, broccoli casserole and carb control ice cream for hubby. guests also get baked potatoes and regular ice cream.

Sun--not sure yet

making up scrambled eggs and bacon for hubby. cottage cheese salad for lunch side dish, making a cheesecake for a friend so I will make one for us as well. veggie strips, big salad, not much for the freezer this week.

Sun-fresh rockfish with slaw and fried artichokes
Mon-broiled chicken with cola BBQ sauce, salad, green beans
Tue-Birthday steak!!!! steamed broccoli with olive oil and parmesan, salad
Wed- mexican hamburger casserole, mashed cauliflower, salad
Thur-Taco Salad Bar
Fri- hot wings and salad
Sat- broiled saltwater trout, slaw, either sauteed zucchini or fake fried apples.

For breakfasts, lunches, and desserts for the week:
-sausage quiche with reduced amount of cream, bacon, gonna try vanilla whey powder with frozen blueberries blended in.
-cottage cheese salad, veggie strips, hummous, plus cooking extra of dinner meats as usual
- making a french silk pie recipe, crustless into custard cups, also plan on making pumpkin bread. And I might make a small decadent chocolate thing for my birthday.

Hubby and I are gearing up for a final LC push to get us both to goal. When we are at home this week, we will eat induction foods with liberal salad vegetables.

Wed- salad with pork loin
Thu-salad with rockfish or trout
Fri- a gathering with oysters and burgers, we will take a veggie tray and will skip the burger buns
Sat-a bonfire party, we will take some sort of meat or some fish for the grill and a veggie tray.
Sun/Mon-a two day party out of town, we will take a roasted hen and baby greens with olive oil dressing and a broccoli/cheese casserole, and some bacon, eggs, and lunchmeat for daytime meals. A friend is bringing a standing rib roast woohoooo

Easy prep week. I have a huge bowl of salad and a big bag of veggie strips made up and all of the sugarerd Christmas gifts are either frozen or given away. Plus I've done my usual crustless quiche for breakfasts and I have sf ham and shrimp for lunches.

Sun-crockpot bbq pork ribs, finish on grill, slaw, fake fried apples
Mon-roasted turkey legs, green beans, mashed cauliflower
Tue- salad with eggs, cheese, and leftover meat or veggie burger

Lunches and packed meals:
Sun:deli platter...pepperoni, ham, muenster, horseradish cheese, olives, okra pickles, celery, apple, lavash bread crackers
Tue-asian buffet for late lunch
extra ribs
turkey legs
slaw,3 bean salad, tuna salad, salad and veggie strips,
cream of something soup (broccoli, mushroom, or asparagus)
a sausage quiche for breakfast
desserts...jello/whipped cream....peanut butter balls or maybe chocolate protein bars

Tue-L-Philly wrap with celery sticks and guacamole for him, mine is no bread.
D-baked fish with slaw and artichoke fritters
Wed-L-BLT wrap with cream of chick soup for him, soup and chef salad for me
D-DF spaghetti with meatballs and sauce, salad
Thu-L-leftovers or spam with cabbage
D-Oven-baked chicken, green beans, mashed cauliflower
...hubby gone on hunting trip, returning Sunday so I'll do salad with meat and eggs to get out of cooking.
Sun-L-Big Breakfast (eggs, bacon, sausage, bloody marys)
D- steak, salad, split a sweet potato.

Hubby's work schedule changed again, need to get back to normal schedule before I can do much kitchen work. Girls, if you fall in love with a railroader, you'll need flexability.
