What's for dinner tonight?

Im at work trying to figure out what's for dinner tonight. I want to use up what I have. I think it'll be:
Baked chicken wings with blue cheese dipping sauce.
Avocado w/squeeze of lemon juice (got to use it)
Kale (from my garden) cooked in olive oil and garlic w/tomatoes
Yogurt w/butterscotch sf pudding mix mixed in.
How about yours?

My cousin and her husband are down from Wisconsin and they are having us over for dinner. She announced she is making steaks on the grill and probably a salad. I made a dessert for the people not LC'ing - pineapple upside/down cake. I won't have any - but will certainly enjoy the steak/mushrooms.

they all sound good!

We're having plain old hamburger steak with onions and shrooms, green beans and a side salad. borrring.

tomorrow is chef salad with beef/cabbage/mushroom soup, looking forward to that one. and i have baked custard if i want it.

great recipe from Nigella Lawson:

in a bag put worcester sauce, olive oil, sage, mustard, salt, pepper, chicken, sausage and cut up onion. marinate overnight and bake.

I serve this with a salad.

Here's the recipe from Linda's website... (although instead of the hamburger meat, I used a combo of chicken & beef fajita meat - the precooked stuff and diced it up really small... Also, I added some cyenne pepper!!! Some like it HOT!!! )



CHERI'S CREAMY SOUTHWESTERN TACO SOUP
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste
In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.
Makes 8 cups or 6-8 servings
Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

This soup is very good, quick and easy to make and has a bit of a kick from the Ro-tel tomatoes. I didn't time it, but I'd guess that this soup only takes about 15 minutes at the most to make.

*sniff* I can't have any soup or toppings because I ate up my carbs earlier today when I ate the whole pot of Spicy Cream of Broccoli and Bacon soup. *sniff* I want Cream of Chix Soup too. Waaaaahhhhhh Oh well ... tomorrow is another day.

Tonight we had baked chicken, topped with mushrooms, bacon and cheese for me (green peppers, bacon and cheese for DH) and broiled. Brocolli with cheese sauce on the side.

I'm impressed with how healthy everyone is....

***I'm going to have a steak in the broiler, mushrooms sauteed with onions and some parmesan thrown on top, and a simple salad. And a nice big diet coke. In my Bodum glasses--they taste better that way.***

I'm going to try some of your other ideas, but I have to use extreme control when I make Linda Sue's recipes, so I'm staying away for a while. I made her chicken enchilada casserole....just toooooo good.

Could you tell me how to prepare the spaghettin squash? I'd love to be addicted to a veggie recipe!

And regarding the broccoli slaw thing, I'm definitely gonna make that. I do enjoy broccoli slaw.
