Rachel were did you find the recipe for the zucchini bread. I have been looking for one. I want to try some more carbquik recipes. I love the carbquik pumpkin bars.

CarbQuik Flax Zucchini Bread
1 1/2 cups CarbQuik
1/2 cup ground flax 1 cup carb countdown milk 1/3 cup splenda 1 tsp baking powder 1 tbsp vegetable oil 1 egg, beaten 2 cups zucchini Preheat oven to 400 degrees. Grease loaf pan or use 12 paper baking liners for muffins. Stir all ingredients just until moistened. Bake bread for about 45 mins or until done and muffins bake about 15 mins. |

A big roast from yesterday has become soup fixins and lunchtime meat.
I need a grocery run before I can start, but here is my plan: Egg MockMuffin (basically a sausage quiche in muffin tins, bake 350 for 20 min) 8 servings of chicken breast Veggie strips and prep for chef salads Beef/mushroom/cabbage/onion/carrots/celery into a soup, and will add celeriac if i can find it. Devilled eggs (in a rut here, need side dishes for hubby to pack for lunch) Baked custard-the plain kind with just nutmeg Bourbon Pumpkin or crustless pumpkin pie (the bourbon pumpkin was TOO big of a hit, hubby midnite-snacked the leftovers!) (can of pumpkin, 3 T butter, salt, pepper, 3 packs splenda or a bit more, 2 T bourbon. Saucepan to boiling to flame off the bourbon, then into buttered casserole dish with a handful of toasted walnuts or pecans, bake 350 15-20 min) I may also try Linda Sue's fake apples, using pattypan squash. I'll let you all know how they turn out......seems like my cooking thoughts are turning to fall recipes! |
