Meal planning help! What goes with LC fried chicken?

Hi, Now that I have learned how to make the best KFC like LC fried chicken, I need help in ideas of what to serve it with. Do you have any low carb go withs? Thanks, Rick

Ditto on the coleslaw.

Also mashed cauliflower with sour cream, etc. (like baked potatoes)

Whole Green beans

Lettuce & Tomato Salad

Broccoli with Cheese sauce

sweet potato fries (baked in oven)

Cauliflower mock potato salad is great!!!! Use fresh cauliflower, steam it a while, then add regular potato salad ingredients.

Do all of you make your own cole slaw? The ones at the grocery store I go to have quite a few carbs in them. If you make your own, can you tell me how and how many carbs are in it? Thanks, Rick

ditto on the cole slaw recipe. I add a tot of white vinegar and count the slaw as 6 per cup. Duke's mayo has no sugar in it, others might have some.

Devilled eggs are good with fried chicken.

homeaid coleslaw
I green cabbage sliced thin (4 carb per cup)
2 bell peppers sliced thin (4 carb per cup)
1/2 head of red cabbage sliced thin (4 carbs per cup)

Dressing
Helmans mayo (o carb)
lemon juice (1 carb per 1 TBSP)
splenda (<1 carb per packet)


put all veggies in large bowl
mix dressing in seperate bowl pour over veggies stir well cover with "saran wrap" let sit in frige 1 or more hours)

total carb count aprox 5 carbs in a 1 cup of cole slaw

in a bowl make an Egg wash (beaten egg, little water and Louisana hot sauce)
on a plate or in a ziplock bag crush spicy pork skins
dip chicken in egg wash, rol or shake in PS
place on "pammed" cookie sheet
cook on 380 for 45 min turning over once

parmasian cheese is excelent to bread with also

if you want a change from deep frying with pork skin rinds
use parmasian cheese in zip lock bag with spices, salt, pepper etc
it is excelent on catfish filets and chicken tenders.

equal is my choice of sweetners
cabbage
radish
purple cabbage
1tbs heavy whipping cream
1tbs cooked bacon
onion
this has very few carbs
