Guess what I had for dinner?!

A big 'ol bowl of LindaSue's Creamy Southwestern Taco Soup and a grilled cheese sandwhich made with a Revolution Roll! Life is so d@mn good that I almost can't stand it!

I LOVE that soup! I've tried it before and WOW is it good!! It's very filling which is excellent too!

Where do you buy revolution rolls? I've never seen them where I live!!

You don't buy them, they are homemade! Do a search for them and I'm sure you'll find many, many posts. I love them because they do not contain any bake mixes, only LC proteins and they are very induction friendly. Although I am maintaining my weightloss I have given up LC breads, tortilla's, etc. while I train for the LA marathon and, while doing that, I hope to finally get my body into bikini shape and the Revolution Rolls will help me do just that.

Linda Sue's recipes are incredible. I also recently discovered KevinPA's recipes and those are wonderful.

What is the recipie you followed for the rev rolls because I made them and I know they came out right, they looked good but they were yucky! Not at all like bread and light and eggy. I used the rev roll recipie with cream cheese. Maybe they are better with ricotta or cottage cheese instead?

I follow the exact recipe but I do sub cream cheese. I made the first batch and decided to go ahead and try them that night and OMG they were ! The really are better when you let them sit in the fridge overnight. I just had 2 this morning that I sliced open and used as buns for egg mcmuffins and they were soooo good. Please try to recipe again and feel free to add your own extracts, seasoinings, or whatever will make them more palatable to you. Good Luck!

Don't forget that most of LindaSues recipes are not even hers but people from here and other sites. Its nice to thank LindaSue for the recipes but the creators of the recipes don't seem to ever get the credit, like in this case. She just makes them and takes a picture and is like a food critic but alot of them are really not hers. I think people forget about that or don't realize. That soup is delicious. I have had that one before, but it is not "her" recipe.

Yes but she is rating the recipes to HER tastes. Just because a critic doesn't like a movie or a restaurant doesn't mean its a bad one does it? Don't get me wrong I like her site and have it in my favorites but to take a recipe and tear it apart and say it would be better this way doesn't mean she is right, just means its how she likes it another way. Everyone else might love the recipe the way it was written by the creator. So its not really fair to take a recipe and down it and say it would be better this way because that is like saying the creator of the recipe didn't do a good job creating it.

I've seen lots of times on here where someone said how good one of LindaSue's recipes was and she herself has replied that the recipe was not hers but someone else's, so I don't think she tries to take credit for anything that's not hers...and you're right, we all have our own preferences and tastes but I think most folks understand that! I've certainly tweaked recipes I found on HER site to suit MY preferences enough times!

As for what I ate last night - fried catfish, hush puppies with diced onion and cheddar cheese, ovenroasted green beans and sweet potato fries - made at home and all LC! YUM YUM!

DH declared the hush puppies the "best he'd ever eaten" and his momma was FROM the South!

I have to admit they were right good....

I don't think that's what LindaSue does at all! What's wrong with someone critiquing a recipe and giving their opinion? I love her site and, although I don't always know if the recipe origianlly belonged to her or not, I appreciate ANY effort at taking the time to create a recipe and/or improve upon it. I'm sorry that this seems to be a personal issue but are the rest of us supposed to pretend that what LindaSue does isn't great for us?

maintenance

i see you are on maintenace and look wonderful...
i was on maintenance for a week and my pants are
so tight and i am feeling low.... any hints on how to eat
on maintenance. i misplace my atkins book, guess i need to go
digging hun??

for today
to stay under 15 grams of carbs, and for the rest of the week the same

Hang in there! As you know, maintainence is all about finding your carb niche and preserving the great habits we learn along the WOE.

Where is the hushpuppy recipe? How did you get low-carb fried catfish? Using pork rinds maybe? You made my mouth water! DH really loves hushpuppies so it would be nice to surprise him with some.

mmmm... yummy... that sounds like a great meal. I'm going to try the soup this week.

I Linda Sue's site. I appreciate the ratings b/c it cuts down the number of LC crappy recipes I make.

If I post a recipe on an internet recipe board it is free for all anyways.

Oooo, sorry, gals - I didn't check back in on this thread til now.....

The fried catfish/hush puppies may be tough to duplicate because I used an Atkins corn muffin mix and I don't think you can still buy it - you might be able to try someone else's LC mix but I can't vouch for it!

Anyway what I did was mix up about 1/3 of the packet of corn muffin mix with 1/4 cup Carbquik and 1 packet instant grits (just for the texture, you can leave that out if you want though) - dipped the fish filets into beaten egg, then dredged well in the "cornmeal" mixture and fried in about an inch of good hot fat (I use half organic expeller-pressed coconut oil and half organic lard) - when that was cooked, I took the remainder of the dry muffin mix, added an egg, a splash of cream (maybe 2 tablespoons), half a cup of shredded cheddar and a bit of minced onion, and a heaping tablespoon of Expert Foods Cake-a-bility, and enough water to make it "scoopable" - then used my smallest ice cream scoop to portion it into the hot fat. Turned 'em over once when golden brown, browned the bottoms and YUM!

I bought up a bunch of that corn muffin mix when I heard it was gonna be discontinued....
