*CarbQuik Pumpkin Bars
*Mexacali Cabbage & Hamburger Casserole
*Slaw
*Grilled Italian Chicken Breasts

I grilled hamburgers and chicken breast today. I also have steak grilled and sliced up. Last night I prepped veggies, washed, cut and store in tupperware. They last better for me that way. At night all I have to do is assemble salads and I am done! My DH loves them!

I poached a chicken this morning and used 1/4 the meat for a curry for lunch and then I will use the rest to make chicken chili during nap time to batch freeze.
You guys had some good ideas!
Those bacon wrapped water chestnuts sound rockin'! I will have to try those soon!

I cooked a little bit today to make up for what the ravening hoards of weekend visitors went through.

-Mock Potato salad
-splenda slaw
-devilled eggs
-nuked a spaghetti squash for a recipe later
-scrambled a dozen eggs and cooked bacon and sausage patties
-half-steamed some broccoli and cauli so I can nuke it real quick to finish it (it was fresh and was going bad)
-made up some lc bbq sauce to jazz up leftovers (4 oz tomato puree, 4 T vinegar, 1 T splenda, dabs of worchestershire, salt, pepper, bay leaf, tabasco, spicy mustard, lemon juice, onions, onion powder, minced garlic)

Not really focused on food prep this week, my meal plan for the week is pretty easy and I am trying to train my dogs to an invisible fence. Anybody want to buy two dogs, one too smart and one too dumb??? Comes with brand-new invisible fence.

emel, what do you do with your scrambled eggs? Keep them in the fridge or use them in a recipe? Just curious...

Hubby and I both just grab a spoonful and top it with cheese if desired, nuke it and then run out the door with a sausage in our hands.

As long as you don't overcook the eggs, it reheats very well. Sometimes I make a crustless quiche, but my dinner recipes are cheesy this week so I am saving some goop allowance here by skipping the cream and cheese in the quiche. Another idea is to make a big thick fritata to have on hand.

Thanks Emel. That is a great idea. I am going to give it a try.
