What's for Lunch?

Whatcha havin' for lunch today?

Here's my lunch I'm enjoyin now... Apples just fresh picked from the orchard, sliced, and tossed with cinnamon and splenda, sprinkle in some walnuts, a little water in the bottom of the container. Cover and nuke for 3-4 minutes.

Make a topping of: 1/2 cup cottage cheese, cinnamon and splenda, - blend together, & put over your apples when they've cooled a little, & add some more crushed nuts to top.

One of my favorite lunches.

Mine is salad with taco filling on top and bleu cheese dressing on the side. Also two chocolate flax seed cookies

I have not had lunch yet. I had a protein pancake for breakfast and I'm not hungry.

I'm thinking of just having a snack. I think I'll have some fresh, crisp, green, seedless grapes and some cheddar cheese.

I took chicken breasts and marinated them in tamari, sesame oil, vinegar, ginger and a bit of splenda. Then I grilled them and served them over mixed greens with a sesame oil/ginger dressing.

Today I had grilled salmon and halibut with 1 cup of chopped veggies and .5 cup of steam veggies.

It was lean and light - perfect for summer.

Plus lots of water today and some Diet Coke.

My lunch was really quick and simple today, two boiled eggs and a spinach and lettuce salad with parmesan sprinkled on top and Italian dressing.

My lunch.. Ham rollups! I looove these:

Ham Rollups
  • 1.5 oz tomato
  • 1/2 oz green onion
  • 1/2 oz radish
  • 1 tbls blue cheese dressing
  • 1 oz full fat cheddar cheese
  • 4 oz deli ham

Chop up all the veggies and mix with dressing. Place the dressing mix on a slice of ham, and top with cheese. Repeat with other slices of ham. Roll up. EAT. yumyumyumyum
