Oscar's 7/30/06 menu

b --- (2 egg whites 1 yokes, 8oz gound turkey , 8oz broc. 2oz cheese).
L --- 12oz. fish (tilapia cooked in butter) 2 cups lettuce with 1tbs light mayo and pork rinds for crutons.
s --- pork rinds , SF jello
D --- 12oz fish (tilapia cooked in butter) few pork rinds
s ---- SF jello
about 85oz water/crystal light
0 ex.
carbs 21.8
work on lower carbs
Will work on the ex. part more

Hi Oscar,
Welcome the the forum. I'm guessing you are doing induction?

For dinner tonight, we are having:

Stuffed yellow squash
Lettuce, Tomato, Cucumber Salad w/feta cheese dressing
Green Beans in Bacon Grease for me
Corn for the husband
S/F pistachio pudding (used hood's milk--first time, hope its good)

Hi sounds good.. Im realy tring to make this work this time. That stuffed squash sounds real good. Is it ok for the first 2 weeks? Im always looking for something deffernt i can try.. thanks

All I did was cut some yellow squash in half lengthwise, and then steamed (covered) them in the microwave about 5 minutes. Then I let them cool a bit and then scooped out the insides, mostly just the seeds. I added the seeds to some hamburger meat that I had already cooked and stirred it all together while I was heating up the meat. I put that into the squash halves and then nuked (covered) them about 3 more minutes. Then I uncovered them and put some shredded cheddar on top of them and then nuked them (uncovered) about 2 more minutes. They turned out pretty good. They were induction friendly. I also had spiced up the hamburger meat with some chili powder and cumin, but you could use whatever spices you like. This would work well with zucchini also. For zucchini, I like to spice the meat with Italian seasoning blend. This is pretty fast if you already have the meat cooked. I generally cook extra hamburger and then put it in the freezer to use later.

Good luck and I know you can do this. Just make sure you eat enough every day so you don't get hungry. I have found out that helps me not want to cheat.

ok will try that in a few days. It sounds good and with out having to use the stove, should keep the house cool in all this hot weather. thanks again

Hey Oscar, where have you been?

Today I just made low carb turkey wraps. They are easy and pretty filling. I have been testing out some recipes and not succeeding yet.
