Here's the coleslaw recipe I took off the board here:
Tangy Cole Slaw: 1 small pkg cole slaw mix 1/2 sweet red pepper, chopped 2 green onions, chopped 3 Tbsp Sesame or olive oil (going to use sesame) 1/4 cup unseasoned rice vinegar or red wine vinegar (watch carb counts) I am going to probably just use apple cider vinegar for lower carb counts 6 packets Splenda (more or less to taste) Combine vinegar, Splenda and oil, whisk until blended. Combine slaw mix, peppers, onions. Mix together and serve. Even better when made ahead of time and given time to marinate. 2 Servings ? Carb counts

I'm going to splurge just a bit today, but I am going to do it with fat rather than carbs. For breakfast we had bacon and eggs, lunch will be the usual salad, and I'm doing a brisket for dinner with which I will try a smidge of my new Steele's gormet BBQ suace. The rest of the family will enjoy baked bean and a side yet to be determined while I will enjoy veggies and possibly a side salad. I am also going to treat myself to as much iced tea as I want and possibly some homemade LC lemonade.

Grilled salmon for me for dinner! The family will be having grilled steak, burgers, h'made steak fries, grilled corn on the cobb and salad w/watermelon and ice cream later for dessert.
Salmon is one of my all time favorite foods so I'm not feeling deprived at all. |

I had fried chicken ( no breading ). Three bean salad ( green beans, wax beans, black soy beans ) mustard greens. DH made baked beans that had hotdogs cut up in them.
Dinner was grand. Ramborb, I would have preferred your thick steaks |
