I'm baking a whole chicken, some cola chicken breasts, quiche, and flax muffins, since I figure I may as well use the oven while it's hot. I'm also making sf jello, and cleaning and bagging veggies.

I have made chicken breast, saute mushrooms, string beans, sliced and measured cucumbers, measured out blueberries and made scrambled eggs.

I know what my week of lunches will be and I will take some time later and start putting things into fitday!

I just made an artichoke quiche. That should take me through the week with breakfasts.

Will make a big bowl of tuna salad later.

Today I am going to crock pot some beef shanks that I got at whole foods. There are 4 shanks, good big ones. I'll put them in with some red wine, and top with diced tomatoes. And various herbs/spices. By the time they are done, the liquid will be just a thick broth. It will last much of the coming week.

Let's see - today I'm cooking up a marinated pork loin (mild spicey), brussel sprouts, salad.

In the fridge I have some ground turkey, kielbasi, eggs, rosina homestyle meatballs (5 g carbs in 6 and 1 g fiber). I have some chicken broth, cauliflower, lettuce, sour cream, cheese curds, canned french style green beans, dreamfield's pasta, no sugar added tomato sauce.

I just kind of figure out what to make from what I have on hand.

Friday is no meat so I have canned tuna, lightly battered fish filets, and russet potatoes (for the fam, of course).

Doing meat/egg Sat - Mon. Keeps me on my toes!
