So What is everyone having for Easter?
I will be having:
Baked Ham Green Beans Linda Sue's Just Like Stuffed Baked Potatoes Broccoli (trying to debate if I will have a tiny bit of corn or not) And I may try to make some type of biscuit using Carbquick. what about you? |

For Easter were having
Ham Mashed potato's sweet potato's green beans cauliflower coleslaw corn rolls sugar free low carb desert and a cake This is what I always cook minus the mac n cheese,waldorf salad. I will just eat what is low carb sugar free |

My stepmom is doing Easter this year. Hopefully there will be something for me to eat other than just ham!

Steamed Shrimp and stuffed celery
Ham Baked Potatoes Asparagus Salad Layered jello salad (sf jello w/crushed pineapple, with a sour cream/cream cheese/splenda mix spread on top) Coconut Cream Pie (may make one for ME out of spaghetti squash) Iced Tea Will probably have Easter Eggs for breakfast. |

This seems as good a place as any to make my first post - so here goes!
For Easter I'm going to be cooking: Scallops in a saffron jus with a green salad Roast lamb in a Greek style (with oregano, cinnamon, fresh mint, garlic and a little lemon juice) Slices of aubergine (eggplant) fried in olive oil Courgettes (zucchini) cooked in butter and garlic Beef tomato and red onion salad Dessert made from silken tofu with fresh strawberries and perhaps some DaVinci syrup if I've got any by then! Well it will be like Thanksgiving Dinner once again
Since I hate ham, and spouse hates lamb, we both love turkey, so I have a 22 lb. bird in the freezer that will roasting for Easter Dinner. Some reg. food items for the spouse (non low carber) and for sure one of those killer Sugarfree Shiela Peanutbutter Pies Carbquick easy drop bisquits for me and the only bad thing that I have to have 3 times a year my love FordHook Lima Beans, its a must, now why cant they be low carb Oh well, thats the why the ol ball bounces, ay? ![]()

We've been invited to my sister's house. They are just moving to OWL, so life is good!
They are doing ribs and pulled pork, chicken breasts, salad. I've been asked to make dessert, and will be making a cheesecake with strawberries. Easiest meal I've attended in a LONG time!!! |

Going to my folks so not sure what is on the menu. Folks are diabetics, I eat lowcarb, and the guests don't lowcarb so there will most likely be a variety of all kinds of foods. Mom will probably have:
**Ham **Sweet taters and Mashed taters for the noncarbers **Brussel sprouts and asparagus and probably corn for the noncarbers **Some kind of cheesecake or pie (both lowcarb and nonlowcarb) I will probably bring something else in the line of protein for the lowcarbers because I am not a fan of ham. The salt kills me. Maybe some scallops and shrimp or crab clusters. Not sure just yet. I will probably make a lemon chiffon pie for the lowcarbers also.

To make the scallops:
Heat a pan - I use an ordinary frying pan - and melt about an ounce of butter in it - wait until the butter is foaming, but not going brown. Pop in the scallops, and cook briefly, turning once, until the outsides begin to go golden. Remove scallops and keep warm. Splosh about half a glass of white wine into the pan, and an equivalent amount of unsalted fish or mussel stock if you have it (if you don't, don't worry, water or vegetable stock works too!). Add a good pinch of saffron strands, cook gently for a few minutes to let the flavour and colour seep out of the saffron. When it's all looking yellow, turn up the heat, and reduce the liquid to about half its original volume. Check for seasoning. Pop the scallops on some salad leaves, pour some jus over, and scoff. It's good, and the jus goes a long way, so don't worry too much about the carbs in the wine! If you're maintaining, strips of deep fried carrot are good with this - simply use a vegetable peeler to peel ribbons from a carrot, heat oil, deep fry for just long enough to turn the strips crispy. Pile the carrot in the middle of the plate, arrange the scallops arund the edge, garnish with green leaves, dribble the jus over. Jo |

Darkginger -- These sound GREAT! The only thing I have used the saffron for so far was some vegetarian paella (my daughter is a veg.). Can't wait to try your recipe. |

Is Easter really only 2 weeks away?!
Time to go try on the "goal dress". I told myself when I raided moms closet last year, I was going to wear that dress this Easter. We'll see!As for what to fix, not sure who alls coming, so this is subject to change: Appetizer: crab stuffed celery sticks and crab topped cucumber slices Salad: standard garden salad Entree: lamb roast Sides: green beans, asparagus w/hollandaise sauce and cauli-taters Bread: those Pillsbury Carb Monitor rolls discussed on another thread Dessert: berry parfait And of course, if anybody other than my mummy comes over, we'll have other stuff too and ask each person to bring a dish

Our oven is on the fritz so nothing special like a ham which would never bake in our oven coz the burner thingie broke. We don't celebrate holidays anyway. But I've enjoyed reading the posts, *drool* - Haven't had lindasues JLSBP in soooooo long!

We'll be starting off with...
cauliflower bisque home made bread (my Mom will bake, it's her recipe) not for me! then we'll have roast pork with garlic cream sauce (From Blaines low carb cooking show on fit tv) stuffed potatoes for everyone else, twice baked cauliflower for me... yummm (not missin out on anything here!) steamed broccoli with lemon butter then for dessert I'm making low carb cheesecake (from George Stella, Low Carb & Lovin' It on food network) with raspberries on top and my Mother in law will be making her Maple walnut cake for everyone who doesn't want the cheesecake Happy Easter everyone! |

imshasta, out of all the Easter menus I have read on these boards, yours is one of the most managable, creative, and balanced. I am going to copy it into my MasterCook as a holiday menu reference and make sure I have all the recipes you referenced.
