Well, Got up this morning, ran monthend, took 3 hours longer than normal, have no idea why. I cleaned my whole house while it ran. Weird. Anyway....went to party, things were strained between dd and I, but we made it through, Ella had a great party and she had a really good time. Ds went to grocery store with me and helped load and unload groceries. I think he was trying to make up for how crappy dd was. He headed back home this evening with the incoming weather, didn't want to chance getting stuck here. We live in the country and is extremely hard to get out with a good snow let alone ice. We've got the generator gassed up and ready to go in the event we get enough ice for the power to go out. Dh cut wood for the furnace, so we're good to go. I made out my menu for the week, have had no cheats. I didn't partake of the punch, cupcakes or snacks at the party, just drank my crystal lite I didn't feel like fixing supper after getting home at 7 from grocery shopping, so I pulled out the pizza box ds had left in the fridge from their supper last night and scraped off the toppings. Wala....dinner. TOM came this morning, to add insult to injury I think. LOL. A week late, but that's ok, whatever.

If our power doesn't go out, I'll try to get back on tomorrow. Thanks for all the support you guys, I've really needed it!

Today's menu:

B: Spinach omelette(eggs,spinach,mozz,small amount of onions)
L: leftover chicken cordon bleu casserole
D: pizza toppings

Tasha, you've had a heck of a day!! It's a shame DD is being such a pill, but the main thing today was Ella's B-day, and thankfully she had a great time!!!

Great job with the food choices and no cheats!!!! Way to go! So when you can, share your menu for this week....you always inspire me!

Why is it when the scale goes down 1.4 pounds overnight I don't question it, but when it goes up........#%!?*#%!!!, I need a new scale!!

Tasha - glad you made it through the party and Ella had fun

I pretty much eat eggs and bacon every day for breakfast and wing it for lunch with either salads, left overs, or whatever I have handy. But I have planned out this week's dinner menu so I can go shopping. Lent starts Wednesday!!

M - chicken breasts topped with sun dried tomatoes and provolone cheese with roasted zucchini and yellow squash

T - spinach lasagna (didn't make it last week, I think it's the same recipe as Tasha's)

W - spinach and cheese stuffed fish with asparagus

TH - chicken mushroom asiago (recipe found on Pinterest) with broccoli

F - veggie pizza on Tammy's cheese crust

Hoping for a good weigh in tomorrow

I totally understand that and agree!!!! I'm glad Ella had a good birthday though, and hopefully DD will calm down now that the party is over and went so well.

I have the same darn issue with my scale!!!! I saw the funniest cartoon pic of a gal standing on the scale pointing a gun down at it....and could totally relate!!!

Well ladies your menu's look divine!! I never made it to the store yesterday because of the thunderstorms all day, so I'll head out shortly and stock up for the week, menu will be determined by what I find at the store. I usually only have BPC for breakfast, and then have an early lunch / brunch at home with Hubby.....so we typically only have two meals a day. This morning for brunch I made oopsie roll French toast and it was really good!!!! So most of the week my lunch will be eggs and bacon, eggs and sausage, steak and eggs.....that sort of thing. My dinners will be Roasted chicken, tacos, homemade pizza, steaks or burgers, brats or sausage. I have to be careful with chicken cause DH gets really tired of chicken really quick.....but he never gets tired of red meat!!

Still at 216, haven't been able to check in due to my 16 year old getting a job, my 13 year old candle business has taken off, 18 orders in 1 day last week. And that's just half of it.

I will do better this week.

Nice to see you Kiki! Congrats on your candle business Now it's time to melt some fat

Speaking of melting fat......I have a new theory. I was down over 2.5 lbs since last week but have gained almost all of it back My theory is that it's too dang cold to melt anything! The weather had warmed up a bit (weight loss), and now we're back to sub zero temps (weight gain). I was good all week, so that's all I can come up with.

This week -.4
Total - 2.8

Tammy - I might have to borrow a gun for my next weigh in

Sooooo, I decided to switch things up a little this morning. I'm having regular coffee, and a MIM (muffin in a mug). Oh and bacon, 'cuz it's bacon.

Let's see those big losses - I need some inspiration!!

Good Afternoon Ladies!

Glad everyone had a great weekend! My Dad left yesterday and I always get sad since I only get to see him a couple times a year. I did well though and stayed on the plan. It was hard though, Saturday afternoon after a morning of garage saleing and tball games for my little one we were sitting outside and everyone was drinking their Coronas and munching on chips and salsa….. I had a handful of almonds and drank my low carb beer  So I actually lost 2 pounds this week! In the past if a family member came and stayed and visited with us it would have been a ticket for me to eat and drink all weekend and usually come up 5 pounds heavier on the scale but I didn’t do my old ways! 

Did some biking and running on Sunday too. Nothing crazy but a couple miles

Exactly 2 more weeks until St Patrick’s Day!

Tasha- Your menu looks awesome! I am going to have to look up that Linda Sue website! Hope your power didn’t go out

Cheryl- weigh in tomorrow or Wednesday …. All your hard work will pay off. TOM kills it for me all the time too

Kiki- nice on the candle sales!!

Theresa- What’s muffin in a mug? It sounds yummy!

Tammy- the day of a fireplace and Netflix sounds like one of my favorite days!

Good morning all!.....geez, I guess it's almost afternoon now isn't it? I'm working from home today. We didn't get the 8-9 inches of snow and 1/2" of ice they were calling for. We ended up with about 3 inches of sleet/ice mix and about 2 inches of snow if that. Roads are bad though. So....

I weighed in this morning at 214.5, so am down 5 pounds from last Monday YAY!!!!!
Kids came over last night so my menu changed a little, ended up with a pork steak and roasted brussel sprouts.

B: hubby made me a cheese/bacon omelet this morning
L: ham/cream cheese/pickle wrap maybe
D: Cornish hens, mashed cauli

Muffin in a mug:

1 tsp. melted butter
1 egg
1/4 C. ground flaxmeal
1/2 - 1 tsp. ground cinnamon
1/2 tsp. baking powder
1 packet (or 2 tsp.) Splenda or sweetener of choice

Mix all up in a mug and microwave 1 to 1 1/2 minutes. It's really good and about 4 net grams of carbs. I only eat them once on awhile. I'm sure you can play around with flavor as well. Next time I think I'll try cocoa powder instead of cinnamon.

Way to stay on plan even with family around!!

Good morning ladies!

Quick check in, things are ridiculously busy today as it's Monday AND the first of the month!! I have well over $100k in rent to process and my system is down, not allowing me to process a thing!!! Then, my BEST maintenance tech just came in and give me his two weeks notice, a rival management company offered him WAY more money than I compete with and of course he's got to take it....I would too in his position.....but it still puts me in a bad spot! Oh my goodness....what a Monday!!

Kiki, you had a heck of a busy week....maintaining is better than gaining!

Cheryl, sorry you had a rough time....you'll get there though, I know you will!!

Theresa, you are so funny, you always make me smile! Good job on the loss!!!

Kelly, Way to go staying on track with family visiting....that's super impressive, AND a 2 pound loss to boot!!!

Tasha, 5 pounds!!!! That's AMAZING....and after the week you had you TOTALLY deserve it!!!!

Well I weighed yesterday at 217.8 so that's -1.2 down from last week....not as much as I'd hoped, but I'll take it!!!

Just checking in, I have ate on plan so far today.

Breakfast- protein shake
Lunch- baked pork chop, a little of a ham croissant, a little fruit. But I am starting to get hungry. I am going to drink lots of water and see if that helps.
Dinner- not sure yet.

Exercise- Getting ready to walk the stairs at work.

Hope to be around 215 or 214 tomorrow. That would be great. We got to push through.

DH and I went out last night to a local bar that does a meat raffle. We haven't been in a few weeks but met up with some friends and had a blast. You get 20 chances to win for $10 and they raffle off various cuts of meat. We usually do pretty good at these raffles, but last night had to be our best! We won 2 packages of New York strip steaks, a package of Porter House steaks and a slab of ribs Over 10 pounds of meat in all

We stayed on plan with eating by having chicken wings at the bar although I did have 3 Miller Lite beers. I refuse to get on the scale this morning but I'm still in ketosis, so that's good.

We're going to have 2 of the strip steaks tonight for Fat Tuesday! Mmmmmmm - it's fun to win meat!!

I would LOVE to win meat

Made it to work today, roads are not good, had to go slow until I got to the highway, then were clear. Hate driving on this stuff!

B: 0, nada, nothing.....was running late
L: ham/cream cheese/ pickle wraps
D: not sure yet, have to work late, probably sausage, green beans and cauliflower cooked in chicken broth....mmmmm

Dgd may have Pertussis, dd is taking her to the doctor today to find out. Poor thing coughs and coughs and coughs, felt so sorry for her last night, she just did not look good, her face even looked a little swollen, was running a little fever, her little cheeks were red and under her nose and she said her belly was hurting from coughing so much. Hate when little ones are sick. Dr said we have to get the tdap shot before the baby is born.

Gotta run, monthend, so busy busy busy. I just realized by looking at the chart that I've lost 12 pounds

Theresa....you WON meat?!?!?! That's AWESOME!!!! I'd say I'm coming to your house for dinner, but I don't do snow anymore!! Good for you for staying true to your plan and still being in Ketosis.....as long as you're in ketosis even if the scale did blip up from the beer it'd come right back down.

Tasha, 12 pounds is FABULOUS!!!!! You're doing great on this challenge!!! Sorry the baby is sick....yes those are the worst!! Hopefully it's not pertussis, that is horrible!!

How's everyone else doing?

I survived Monday, had to work a 10 hour day, but we made it through and my eating was on plan. I have no idea what my menu will be like today, DD and her fiancé are coming over again today, so they may want to go out. We shall see. I can tell you that whatever I DO eat will be on plan!! My stats for yesterday were excellent and pretty typical, I had 1114 calories 775 Fat / 44% Protein / 1% Carb.......I expect that today will be pretty comparable.

I have to share this awesome soup recipe that I made on Sunday. Found on Pinterest and made some tweaks to keep it LC. It's to die for!!

Zuppa Tuscana

4 slices bacon, diced (I made more and use some to top the soup afterwards)
1 lb ground hot Italian sausage
1 large yellow onion, diced (I only used 1/2 an onion)
4 cloves garlic, minced (I used the preminced jar kind)
4 cups (32 oz) chicken stock
3 cups russet potatoes, cubed (I used 1 bag frozen cauliflower pre-steamed and 1 bag radishes that I quartered and roasted with olive oil and thyme in the oven @350 for 20 minutes till browned)
3/4 tsp sea salt
1/4 tsp freshly ground black pepper
2 cups kale, in bite size pieces (I used 1 bag cut spinach, thawed and drained)
1 cup heavy whipping cream
parmesan cheese, grated

In a large pot, cook the bacon until crispy. Drain the grease. Add the sausage, breaking it apart as it cooks. Once sausage is browned and crumbled, drain off grease leaving a tbsp to saute the onion.

Push the sausage and bacon to the edge of the pot and add the onion to the center; saute until translucent; add garlic; saute until fragrant.

Stir in the stock and potatoes (cauliflower and roasted radishes) , season with salt and pepper, and simmer for about 20 minutes.l

Add kale (spinach) and heavy whipping cream. Bring to a simmer. Top with parmesan cheese (and extra bacon) when serving.

My DH has not stopped raving about this soup!!

Since we're posting recipes Here's Linda Sue's Emerald Isle soup I'm making tonight for my lunches the rest of the week.... If you like Broccoli/Cheese soup, you will love this!

EMERALD ISLE SOUP
1/4 cup leeks or onions, chopped, about 3/4 ounce ( I used about 1 onion round chopped)
1-2 tablespoons butter
16 ounces frozen broccoli
2 cups chicken broth, homemade preferred (I use canned and it's fine)
Salt and pepper, to taste
1 cup heavy cream
Pinch nutmeg, optional

Sauté the leek or onions in the butter in a medium saucepan until tender. Add the frozen broccoli, broth and a bit of salt and pepper. Bring to a boil; cover and simmer until the broccoli is very tender, about 10 minutes. Puree in a blender or with a stick blender until smooth and thick. Stir in the cream and blend well. Adjust seasoning and add nutmeg, if desired. Reheat if necessary.

Makes about 6 servings
Freezing not recommended

Those soups sound delicious!! I got one question for you ladies, how do you eat the soup with out bread or crackers? that would be hard for me Had soem gruelign dental work done today so havent been able to eat much. Going for the protein shake now

B- egg omlette with sausage and spinch

By not having any in the house - otherwise it would be too tempting! Luckily we are empty nesters for the most part. Our youngest is in college but she is gluten intolerant and can't eat wheat anyway.

These soups are also pretty hearty. The Emerald soup is scrumptious - made it this afternoon. Thanks Tasha!!

The longer we stay on this WOE, the less we're craving the bad stuff. As long as I can eat bacon, it's all good

Okay - I think my big problem is not having anything prepared like Tasha does - I am going to print out the recipes posted here and make a serious plan otherwise I am not going to see any loss.

Only 12 days to go and I am very discouraged so that has to change.......

Good morning!!

With today being Ash Wednesday, I'll be having a small breakfast (1 egg), a small lunch (tuna salad), and fish for dinner with no snacking. It's a day of both fasting and abstinence for us Catholics.

With the beginning of Lent I have hope that maybe, just maybe, spring is right around the corner. We're even warming up to 20 degrees today!!

Cheryl, I've always said being prepared and knowing what I am eating is the only way I can stick with this. If I came home with no idea what I was having for supper, I'd go crazy and start eating everything in the house. I sit down on Saturday or Sunday and make my menus for the next week, as I'm doing that I'm making a grocery list. I have had some timing issues this week so have had to work around it....didn't get to make my soup last night for lunches the rest of the week, so I brought leftovers from supper last night and I'll make the soup tonight. Sometimes I've only planned a dinner for dh and I and then the kids show up, so I have to move things around to a meal I know will feed everyone, but I have to make it work. You can do this, I know you can!!!! Don't get discouraged, just because the challenge is over in 12 days doesn't mean a thing.....there will be other challenges and deadlines, but ultimately you work towards YOUR goal! I wish I had your commitment to exercising, I just hate it!
