Deb, I make mine sorta like a crustless quiche only in a cassarole dish. The one I just made has a dozen eggs and a little milk and and a cup of shredded cheese, then I added a bag of frozen spinach drain good, pepper, onion, diced ham and some hot sauce. But you can mix and match what ever you have. But good to pop in the micro the next few days.

Busy morning, off to the gym early and then went and bought a new patio set for the deck. End of the season sale and great price. Then took Rocco for his bath and grooming. Now making stuffed peppers for dinner.

Deb you up and out early today too, is it your day off?

Hi Laura glad to see you I remember you saying you were going on a cruise, I bet it was great time. But hard to get back in the working mod. How long did you go for?

Deb a nice big vacation for you too. How long you going for? Now that's something to get in shape for. Are you staying right at one of the casinos

We were gone for 7 days . It was great. Can't wait to do another one !

We were looking at going to Lake Tahoe / Reno around Nov 10th . Not sure if we will or not

going to make Ruth Chris' BBQ shrimp recipe and jalapeno poppers later ! Yummy !

Deb wtg great nights sleep Well at least you got a good workout in. Maybe she'll be ready next time. Have a nice time at the lake house, nice to get away.

Laura yikes hope chiro can get it ajusted. BBQ shrimp sounds yummy, never had the with BBQ sauce, going to try it. I've making alot of popper too. The only good pepper that made it in my garden. How's little Shelby doing?

Went food shopping this morning, yikes I bought so much. Raining all day today so just staying in. Stomach feels yucky , hope I'm not coming down with something. Making a nice roast chicken for dinner. Good food for a rainy day Hope everyone is having a great day.

Good job on the biking! What is an Rx Class? Hear ya on having to get out! I had major Cabin Fever the other day & went to town & did a bit of shopping. Was a good test for my back. Have a fun Lake House trip.

Misty~Hope your not catching a Bug. Get your Flu shot yet? Got mine last month. Yeah...getting darker everyday. Luv Apples & cheese! Lately, I've been into salami/cheese/olives. Yeah, BF casseroles are the bomb. I have 1 more slice left of mine. Luv stuffed peppers! Did U use rice?

No Yoga yet...back is better though! Going to nail appt in a bit. This will be a test for my back. Hoping I can get through the appt.! Sitting is the worst for my back. Will prolly have to stand up a few times.
Need to start my outside winterizing. Wishing my back gets back to Normal soon! DH said he will help me. He Better!
Scale is sticking with the -1 +1 dance. Glad it hasn't gone up. I haven't done any exercise for 7 days!

WOE: Trying to resist anything white.
CHILE CHEESE QUICHE/CASSEROLE
3 or 4, 4oz. cans of chopped green chilies (drain excess juice)
1 cup of shredded cheddar
1 cup of shredded Jack
(or 2 cups of whatever cheese you have on hand).
Chopped Ham, or Canadian bacon or bacon (your choice on amount)
Sliced mushrooms (fresh or canned)
1 cup of cream or milk
6 eggs

Spray glass quiche/casserole dish with cooking spray.
Pour in chilies, ham, mushrooms, cheese and mix up.

Add milk and eggs together in a bowl and whisk, add salt (not too much since the ham, cheese, chilies contain sodium), pepper, cumin, garlic and oregano or other spices

I also sprinkle crushed oregano and powdered chili on top.
Bake at 350 for about 45 to 50min. or until middle of quiche looks done.
Let sit for 10min. or more to firm up.
Optional: Top w/salsa or a dollop of sour cream or Ketchup on the side.

I have never heard of coatimundi he is cute..maybe I need to go to Costa Rica and find out for myself

RX is a 1 hour weight class and I love it !!
