How frustrating, Lola. I hope you can sort it out.

Mimosa, so pleased to hear your back is improving. Weight loss is wonderful too, but pain loss is even better!

I seem to be losing about ˝ -1 lb per week, so day to day it seems nothing is happening, but the line is still trending downwards. 122 this morning.

Ailuros its official I need to come and live with you... on the loss fantastic.

Blotto has asked me to say hi and sorry that she is too busy to post. Unfortunately, one of her dear cyclist friends was knocked off his bike and suffered fatal injuries and died last week. She is busy preparing for a half iron man challenge...so nothing changes there then lol. However, it is in memory of her dear friend - I am in awe of her commitment.

She will be back I am sure after she has finished her challenge and her feet have hit the ground again. Hope I.ve not missed anything out.

Thanks for updating, Lola!

I also need to come and live with Ailuros, well done on the weightloss!

Blotto, if you are reading, my sincerest and heartfelt condolences.

xxx Mims.

I’ve already got a houseful this week, I’m sure a few more won’t make any difference . On the other hand, I don’t think there’ll be much weight lost this week!

Oh that won't stop us Ailuros lol. Enjoy the time.

Hey does anyone know what has happened to Blondie? Juno? Missing them as well as Shy, Jan etc...where are you all? Busy times ahead I know so the board will be quiet.

All I know from FB is that Juno is living life! She seems to be doing well, she's probably just busy!

I miss everyone too... Hopefully when things settle down a bit we'll see everyone back here again. Would be nice to have a quick report on how they are!

Here all is the same: grey, dreary, wet and foggy. Typical November weather, LOL!

I am looking forward to the coming weekends, got lots on and it will all be lovely!

Nothing else to report, so have a good day everyone!
xxx Mims.

20 lbs is amazing Mimosa, and you are eating such good healthy food too. Glad the back is still improving.

Hope you sort out the plateau Lola, the drugs may be having an impact on it.

Ailuros you are doing wonderfully well on your modified JUDDD.

Yes, I do miss the others. So sad about Blotto's friend, she is so amazing with her fitness. Maryam (Blondie) and I completed our Allies round the world challenge and I haven't seen her around since. Wish Mint would post more. Jan must be busy with Thanksgiving just now. And we all understand how hard it is for Shy to post.

I have had some good DDs so am hoping to see some losses soon. Too many of my slacks are anything but slack!

I thought we should probably admit it’s winter once December starts. If we have three month threads, we can start spring at the beginning of March!

I think that's a good idea, Shy!

Good to see you check in there too!

Cindy, I wish we were more active on here too, but I am also one of those who disappear occasionally, so who am I to say anything?

Had a friend from my days in Spain (actually my old neighbour in Barcelona, who is German accidentally) come stay with us yesterday evening. Was lovely to see her! I made LC cauliflower soup, which everyone enjoyed, so I thought I'd share the recipe:

Feeds 6 minimum

Ingredients:

2 cauliflowers, average sized, chopped into pieces so they fit into a large pot
1,5 liters of good bone broth or stock
1/2 to 1 clove of fresh garlic, minced finely
1 packet of cream cheese
300 grams of ground beef, rolled into dice sized balls (this takes ages, sorry)
200 grams of bacon bits, fried until almost crispy
2 hardboiled eggs, chopped
1 large onion sliced in thin rings, fried until caramelised, but not burnt (it should look all sticky and soft and golden brown)
a handful of chopped fresh herbs of choice
freshly grated parmesan cheese
salt, pepper, paprika, bay leaves for seasoning
a blob of double cream

Cook the cauliflower in salted water until very cooked and soft. Drain and with a stick blender blend until totally smooth and velvety. Add 1 liter of stock and keep blending. Then add the cream cheese, salt, pepper, paprika, minced garlic and 2 bay leaves and leave to simmer on a low heat. Meanwhile, keep your onions, and bacon warm. Cook the mini meatballs in the rest of the stock until done, add them to individual plates and add the left over stock to the soup. Now add the chopped egg to the plates, the bacon bits, and the onion as well. Remove bay leaves from soup and discard. Add soup to fill the plates and garnish with the herbs, cream and parmesan cheese.
Very filling, very warming and very yummy and also good for you! I served warm crusty bread and butter on the side for those who weren't low carbing.

I have no idea of the numbers, but I think it's ok, because I stayed in ketosis and dropped 1lb this morning!

xxx Mims
