Ingredients
•1 (large) zucchini, cut into 1/8" - 1/4" slices
•1/3 cup whole grain breadcrumbs, optional Panko (homemade breadcrumb recipe)
•1/4 cup finely grated parmesan cheese, reduced fat
•1/4 teaspoon black pepper
•Kosher or sea salt to taste
•1/8 teaspoon garlic powder
•1/8 teaspoon cayenne pepper
•3 tablespoons low-fat milk

Directions

Preheat oven to 425 degrees.

Combine in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Note: It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick.

Arrange zucchini on a non-stick cookie sheet and lightly mist with a non-stick cooking spray. We use Misto Olive Oil Sprayer. Or, place zucchini on a wire rack sprayed with non-stick cooking spray.

If using a rack, place rack on a cookie sheet. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). Allow to cool to room temperature before storing in an airtight container.

NOTE: Zucchini Chips will continue to get crispier while cooling.

NOTE: For gluten free chips, use gluten-free bread crumbs.

Lizzie, someone looks tired and adorable! Deb your recipes look great I was thinking of making stuffed peppers using about the same recipe. What are you up to this weekend? Cheryl glad your doing this with me. Enjoy your weekend lake house. Well I am a happy girl this morning and I know I often have good first weeks but down 6.4 takes me past my Sept goal but we all have good week and bad ones with weight so I am leaving my goals as is and if I bypass them some months it give me more wiggle room the other ones. "Northern Stores Community Walk/Run Event for Diabetes <<>>
Sat. Sept. 7th starts at 10am from the Northern entrance of MC Complex.
Gifts & certificates for participants -Come register before 10 am at entrance-
Walk/Run 2.5 km OR 5km: Since two of them are Diabetic I try and get them moving for these sort of things. Then off in the boat to Moosonee for the afternoon to visit friends and get fresher veggie, meat and different cheeses at their only one store. Going to be a busy day you all enjoy yours!

Mom still isn't feeling well. Now have apt with GI specialist, so after Thursday, maybe we can have a better plan of attack. She still has low grade temp and pain..........not having a very good late summer for her.

still no word from my manager...but I cant see how he can say no seeing we are entitled to 2 weeks after working a year....but looks like my office manager is going to give notice also..maybe he is feaking and thinks handling the building on his own would be too much

Hello all!

Just able to get online this am. Hubby took Asher with him walking. So I have an hour to myself. Laundry folding will take up most of it but this will come first.

wt. 199.4 this am

I really pushed water yesterday.

How was the walk Jo?
I did do some walking yesterday, not as much as I wanted but going slow this time. Maybe by weds. be back up to 10000 steps..or friday? I hope to get some rain.

We got a new mattress set yesterday! Hubby won another King size in a contest at his work. Now we have 3 king size memory foam Sealy beds. Past 3 years he has won over 12000 dollars worth of bed sets! Next year I guess we will have a raffle for the next one!

still no word from manager

ok but its fine because we changed our plans.....
we were going to book for Cuba..the flight home was a long one and then a drive time
no worries we are going to take off 5 days and drive into Oregon

I go down stairs to my spare fridge that I use in the workshop and the freezer door had been left open
all my steaks were thawed out

Deb~Bummer...How many steaks defrosted? What's up w/the manager not getting back to you? Oh...yeah, now I remember U saying something about a Cuba trip. When is the Oregon trip?

Liz~Have a good mall walk.

I'm off to yoga in a bit. Did try on clothes yesterday. What a Chore! Had some success in picking out & fitting into outfits. Yay! But now, have to decide which ones Not to pack! I picked out too many! I'm lucky that I don't have to go out & buy some clothes. Whew!
Will be taking a week off from Yoga! Wow! Haven't had a week off in quite a while! Exercise will consist of Walking all over the place & maybe some dancing?

Just chased a squirrel out of one of my flower pots!!! Grrr!

Cheryl, KLizzy and Deb the walk went great and they gave up free fresh fruit at the end so the guys picked blueberries , rasberries and a fresh pinapple! They also go metals and tshirts so it was worth them getting out of bed for Cheryl I hope you had a relaxing time at lake and yes its crazy that we keep going back to things that arent good for us. How are you doing this time round? I ate a bit higher carbs on Saturday but back to lower levels yesterday. I think I need a bit higher level once a week but nothing crazy. Deb I hope you get your vacation you sure have earned it. How is your clean eating going? Enjoy your steak, sorry that happened at the price of beef right now. Karen thats a whole lot of ice cream to be selling!! But great profits!!Hopefully your mom will start feeling better soon and they will find out what going on for her. Liz glad to see your sticking with it the weight will start moving soon. at baby jail!Lucky winning the bed ! Pat thanks, and I am sure you have lots of clothes that fix with all the yoga. Had a nice quiet very cold weekend, but it felt good. Only 3 days of work this week again. Made baked chicken for dinner and already got my nice walk down.

Cheryl my pellet stove in 120 volts,60 HZ and 3amps. We have a good size generator that will run most of my house, but not my cooking stove. I just have to make sure DH is home to start it up when powers is out.

Deb I made the patty pan squash yesterday, and it was so good. I didn't have ground beef so I used hot sausage instead. Tks for the recipe. SS about the steaks but at least you can use them. What about making some beef stew and freezing it. I do that often.

Jo wow sounds like you had a great time. And great way to get exercise in. Is Moosonee were you have to do your regular food shopping?

Karen wow that sure alot of ice cream, I know I couldn't resist to eat alot of it. So good when it hot out. Hope they can get your Mom straightened out and better.

Pat great new that you got to pick out outfits and the fit great. I always over pack and don't wear half of what I bring. Hey guess what I getting really good at the paddle boarding. Think I'll buy my own next summer.

Lizzy wtg the scale is being nice to you. That's great. Does it stay that hot all year long?

Ok now that I'm not mad anymore and can laugh at what happen, I'll tell,Now you got to picture this. Thursday I went up in the attic to start cleaning things out and get ready to get fall cloths out. Well in the spring I bought these things call space storage bags and they worked good. You put tons of clothes in them and vaccum them flat. Well when I open the attic door what a mess. I guess the squirrels got up there and bit holes in the bags and they blew up to full size what a mess. Going back to storage bins

Misty I couldn't help myself. DH has been teaching me the generator but it so long between times I forget. Turn off this and this turn on this push this on and on. I tried to write it down but he kept saying I didn't need to and going on. I can't remember yesterday half the time.

Deb I will send you some squirrels. Sounds like Misty has enough. that's a shame about the steaks. At least you caught it before it was too late. What plans did you end up with instead of Cuba? I know I read it somewhere.

Jo I am in the groove. I'm glad you are too. We are in the 90's here still.

Pat. on enough clothes! You will have such a good time! It's so nice to get away.

Didn't do meditation class.......had an auction of all office furniture at 5:30, so went to that instead. Didn't buy file cabinets, but did buy some other stuff. So next week, will do meditation class.....

Mom going to specialist on Thursday....

Mitz we are always looking for buddies and this is an awsome group of people. Tell us about yourself so we can all get to know you. Deb thats a great idea to save all those steaks and still get meals out of them. How did the freezer door get left open anyway? I would of been pissy for sure. Misty I can just picture that and you staring at the mess with your mouth wide open in shock! No we dont normally shop in Moosonee we shop on the island because it cost 30 dollars each to go over and back but once in awhile we make the trip over to visit friends , pick up some fresher food and visit the glass store since we dont have one of those either We have a generator too and I have no idea how to start it. I am totally usless with that kinda stuff. I guess I better learn before DH has his operation or better yet he can teach on of the boys right? Cheryl I am so glad you are in the grove again with me, I havent been perfect but pretty darn good over all. I do know I am feeling much better and had a great sleep last night. I made Turkey soup for supper last night with just turkey and veggies and ate 2 bowls but it was so yummy. Made biscuits for the guys for their carbs but my DH loved the soup and wants it for supper again tonight. Glad there are two bowls left I didnt feel like walking last night but one of my walking partners are back and keeping me honest so of course I went. We did about 7km . hour and 15 mins and I felt much better afterwards. I nice bath in lavender scented epsum salts and it was a nice evening. I am so glad I am back at this!Karen the auction sounds like fun anyway! Hope they find out whats going on with you Mama! Everyone have a great day.

197.8 this morning,
hubby and me are going to go swimming! we have a friend that has a pool. scale will be up tomorrow due to water log.

feeding asher a banana while I one finger type....my other hand is a mess.

going to go find the industrial strength sunscreen.....

Mitzi glad you'll be joining us. Pat is away having fun, but she'll be back.

Jo oh ya you can't imagine the mess, I had clothes all the way up to the ceiling. Once the hole pops the seams split. now it's funny. I'm like you and Cheryl keep forgeting how to start the generator, and mines in the garage in the back. And usually when power goes out DH is called out by the FD. Sometimes I get lucky and neighbor is home.

Karen is you new office totally up and running now? I love auctions alot of fun I go sometimes with Sister and BL. He runs them.

Cheryl yes please no squirrels my way. Got to cut more branches off the the trees, that how they get in.

Lizzy wtg scale is your friend. Your so light skinned good thinking on the sunscreen. How's DDs are the off at school or at home.
