Got a little time to myself, so checking, got GS and all his friends over camping until tomorrow. Staying on plan and trying not to get temped by all the stuff they eat. One of GS friends is a vegan so we munch on all the good stuff.

Avy I just started drinking ice coffee too. I helps me when I get a sweet craving. Going to try it with almond milk, sounds good.

Deb all sea food is allowed on induction. But mussels and oysters are higher in carbs but still ok on induction. I love scallops fried with butter and garlic, Good time of year to restart induction with all the fresh vegis.

Karen I think it's hard when our parents think they can still do it without help. Hope you and your Sis can convence them to get a little help. Hope your Mom is feeling better. to your DD, that great.

Cheryl are you finished with your yard yet? Poor Mom wasp stings really hurt. Glad they got rid of the hornets and wasps. Cheryl have your tried the SB plan. I found I need the added foods evern though they are higher in carbs. I stuck to eat even though I wasn't losing as fast. But it's working and I eat alot more of a variety just know white sugar, pasta and breads.

Pat what you been up too.

Any one hear from Laura, haven't see her post lately, hope all is ok.

Misty I read South Beach and it sounds low fat. Do you not do it low fat? Or do you do your own version? I don't eat bread, pasta only once in a while and sugar - I have a dark chocolate square 2 x a week. At the lake. I guess I do have some breading on fried chicken or shrimp. Maybe PM me with help on this.

Karen the fair sounds like fun. We are having them around here too. I haven't been to One in ages. Our farmers are having a problem with a fungus in the pastures from the heavy rains earlier in the year i think they said It has killed some cattle.


It started raining last night. It's still raining today and looks like it will all day. No boating. But we need the rain

We got almost 3" of rain this weekend. More last nite and this afternoon. We have beautiful sunset now. Worked all day. Forgot to have lunch.

Deb I want to try that. I wonder if I could put in some Torino chic flavor? We didn't get a lot done at the lake. It started raining. And rained. And rained. we just had stay inside and relax. I did deliver dark chocolate butterfinger cookies I made to the man that cleared our shoreline.

Karen how's the new office space coming? And Mom?

Avy- studying? What?

Misty teach me SB. I read and it said no potatoes. Is there a new list? My book is pretty old.

Mini Zucchini Cheese Bites

Ingredients
◾2 cups grated zucchini ( about 1 medium)
◾1 egg
◾1/2 cup grated Parmesan Cheese
◾optional: 1/4 cup chopped cilantro, salt & pepper

Directions

Preheat oven to 400 degrees. Spray a mini muffin pan with nonstick cooking spray. In a bowl mix the zucchini, egg, cheese and cilantro. You do not have to add any salt or pepper since the Parmesan is salty enough . Evenly divide the mixture into the mini muffin pan filling to the top, packed down in each cup. Bake for 15- 18 minutes until golden brown around the edges.

Servings: 12* Calories for one: 27* Fat: 2g* Fiber: 0g* Carbs: 1g* Protein: 2g

The zucchini is grated so only some of the green skin is noticeable. You can opt to leave out the cilantro .These are crispy on the outside and soft on the inside.

Super quick and easy to make. Using a food processor to grate the zucchini, then squeeze out the excess water in a paper towel or clean cloth. Add the rest of the ingredients and pack them into a little mini quiche tin. You can certainly double the recipe if you have more or even make them larger then mini

Oh! the first course was "Nutrition Fundamentals". The one I'm currently doing is "Nutrition Studies and Applications - Staying Healthy with Nutrition". It is basically reading a 1,000 text and doing 13 quizzes (on.every.chapter.) lol. It's alright, but it's a lot of reading and work.
