Alice - have you noticed how the racoons know exactly when the corn is at its peak? They are smart critters when it comes to gardens, they don't bother until stuff is at its optimal flavor!

Tweaker, that is so true!
And I learned something this week - The farmers around here plant a few rows of sweet corn around their seed corn areas. That way the racoons only bother the sweet corn, and don't go further in and bother the seed corn - which is where the farmers make their money! I thought that was pretty smart!

My farmer also throws down some overripe squash as a decoy. He was having a time with the critter taking down the entire stalk and as you know, once it's down, that's it.

Just popping in to say hi! Not much new here really. My garden is still going gangbusters and I put up another dozen pints of pickles yesterday! Tomatoes are finally starting to ripen, yay!!

I am doing a happy dance -- my neighbors brought me some fresh green beans, OMG, they are so good. I don't eat a lot of veggies but while summer's here I have to have my fresh beans, cukes and tomatoes. Fortunately I have very generous neighbors and they keep me supplied!! Cukes and tomatoes not ready yet but I'll get them when they are to be sure!

Yay for green beans!! My second planting is just now producing, so that's what I'm working on today - pulling the dead row, and then picking the new row. So I know what I'm cooking this weekend!

I am a bit frustrated right now though. My weight is up about 3 lbs, and even though I've really tried eating really clean again I can't seem to get rid of it. Not sure if it's water weight, or maybe added muscle since I've been working in the garden alot? Either way I would really like to get it back down. I am eating a lot more veggies over the summer, but I can't imagine that vegetables cause weight gain!

I just try to watch the onions and carrots for the high sugar content. Before low carb I used to add a whole onion to some vegetables like a big pot of squash or even green beans. Now I've cut way back because of the sugar/carbs. I love garlic in everything but it's about 1g carb for one clove..
Now I put in less onion/garlic and use more butter.

I really like veggies too, Alice, but I'm afraid they can cause weight gain when one is doing a strict low carb diet. I try not to eat too many, a lot of days I don't have any veg, others just a little. When I've had the beans it's a small handful but I haven't lost at all when I eat them! I wish I could get to a point by adding them in very slowly that I won't gain but I am extremely carb intolerant, meat, eggs, cheese and fat is my best bet.

It's just so frustrating that something that should be so good for you, full of vitamins and minerals, and low calorie, causes weight gain. Ugh!!

I don't think it's the green beans. Most veggies have so much fiber that I think it's almost a wash as far as carbs go. Plus there is no replacing the nutrition in those veggies with a vitamin pill. On a daily basis It does so much for your whole body including your skin.

I think you're right Meme. I did some experimenting/tweaking the last couple of days. I continued eating just as many fresh veggies, but totally cut out some of my other lower carb extras - like yogurt and fruit in the morning, and my low carb muffins that I bake. They are very healthy and low carb, almond flour, coconut flour, etc. But I think too much of that is problematic. And today my weight has leveled back out a bit.

I was having too many things that, although they were low carb/sugar free, were causing me to gain. I have cut way back to induction levels and have lost a few pounds. I'm staying at this level for the foreseeable future. The very first thing I will add back in is one sugar-free mini Reese's peanut butter cup -- I miss my chocolate more than anything else!

It's those carbs that just add up...Some try to cut other things like dairy, salad, veggies or even less meat but it's only one thing....back to the whole point of this diet, it's the carbs.

Hi ladies. Looks like we could be bumped to the next page in a day or two so thought I'd give a shout out to keep us on page 1.

How are you guys doing? Enjoying the summer? It's always a busy time - good weather is around for such a short time AND it's August already!! Where has it gone?

I'm maintaining nicely but I still want to lose, my body is just stuck and I guess it's happy at 146. I wish it would get on my page and move downward!!

Hi! Things are pretty much the same here as well. It's garden, garden garden... LOL We have had a great gardening season this year and I am thankful for that but it sure keeps me busy!

My weight is still bouncing around. Not bad, just 2-3 pounds up and down. But with the garden doing so well we have also had a surpluss of corn and cantaloupe. So I let myself splurge on a nice ear of corn fresh from the garden, maybe once a week. And a few pieces of melon. It's not that high in calories, but I know melon is higher on the glycemic scale than some fruit like berries. But it is delicious!

Well, for the first time in a long long time I ate something that is not on my diet! DH makes the most awesome fried fish and veggies and uses this sweet corn muffin type mix as the breading. I just couldn't pass them up tonight. So I'm sure I will regret it tomorrow. And tomorrow will be a cleansing day. But it's just one day out of many, and I will persevere!

It's nice to be able to come here though and be held accountable!

Alice - I haven't had fish done with the muffin mix in a very long time, but I do remember how good it was, nice and crispy! I hope you enjoyed it. It's just one slip-up, we're human and it will happen, just get back on track. I hope it doesn't effect you too badly though.

I finally hit 145.6 yesterday, but back to 146.2 today. That 146 just doesn't want me to get rid of it, but I so want to!

I was afraid the scale would be way up today from holding water from last night, but it wasn't bad! But definitely going to eat clean today!!

Thanks for the recipe link, Meme. I have tried a couple of those but that first one looks really good!

Tweaker, I know what you mean - when you are that close to your goal, the scale just does NOT want to cooperate! But you are doing great!!

Have you two read the cream cheese thread? It's about how the Kraft cream cheese has changes their formula and the carb count is 32g per serving now instead of 1g. If I can find the thread, I'll post it.
