Had a nice brunch with my L/B at the casino...and just put the turkey in the oven.:)

Im so excited..we leave thursday to go see the Hag:sing:
back the following monday so its 5 days of no cooking and no cleaning:yahoo:

so i have to be extra good for a couple of days;)

Not fair snow here and -25 windchill tomorrow but this is going to be my month!! :jumpjoy:Enjoyed wine with my Turkey and both were so yummy. Movies tonight with the boys and tomorrow I begin to take on the world. Since all our roads are a slippy watery, mess it will be indoor workout tomorrow Youngest son said lets do your hardest yoga tape tomorrow...hummmmmmmm maybe..*L* Hope you all had a great Easter and welcome to aaaaaaawwwwwww Spring kinda! The river is a total mess I am so glad our friends came on Friday as they would not of made it today. Going to be a totally turkey kinda week for me and crustless Quiche . My fridge is full of leftovers!:yummy:

Jo sounds Brrrr cold. We are 70 today but we are going back into the 50's.

Actually I don't cook when I get home. I'll throw a couple hot dogs in the microwave and DH will fix himself something.

We're having snow showers & it's 36. Had a nice BD. Thoughts, calls & gifts from family & friends. DH & I shared a bottle of Champain & he even lit some candles on a mini Lemon Meringue pie for me.:) Yes, I ate most of it. Left some of the crust!:o
DH even offered to give me a neck shoulder/foot rub. But, I took a rain check on them. Was busy doing stuff & not in the mood.:dunno:
Last Yoga class here today & last ski day tomorrow before Hawaii trip. Laters!:hiya:

Hi girls well today is day one of my 6.5 week try and jumpstart my weightloss day. I did weigh in and measure and I did an hour of yoga so I moved, so far so good and lost of turkey so eating should be fine. Pat yes this is the start of no more Alkyholf for this time period. I do have one open bottom of rye in the cold room but since its not open I won't be as tempted..*L* My goal is at least one hour of exercise a day and less then 20 carbs a day and lots and lots of water. Wish me luck but its pretty much what I was doing the same time last year with results. I wish the weather would turn we are having more snow and cold today but if it means indoor workouts that thats what will happen. Oh Pat my friends were just over for the day they went back on Friday. Deb we didnt get the sunshine but WTG on the 11 hours of sleep. Cheryl welcome home and it is cold..*L* Drop by for some turkey I have lots! Hope your all having a good day.

Sounds like everyone had a great Easter. Still doing clean up from yesterday. So many people came. We ended up opening up the Lions Club and having everyone there. My cottage is way to small for that many people. Now to get back on plan as sticking to it. The weather the last few days has been beautiful. Cold weather coming back for tomorrow.

Jo I right back on plan too. Really want to get this weight down before the warmer weather gets here. Still have alot of snow on the ground, but it's gone from the roads so going to add in walking if the weather permits.

Deb bet your looking forward to your mini vaca and seeing the Hag. Bet L/B can't wait.

Pat glad you had a great BD. How long you staying in Hawaii? Getting away from the snow and cold will be nice. Did you end up joining the new yoga class?

Cheryl glad you had nice weather too. Love the picture you got. It really looks like it was taken of my lake and dock. DH couldn't believe how close it looked.

Misty our roads are a total mess, melting then freezing and snowing . They are hard to even walk on at this point, Saturday there was a foot of water in places on them so now its all ice and runts. I can't wait for this all to melt and dry up. I am so ready to start pole walking. Pat have fun on your trip! Deb I am I think I got springtime fever it gets me up and out of hibernation although in this weather the bears are not going to be out anytime soon. Cheryl how is your induction going? I messed up this weekend but I am right back at it with lots of Turkey to munch on.

Jo I'm back on induction too, SB.And have to stay strong with no more slip ups or I'm going to hate myself when the good weather gets here. And the worse thing is that I know how much better I feel LCing. Everyone talking about turkey I had to go and buy a turkey breast for dinner.:yummy: I made ham yesterday, so now I so bloated. Drinking alot of water. Hope it helps.

TRUE im so looking forward to 5 days of no cooking and cleaning..my bags are packed..L/B filled the car with gas and checked all systems..Hag cd's in the car ...along with the gps...

just have to wait for some day light thursday and hit the road.

Just googled tha casinoi we are going to and it looks like Vegas !! They have a sea-food buffet:yummy:

Deb you wouldnt believe what outside my window looks like, in fact its hard to see out! Misty way to go and enjoy your turkey I know I am going to this week. Turkey Hash for the guys and Turkey salad for me tonight. Deb I know you are just going to have a blast!!

Deb yes baked ham gets me everytime. From all the salt they use. And I get really thursty. Don't know who drank more water me or Rocco.:D Lucy you I love all sea food and a buffet. I be there for hours eating.

Jo good idea turkey hash, haven't made that in a long time. I'll probably make turkey salad tomorrow. I love it rolled in nice crunchy lettuce with diced tomato. Our bears are still snoozing too. They always get in my neighbors trash when there awake.

I have never baked a ham:dunno: i guess the years i grew up my mom never liked baked ham ...
we just dont like it plain i guess

Scalloped Ham and Cauliflower
I just made this tonight for dinner and wanted to put this here so if I need to find it again, I can! I got this many, many years ago off the 'net and have no idea who to give credit to. This is NOT my recipe. I just happened to fall in love with it. Hope you enjoy it as well.

2 lb bags of cauliflower, drained thawed and chopped
8 oz grated cheddar cheese
1 cup heavy cream
2 eggs, beaten
1 pound of ham cubes
salt and pepper to taste
Beat eggs and add to cream. Mix in cheese and cauliflower, add ham cubes and bake at 375 degrees for 45 mins.

My DD (who is only 10) was just released from the hospital tonight after being newly diagnosed as a Type 1 diabetic this week. This is her first homemade meal she requested for dinner tonight. She got so sick of eating the hospital food. I love that she loves many of my low carb dishes as she will be eating a whole lot more of them!!

we buy the whole ham and have a meat slicer so i can just get the L/B to slice some thick slices and i can do the casserole

Chicken Chile Relleno Casserole
This was a real quick dinner I threw together tonight. Man, how I love Mexican food! And this was REAL filling! I served it with a guacamole salad. If you're in Maintenance, a serving of refried beans would be GREAT with this dish:

I just love chile rellenos, but I don’t like all the fuss of actually stuffing them. So I just make the dish up in a layered casserole. Tastes exactly the same, but it’s much less trouble to put together. My last similar recipe was with beef. This is how I make this dish with chicken. This recipe is Induction friendly and Primal diners who eat cheese can also enjoy this dish. It would not be suitable for Paleo followers.


3 small poblano peppers (mine weighed 2-2.5 oz. each)
12 oz. skinless, boneless chicken breasts, chopped into bite-size pieces
2 T. olive oil
2 oz. onion, sliced
tsp. dried guajillo chile, seeded and chopped fine (optional)
tsp. dried ancho chile powder (optional)
tsp. chili powder (use tsp. if guajillo and ancho above are omitted)
tsp. garlic powder
3/4 c. Ro-Tel tomatoes and green chiles, solids only
c. cilantro, chopped
6 oz. Monterrey Jack cheese, grated

DIRECTIONS: Preheat oven to 450. Roasting your peppers will make them milder and sweeter, so don’t bypass this step. Cut tops off poblano peppers and remove seed cluster. Cut in halves, lay the halves on a non-stick baking sheet and roast in 450 oven for about 15-20 minutes, turning once during roasting. Remove and cool. Lower oven to 350. Peel tough skin gently off the peppers. While they are roasting, heat oil in non-stick skillet. Saute onion until tender. Add chicken and saute until meat is no longer pink. Add all remaining ingredients except the cheese. Simmer 3-4 minutes for flavors to meld together. Lay the skinned poblano pepper pieces in the bottom of 3 individual casserole dishes (or you can use one larger casserole dish if you prefer. Top the peppers in each serving dish with 1 spoon of the chicken filling. Spread 1/3 of the cheese over the chicken filling in each dish. Place the remaining chicken filling evenly in the dish(es). Top with the remaining cheese. Pop into a 350 oven for about 20 minutes or until bubbly and the cheese is melted. Serve at once with a nice guacamole salad (and if you are in Pre-Maintenance or Maintenance, this is nice with a c. of heated refried beans).

NUTRITIONAL INFO: Makes 3 servings, each contains:

547 calories
35 g fat
7.70 g carbs, 2.23 g fiber, 5.47 g NET CARBS
47.7 g protein
541 mg potassium
1194 mg sodium
13% RDA Viatmin A, 54% B6, 15% B12, 67% C, 13% E, 12% copper, 22% iron, 12% magnesium, 104% niacin, 37% phosphorous, 15% riboflavin, 11% thiamin and 16% zinc
