Doing Atkins Induction. Both my bf and I are just starting. It's a challenge because he doesn't like veggies. We've had some sucess with cauliflower. I did a "rice" dish and the mock mashed "potatoes".

He has around 250 - 275# to lose and I have 100#. We'll be doing Induction for quite sometime.

Am I too late to join? I'm new to the site and forum but not new to Atkins/low carb. I have decided to maintain some form of accountability by joining a challenge! Will be starting induction fresh again from tomorrow.

Need 1 week accountable partner/or 2 or 3....
....I am a weak individual and have been a 5 day sugar binge, and to see my chin growing by the day is discusting even though I am doing this to myself. I want to start a low carb 1 week challenge/which I could do but I want to it 1 week to start. Anyone want to join me and or have thoughts of what to eat. So frustrated-a snowy, binging day.:sad:

NeedingMotivation - I've been on Induction for 3 weeks now. We're doing real well. It's my boyfriend and myself. I love recipes and making new things so maybe we can share recipes. Tonight for dinner we had Boneless Buffalo Wings made with ground hot and spicy pork rinds and parmaesan cheese as coating. They were wonderful.

helgarush - I'm here every day. I suggest you go to atkins site and get the approved induction food list so you know what's ok. Something I did was cleaned out my pantry, refridge, and freezer. I invited someone from work to come pick up all the food so I knew it would get used. Another idea is to give it to the food bank in your area. I had a ton of stuff. Everything that wasn't on plan had to go. So there is no longer flour in my cabinets or rice crispy treats or anything sweet and yummy. The other thing I suggest is check labels. Sugar is in the dangest things.

I'm currently chasing the sweet treat factor with lc things. I'll keep everyone posted on how that works out. So far one GROSS have to work on recipe and one it's different but addictive. That would be the Chocloate crunch bar.

Ideas for things to eat.... are you a recipe person? There are tons of recipes out there. There are some on this site and Linda's low carb site has a bunch. Also Atkins site has plently and you can sort by Induction approved. Do a search for low carb recipes and a whole bunch of sites pop up.

Anyway glad yer both here. I need someone to account to as well. My lil sneaks are lc but still hurt my daily total. I have a weakness for pickles and olives.

:)Hi Ladies...Woke up really early not sure why. I have done Atkin's over and over and I know it is the only thing that works if I can just stick to it. Problem is that I am burnt out on the meats and eggs...thinking of going the shake route. I hate to cook/but also have a family to take care of. I need to get rid of sugar as much as possible...challenge. Laura how much have you lost so far? I just need a serious sugar detox/start with working out this a.m. and alittle coffee. Here's to a strong day.

Hi there. I would love to join if its ok. I'm doing induction too. I think I'm going to stay on induction until the bulk of my weight is gone. I went to walmart and picked up son Mccormick spice packs. One chicken catchatore and a pork chop spice mix. When I hot home I put each nest, chicken and chops in gallon sized zip locks with olive oil and the spices. I let them maranade all night. Now when I get hungry, I can pull a few cutlets out and be ready to est in about 5 minutes. My issue is I'm not patient. Once I'm hungry, I'm really hungry. I cut chicken breasted in half so they cook faster. What have you been eating?

We eat lot of different stuff...I'm a big recipe girl. This weeks dinners are Thai chicken over mock rice
Creamy chicken and pepper enchaladas
Crab cakes with creamed spinach
Chicken fingers with german green beans
Oriental bbq Chicken wings with mock mashed potatoes
Boneless Buffalo wings with salad
Coney dog casserole
Deep dish pizza
Creole BBQ Shrimp!!!!!! YUMMY!!!!!!!!! this is what we had for dinner tonight. We had to fight over who got the leftovers for work.

Lunch is usually leftovers, bacon and cheese,hard salami and cheese or shrimp or crab dipped in butter

Breakfast - Breakfast tacos are a big hit so are the egg mockmuffins and Frittatas are great.

Oh and if anyone needs recipes I'm more than willing to share.... and check out the food porn thread

Day one, down 1.4 pounds. I know it's water weight but still looks good on the scale :-) I've been doing scrambled eggs and bacon in the morning and taco salad for lunch. Last night I made Cajun Chicken for dinner. I thought adding more Cajun powder would make the meal more satisfying - bad idea! It was way too hot. I ended up running the pieces under water to get some of the Cajun powder off.

Yesterday I had a tremendous headache. To be expected I guess. My body was in shock. What do any of you think about diet jello?

Ziva, I made up some little packs, too. Helarush -good job. Laura, I'd love if you'd post or steer me in the direction of both boneless Buffalo wings and Creamy Chicken with pepper enchiladas.

not sure where I got these so will just post them....

Boneless buffalo wings
Egg Wash:
1 egg
1 Tbsp. cream
1 Tbsp. water

1/2 Pork rind crumbs ( I used Hot and Spicy Pork rinds for this)
1/2 Parmesan Cheese
Spices (I used black pepper, soul food seasoning, and ground red pepper)

Boneless/skinless chicken breast cut into 2 - 3" pieces

Mix parmesan and pork rinds together, add spices. Now I roll my chicken in breading coat in egg wash then roll in breading again. Place on plate or cookie sheet and when finished breading pieces place in freezer for 10 minutes to help set breading. Deep fry for 5 min on 350.

For Sauce:
1/2 stick butter melted
1 C frank's hot sauce
1 - 2 1/2 tsp cayenne pepper
1 - 2 1/2 tsp Tabasco sauce
salt to taste

Simmer until hot then pour over chicken and mix well to coat.

Creamy Chicken and Pepper Enchilada
4# boneless skinless chicken breasts
1 can enchilada sauce (lowest carb count)
1 4 1/2 oz chopped green chiles, undrained
1 sm red pepper, chopped
1 sm green pepper, chopped
2 8 oz packages cream cheese, cut into cubes and softened
4 C shredded cheddar cheese

Place chicken, enchilada sauce and chiles in large slow cooker. Cover and cook on low heat setting 8 to 10 hours or until juices of chicken is no longer pink. Stir in bell peppers, cream cheese and cheddar cheese. Cover and cook on low for 30 minutes more, stirring once or twice until cheeses are melted.

Tonight we had Deep Dish Pizza... it's so good! He wants it again on Thursday. Plus he wants a Buffalo chicken one and I want a mexican pizza. So plenty of experimenting to do this weekend.

Both recipes sound great. I've never had a pork rind in my life! I'll let you know how it comes out. How long have you been on the induction? Are you doing any sort of exercise with the program?

not exercising right now. I have some how hurt my back and can't move around very well. The most I'm doing right now is cooking. Still lose when I don't drink too much crystal light.

The chicken and pepper enchiladas are cooking right now... it smells so good. The sauce is thickening up nicely. Just threw on some cauliflower to make mock rice to soak up the sauce with.

BF and I have been on Induction for around 3 weeks.

Oh wow that food all sounds so good. I need to learn how to make some of this stuff. Today I had eggs for breakfast, chicken with dill dip, yellow peppers and then pot roast for dinner. I'm the only one in my house doing the diet so I had to make rolls for the family. Smelled so good but I didn't cheat... really hoping for at least three this week.

Hey Laura, have a good day? I finally figured out how to get a picture on here. lol Also decided to step out and try a new recipe thanks to your inspiration. Got a low carb meatloaf in the oven right now and I'm gonna give that cauliflower mash a try. We'll see. Checked the scales and so far this week I'm only down 0.4. I'm thinking about doing p90X this coming week. Do you exercise? I would LOVE LOVE LOVE to get down to a size 12 by June. I think it's possible. My 18s are loose. What do you think?

The meatloaf was awesome. My seven year old had three helpings. haha. it fell apart a little bit so it wasn't beautiful but it tasted good. I did a little research and found that I can have honey bbq wings at buffalo wild wings (my fav rest) for only 10 carbs. I am such a happy girl. thinking that is where my family will have easter dinner. haha..

Sounds like a great idea. We get wings every now and then. We did Applebee's Parmesan grilled shrimp topped sirloin tonight for dinner, only like 4 carbs! Was very YUMMY!

Gonna play this weekend with some recipes. A oppsie doughnut and gonna try and come up with a low carb crab ragoon. Oh and low carb muffins, I have 5 different sugar free syrups to mess with. I got raspberry, chocolate, carmel, vanilla, and peppermint. I'll let ya know how the experiments turn out. If I remember I'll even take pictures.

Hi All, staying strong... sort of. I"ve been having the sugar-free jello daily. Doesn't seem to hurt my weight loss. Loss 3.8lbs in the past 5 days. For some reason I thought it would be more. I'm getting a little scared - It was very hard to resist those Saturday morning donuts my husband picks up from the bakery. He was good, didn't even get any for himself. Instead, I had 2 fried eggs and 2 sausages, he had an egg-mcmuffin type sandwich. I think the weekend is going to be difficult. Tried pork rinds last night - yuck! I'm gonna search for an alternative breading. I made the cream cheese muffins the other day. They were delicious! Laura, I'm keeping my fingers crossed you come up with a good low carb dessert with your syrups. I'm very challenged when it comes to creating recipes.

3.8 is great for five days! Way to go... I had to drop all sugar and sugar substitute the first two weeks to get me past the craving stages. I'm on week three and it is much easier to watch my guys eat junk now. lol They had pizza during the Syracuse game last night and wanted BW3s today. Temptation is all around but we can resist... I too like Laura's recipes. I am challenged in this area too.

Week 3, will I ever make it?! Ziva, it's good to know the cravings will subside. I found the weekend really hard. Hopefully, going back to work will stop me from thinking about food all the time. In your post your stats are listed 230/214.8/135. What does that mean?

Hi gals,
Been a bit lazy this weekend. Not used to 2 days off in a row. I currently have all the stuff to cook with out on the counter. On the list, crab ragoon, raspberry swirl cheesecake, oppsie rolls, and what ever else I decide at the last minute to mess with.
Oh tried a sausage ball that one of the gals on another thread I'm in put up, I think they were yummy.

Anyway, I'll post updates as the night goes on.......
