Buffalo Chicken Tenders
8 chicken tenders
1/4 cup red onion
2 cloves garlic, minced
1 - 2 tablespoons olive oil
1/4 cup butter
1/2 cup Frank's Red Hot (yes I work for the company that makes it and I get it by the gallon)


Cook tenders in there own juices with onion and garlic. Cook chicken until the juices go away. Drizzle olive oil over chicken. Add butter, when half melted add hot sauce. Cook for 3 minutes. Remove from heat and allow to cool so the sauce thickens and sticks to the chicken better.



Mock Mac and Cheese
10 oz shredded "riced" cauliflower
3/4 cup heavy whipping cream or half HWC half water
1 tablespoon coconut flour
1 C shredded cheese of choice
sea salt and fresh ground pepper to taste

I steam the cauliflower in container in the microwave for 3 minutes. Put heavy whipping cream in saucepan and bring to boil. Allow to reduce slightly. Whisk in coconut flour then add cheese. Stir until melted. If you need add more cream. Salt and pepper to taste. Stir in cauliflower.

B - coffee, hwc, splenda, 2 organic free range eggs, 1 oz goat cheese, organic spinach, (4 carbs)
L - chicken wings w/homemade ranch (1 carb)
D - BBQ chicken (5 carbs)
S - chicken wings (0 carbs)

Total = 10 carbs

workout - grouted 4 hours I am done grouting, now to seal it

Ok something I've been trying to figure out ... I've got it!!!! A usable pie crust!

]Pie Crust
1 C almond meal
1/4 C coconut flour
1/2 C cold butter, cut into pieces
1/2 teaspoon sea salt
1/4 teaspoon Xanthan gum
2 eggs

Sift almond meal flour and coconut flour. Place in food processor, add butter ,xantan gum, salt and process until it looks like coarse meal. Add eggs to a running food processor. Put dough in a bowl and cover with plastic wrap. Chill at least 30 minutes. Roll out to desired shape, make about 1/8 to 1/4" thick. Place in pie dish. Prick the bottom with a fork, and crimp the edges. Bake for 15 minutes at 350.

Ok after tasting the pie my opnion is decrease the salt to 1/8 teaspoon, and add 3 tablespoons splenda or liquid splenda to crust. Rest stays the same.

I got up early today and made progress on some recipes but there just isn't enough time in the day to work and put time in on this cookbook. I have problems with the long run... I get bored so both weight loss and this cookbook are gonna take focus.

Hi all,

Been so busy it's crazy. We had my hubbys family come in to town and stay with us. Had to finish the bathroom. It's about 95% done, but good enough for them to use but I have been working from 6 in the am to 8:30 pm every night. Had Halloween and ate no candy. So proud of myself. Did drink lots of wine. Love that white wine. Ate pretty good. Had to drive my son back to college all yesterday, 8 hours. UGH!!! now back and back on track today. New month. I have a party at my house Wednesday. It ok because I am the one making all the food. Roasted Rosemary pork tenderloin is on the menu. Want to make it the whole month even through Thanksgiving. Might join you on the other thread for weigh ins.

Ok life got a bit crazy but I think I'm back to normal now.

Tonight's breakfast is a hamburger veggie soup. Just throwing together what I have to see what I get. So far I have hamburger, zucchini, green beans, mushrooms, tomatoes and broth.

Buffalo Mayo
1/2 cup mayo (I use Duke's)
3 tablespoons Frank's Red Hot
1 teaspoon Cayenne chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Mix all together. Refrigerate for 30 minutes to let flavors meld.

I have way too much time at work to mix my drinks. Tonights is a chocolate coke. It's like a chemistry set with all the different syrups and mios, crystal lights, and dasani flavors. My next one is gonna be a peach mango with vanilla syrup. The possibilites are endless!

Hi! Wow, looks like life's been crazy for all of us! My husbands been in the hospital, they thought he was having a stroke, but tests indicate it's a seizure disorder, probably manifesting from the aneurysm surgery. He's home now, though and feels good.

Laura, Thank you for sharing the recipes! I love the idea of the Buffalo Mayo. Perfect to have on hand..( love that!)

PC nice job on the no candy!! Enjoy the dinner party, the tenderloin sounds wonderful!

Leg of Lamb steak and crispy kale... took me back to childhood. My father's father was a farmer that had pigs, cows and lamb. We ate a lot of lamb as I was growing up. I sure missed it.

Ok just YUMMY!!!!

Buffalo Chicken "Mac" and cheese
1 1/2 - 2 tablespoons butter
2 tablespoons coconut flour
Heavy Whipping Cream
6 slices pepper jack cheese
2 heaping tablespoons buffalo mayo, see earlier post
1/2 Chicken breast, cooked and shredded
1/2 head medium cauliflower, steamed

Start by making a rue. Melt butter in saucepan. Whisk in coconut flour. Allow to cook for a minute or two. Whisk in heavy whipping cream until sauce is the right consistency. You can mix HWC with water, half and half, if desired to use less cream. Crumble in pepper jack cheese and stir until melted and creamy. Add more cream if needed. Add buffalo mayo. Gently stir in chicken and cauliflower. Heat though.

Hamburger Florentine soup
1# hamburger
1/2 onion, chopped
1 T minced garlic
salt and pepper to taste
4 cups beef broth
4-6 cups spinach, cut into strips
1/2 - 3/4 cup mushrooms, sliced
1/2 cup HWC

Brown hamburger with onion. Add garlic cook 1-2 more minutes. Add broth. Season to taste. Add mushrooms and allow to cook for 3-5 minutes. Add spinach and HWC.

Hi guys! I've been on induction for a week and a half. I love the recipes you have posted on here. I'm down 7 lbs and super excited to try some of your stuff that's posted. I'm good with my SF jello and whipped cream but my sweet tooth is getting stronger instead of weaker. Just wanted to say "HELLO" and let you know there's a lurker.
