Cabbage Rolls

6 cabbage leaves

Filling:
1/2# hamburger
not quite 1/2 C riced cauliflower
1/2 C finely chopped onion (I just used some dehydrated while cooking hamburger)
1/2 egg (eggbeaters is wonderful here)
1 teaspoon salt
1/2 teaspoon pepper
1/4 C heavy whipping cream

Sauce:
4 oz tomato sauce
7.25 oz diced tomatoes, undrained (I used rotel)
3 Tablespoons splenda
2 Tablespoons vinegar
1/4 C water

1 T cornstarch mixed with 1 oz water

Drop cabbage leaves into boiling salted water; cover and cook for 3 minutes. Drain well. For filling combine cooked ground beef, cauliflower, onion, egg, salt, pepper and milk. Mix well and divide into 6 portions. Place a portion into the center of each cabbage leaf. Roll leav around filling: fasten with toothpick if needed. Place in 8 x 8 baking dish. For sauce combine tomato sauce, tomatoes, splenda, vinegar and 1/4 C water. Pour sauce over cabbage rolls. Bake covered in a preheated 350 oven for 40 - 45 minutes. Remove rolls and discard toothpicks. Place sauce in pan over medium heat; stir cornstarch and water mixture into the sauce; bring to a boil and cook until thickened.


Will work on thickener for next time so not using cornstarch.


These were supper yummy!!!!!!

Creamy Burrito Casserole
Celery with ranch
hard boiled egg
Blueberry Blintzes - 2


Creamy Burrito Casserole
1/2# hamburger
lil dehydrated onion
1 Tablespoon taco seasoning mix (mine is homemade)
2 low carb tortillas
8oz refried beans
1 - 1 1/2 C taco cheese (I used colby jack)
1/2 can of cream of mushroom soup
2 oz sour cream
jarred jot sauce, if desired
I used 1/2 a can of diced green chilies


Brown meat with onion and diced green chilies; drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream in a separate bowl. Spread 1/2 sour cream mixture in the bottom of an 8 x 8 pan. Place tortilla on top. Put 1/2 the meat mixture over that. Add a layer of cheese. You could but some hot sauce on now. Repeat the layers. Sprinkle cheese over the top and bake, uncovered, at 350 fpr 20 - 30 minutes.



BTW pic is of the Cheese Blitzes. The casserole didn't make it long enough to take a pic of. I was starving by the time it got done!

Hi Laura ,

Just found this thread and am tentatively sticking my toe in. Definitely not new to LCF and am having a dickens of a time trying to find something that works. My mom lost her weight on the original Atkins back in the 70's. I think out of all the things I've tried, this one I only tried for about a week back in the 80's! Then the low-fat craze hit.

Although I've been immersing myself into low carb/ketogenic eating more than ever the last 3 months, I've not had any losses. I began Atkins '72 - more Atkins '72ish - last week. I use Ketone sticks every few days just to check. I'm trying to up my water intake to see if that's the problem and am toying with adding IF'ing to the mix.

Anyway, thought I'd say hi and maybe post what I'm eating sometimes. I rarely know what will be for dinner until I get home so I may only post the daytime things.

There's an Atkins '72 up on the main boards, you should come check that out, too. Congrats on your losses, too, you're doing great!

Hey Vanilla. Glad to see ya here.

Meatballs and pasta sauce

ehh.. need to work on the recipe. Didn't like the start very well. Will up the Parm and decrease the almond flour. I'll try again next week and see what I get.

cucumbers and ranch dressing

random "frozen dinner" for lunch. I'll post later what I end up grabbing.

making a hodpodge. The cheesy cauliflower that's left from dinner, left over fillet mignon cut into bite size pieces, 3 slices bacon crumbled, and turnip cubed and boiled. We'll see how it tastes.

need to get through the next month. Stress is high. Work is crazy, getting ready to move again, and bf isn't here and won't be here until after the move Nov 1st. Long distance relationships suck! I don't get days off for the most part so I can't even go see him. The new landlord isn't answering the phone... I don't want to do this. I need smooth sailing for a bit not all this choppy seas and hurricanes.

I didn't measure the cocoa... I used hwc, water, splenda (oh just found a liquid generic splenda at krogers....YAY!) cocoa powder, and peppermint sugar free Torini syrup, a generous splash of it. I'll measure next time. Doing iced bullet proof coffee right now. That is hitting the spot. Double strength coffee, coconut oil, tablespoon butter hit that with a stick blender, then add hwc sugarfree syrup and liquid splenda. Stick blend again and pour over ice! YUMMY.

Today's menu is gonna be pan fried pork chops with mushroom "risotto" I'll post the recipe for the risotto once I make it. Just sounds good so I'm gonna play a bit with the cauliflower.

the mushroom "Risotto" came out wonderful. Lots of flavor. Here's the recipe....

Mushroom "Risotto"
2 1/2 C riced cauliflower
2 Tbsp. chicken stock
1/2 C white wine
1 Tbsp butter
3/4 C coarsley chopped mushrooms
3 Tbsp. minced onion
1/4 C plus 2 Tbsp Parmesan cheese, grated
1/2 teas lemon peel
Few sprinklings of nutmeg

Steam cauliflower in microwave for 2 1/2 to 3 1/2 minutes. Saute mushrooms and onion in butter until onion is translucent. Add chicken stock, wine and steamed cauliflower. Heat through until liquid is reduced. Take off heat add Parmesan, lemon peel and nutmeg. Stir well.... Enjoy.

I'll have to get some peppermint syrup. I have the extract, but man, it packs a punch if you use too much.

I haven't tried the BPC iced. But I adore it the typical hot way. Keeps me satisfied throughout the morning.

I applaud your recipe creativity! I'm a 3-4 ingredient gal, the quicker to make the better. I used to love to cook, but that was back in the carby cookies, cakes, and pie days.

I just like to see how I can make things go together. I'm experimenting with baking but most of that will have to wait until I'm moved cuz the oven here won't go on most the time.

Getting up late today since I didn't get to sleep until almost 2pm so no cooking tongiht. Grabbed taco soup out of the freezer.

Hi all,

Would love to join you if you dont mind. Hubby woke up today and weighed himself. He got so mad he said he is back on Atkin's 100%. We have been off and on for years going up and down on weight. I have been through lots of spinal surgeries so things sort of got in the way. Anyway, yesterday was day 1. The only thing I find hard about Atkin's is I love my white wine Hubby said no more for awhile, but I might sneak some on a Saturday nights only. I know not induction, but love it......I have also started walking again. Finally got to a good place after my surgery so I can walk now. I started walking Saturday and will do it 4 days a week (tues, thurs, sat, sun)

Weight:
Oct 1st = 166

Menu:
B - coffee, hwc, splenda, 2 eggs, 1 sausage patty (4 carbs)
L - spinach lasagna (Linda's) (7 carbs)
D - pulled pork, 2 cup salad, feta, vinaigrette dressing
S - 1/2 coffee, hwc, plenda

Walk = 25 minutes

Hi pcaltman. I did some reading on an old Atkins '72 thread where you were in there. Seemed like you did very well.

I hope you pop over to the other board you used to be on. There's a few of us doing Atkins '72 in there and could use the company!

I am by the book and am up 1.5 lbs.

Ok did a beer batter cod tonight for dinner.. not too bad. I keep going out and picking pieces off. I'm not much of a fish eater so it must be ok.

8oz low carb beer
1/4 C + 2 Tablespoons coconut flour
salt, pepper
1/4 teas garlic powder
1 egg, slightly beaten
Cod fillets

sift flour into bowl add seasoning, beer and egg. Cut cod diagonally into 1" strips (5 - 6" long). Pat fish dry and season on both sides with salt and pepper then coat in beer batter. Dredge the pieces of fish in 1/4 cup coconut flour and slide into oil. Fry fish, turning over frequently, until deep golden and cooked through, 4 to 5 minutes.

I hope I can do this again. Really need to get this extra weight off for my spinal and want to do this for hubby who is miserable that he has gain 24lbs along with me. Oops.... I am only going to weigh myself 1 time a week just to do things a bit different, but will post it to see progress. I am keeping it plain and simple for foods. I lose better that way and I don't have tons of food in the house and budget is tight. Looking forward for Thanksgiving and trying a new to me low carb stuffing I saw on youtube. I love stuffing Had girls night out last night and did great with all the food there. I did have about 1 tbsp. of cashews but oh well not too bad for the night.

Hope you all are doing good. Love to see the menus to give me ideas

Weight:
