OMG!!!!!!!!!!!!!!!! YUMMY! I tried one before it was deep fried and one after. Good both ways but the deep frying makes it pop!!!!

Here's the process for ya. (Tell me if no one wants pics)

Oh last pic the deep fried one is in the front... may I repeat......OMG YUMMY!!!!!!!!!

portion control is gonna be hard with these lil gems...no more tonight so I'm gonna deep fry the others when I'm ready to eat them.
Oh and all I did was make crepes without the splenda or sf syrup in them and then the filling is a package of cream cheese, about 1/4 cup or less of chopped green onions, 1 - 2 Tablespoons of splenda, and 1 can of white meat crab from a can. Remember the filling will taste better the next day, when the flavors have time to blend together properly. I just couldn't wait. I always used the fake stuff cuz it had a better taste when I used to make these but I looked at the fake crab legs... Carb city!

ok so now the no bake cheesecake is in the fridge. I added SF Raspberry syrup and a bit of raspberry extract to the recipe. I wanted to swirl it but no good on that it's just a touch too thick. Will have to do a baked cheesecake for that. And yes I cheated a lil bit, I used an almond flour crust. He went off plan today and has no plan to come back, so everything has to be shareable. At least it's only a lil cheat not a big one. Will take pics when it comes out of the mold tonight.

Also have the lc muffins in the oven. To get around the bitter of a swirled chocolate/vanilla muffin I added guess what... SF chocolate syrup and cocoa with a bit of extra sweetener... tasted so good might make plain chocolate ones next time. I think I really love these syrups! Now I'm gonna have to buy more... found a recipe for a coconut cream pie that can be low carb..... sounds wonderful.

I think I have big time cooking out of my system until next weekend... never know though.

Always Induction

Hello! I do the ketogenic diet, so I essentially am always doing the Atkins Induction phase! I have lots of tips, tricks, and recipes.

My mom actually just sent me the BEST Easter care package full of awesome snacks. I think my favorite snack in there was some mocha coffee Blue Diamond almonds.

There were also sugar free jelly beans, which I devoured, so excuse me while my guts wring themselves out...

atomickate - AH I miss nuts... the crust for the cheesecake was a great cheat... It tasted heavenly. Nuts aren't allowed on induction... not till 2nd phase. I'm always interrested in new recipes and techniques, so please share as much as your heart desires.
The Cheesecake was so supper yummy. The raspberry flavor made it. Next one is gonna be chocolate. Terry even liked it and ate it up.

Oh! I didn't know induction and LCHF were so different. Alas! I would love to help!

That cheesecake sounds killer. I once made one with a few crushed raspberries, cream cheese, gelatin, and devonshire cream. I had never had devonshire cream, and had to get it from a speciality store, but I swear it was so good, I almost just ate that with a spoon instead of making cheesecake.

LOL it sounds good. I've heard of it but never used it. I'm in a St. Louis suburb but there aren't as many specialty stores here as I thought there would be. The ones that are here I'm not sure where to find. So I'm finding them here and there.

I have a crab cake recipe... let me find it.

Maryland Crab Cakes with Quick Tartar Sauce

1 lg egg
2 1/2 Tbs. mayonnaise
1 1/2 teas. Dijon mustard
1 t worcestershire sauce ( I will probably just use a dash of hot sauce)
1 teas. Old Bay seasoning
1/4 teas. salt
1/4 C celery diced
2 Tbs. fresh parsley or 2 teas. dry
1# lump crab meat
1/2 C pork rinds ground
Canola oil

Line a baking sheet with aluminum foil. Combine the egg, mayonnaise, Dijon mustard, Worcestershire, Old Bay, salt, celery, and parsley in a large bowl and mix well. Add the crab meat ( be sure to check the meat for any hard and sharp cartilage) and pork rinds; gently fold mixture together until just combined, being careful not to shred the crab meat. Shape into 6 crab cakes (about 1/2 cup each) and place on prepared baking sheet. Cover and refrigerate for at least 1 hour. Preheat a large nonstick pan to medium heat nad coat with canola oil. When oil is hot, place crab cakes in pan and cook until golden brown, about 3 - 5 minutes per side. Be careful as oil may splatter. Serve immediately with tartar sauce or a squeeze of lemon.

Quick Tartar sauce
1 C mayonnaise
1 1/2 Tbs. sweet pickle relish ( I use a dill pickle thrown in the mini food processor)
1 teas Dijon mustard
1 Tbs. minced red onion
1-2 Tbs. lemon juice, to taste
Salt and freshly ground black pepper, to taste

Mix all ingredients together in a small bowl. Cover and chill until ready to serve.

NOTE: Haven't tried this yet... it's a revision of a recipe to make it low carb. It's on the list for this week. I'll let ya know how it turns out.

ezckimo. There are great recipes around. Linda's low carb has a ton of stuff. I have a 4" binder full of induction recipes so let me know if ya need some ideas.

And so ya know it's not impossible. I've lost 42# so far in 6 months. Follow the plan and it will come off. The first couple weeks it usually really comes off fast. Not for everyone of course but most.

Also some cream of mushroom soup and a lil smokey thousand island left from big mac in a bowl night. Cooked up yummy!!!!

not sure what else I'll eat today so will post later.

So was hungry for an old hc favorite. Here's the updated version of Asian Chicken and Noodle Skillet.

3 zucchini, julienned to make noodles
1/2 carrot, julienned
4 green onions, chopped
Red peppers sliced (I used about 6)
chicken breast cut into bite sized pieces
1 Tablespoon toasted sesame oil
1T Asian 5 spice powder
1 tesaspoon chicken stock

Mix Chicken with toasted sesame oil, Asian 5 spice powder and chicken bouillon. Set sit for 10 mins. Cook chicken until done in a little olive oil, remove from pan. Saute zucchini noodles in chicken stock. Remove from pan. Saute red pepper, green onion and carrots until crisp done.
Combine everything together. Heat through. Enjoy.
