Heidi, I use that recipe, but I cut down the splenda. They still taste good, though.

Aw you girls are too kind. I'm blushing! It must be some good lighting or something, trust me!

Walked 2.5 miles again last night. Shaved off over a minute off our average mile time, I'm pretty excited. things are getting better!

No scale again today. I feel very very poofy I just realized this morning that TOM is due anytime. Double

What are you ladies up to?

I can say I have not been low carbing. Don't know what it is with me, I can make all the excuses in the world, but my head is not in it.
Any advice? I know you have all been there at one time or another.

Wahooooo!!!!

Hi Ladies, it took me a few days to find you after I got Karen's email. I can't believe it's been 3 years!!!!

Thanks so much Karen for getting everyone together

If it's OK I'd like to jump in on the challenge

*Introduce yourself - Victoria Coffey (most of you will remember me as Victoria Minnick, I got married this past April

*share the meal plan you are following, if any - Weight Watchers

*try to post everyday (it's good to be accountable) - I'll do my best

*Thursdays are weigh-in days (you don't have to share the number, maybe just the amount lost or gained) - I'll be there, hopefully lighter

Hello girls--how is everyone today?

While we were on vacation, one of our neighbors had a fire that burned up their shed, a riding mower and their RV. Normally, one would react with sympathy and understanding. Well, we were ticked. These people seem to have more "tragedies" then anyone on the planet. Multiple fires have burned their shed, pole barn, garage, vehicles. B&E twice where vandals spray painted their kitchen cupboards, placed a computer in the toilet etc. Now this. Yesterday they posted a pic of their brand new jet boat on Facebook. How the heck do people live with themselves? Why aren't law officials onto them? This has been going on for YEARS!

I have no advice because this week I have been in the same boat....I'm on-plan one meal, and off the next....

Seriously??? What did they do get tired of their RV and decide that they'd rather have a new jet boat instead? So, their ingenious plan is to get it through insurance fraud??? If I tried something like that they would probably put me UNDER the jail!

Anna - I hope they caught.

Now about not having your head in it, I was just talking about this with my mom yesterday. It's hard to get started with all the changes you have to make just to be "on plan". I suggested to start small, up water, not eating late at night next, then smaller portions, etc

Maybe that might help you guys.

Low carb isn't for everyone. I love love love weight watchers, but at the moment I need the strictness low carb/South Beach provides, then I can add in fruits and bread/pasta. At the moment, I'm in the first phase like induction and will stay there for a few more weeks. Maybe starting small is the way to go?

Oh honey - you don't even know the half of it. I just don't understand why law enforcement has not investigated this for fraud. We had a tornado go through about 10 years ago. Their son told us his parents had him rip siding off their house and break windows with a hammer so they could re-do the outside of their house. They were awarded over $40,000 in damages. That's just one story...there are many, many more. My oldest son feels pretty confident that they have an insider at the police department writing the reports. They may have... but for me, its another one of those things that chaps my behind. We work so hard, pay our bills, live a decent honest life and then live by people like this. By the way - her facebook page said "why do these things always happen to me" You don't even know how bad I wanted to comment on that...and the pic of the boat...

Wow....and a red flag never goes up with their insurance company??? That is crazy!

On a positive note....maybe they'll invite you to go out on their new boat! *ducks & runs*

Had another great day yesterday. Walking again last night at a great sports complex with huge walking trails with inclines and stairs everywhere. I worked and sweated my behind off for sure! Feeling really excited about working out again after such a long time away. I'm inspired and motivated to see how far I can get by Dec. and our Vegas trip! I haven't felt this way in a very long time, so it's a welcomed attitude for sure.

TOM showed up 2 days early which I'm but at the same time explains why yesterday I was draggin a$$ all day long and wanting to nap. Also always wanting to set the a/c at 60 for the last 2 days much to my family's dismay, cause mama bear was HOT! LOL

Anywho, nuthin going on today just trying to figure out what's for dinner and contemplating if I really want to walk tonight or not.

Anna, your story of your neighbors reminds me of my MIL. Yes, my MIL. She has done things that leave me wondering how in hell she is not behind bars. I gotta figure that karma will handle her soon enough and until then I'm biding time and watching the show and all the things it'll use to hang her.
Yeah, in case ya didn't notice, I have NO relationship with that psychotic nutjob

Hope everyone's having a fantastic day!

I just got this recipe from Bethenny Frankel...she & I are BFF's! (Okay, so I stole it from her FB page...) I am definitely going to make this! I love sun-dried tomatoes!

Sundried Tomato Grilled Chicken

Makes 4 servings

Ingredients
1/2 cup red wine
1/2 cup sun dried tomatoes packed in oil, drained
1/4 cup fresh basil leaves
3 tablespoons olive oil
4 cloves garlic, chopped
2 teaspoons fresh ground black pepper
1 teaspoon salt
A few sprigs of parsley (optional)
4 small chicken breasts
Preparation

  1. Combine the wine, tomatoes, basil, olive oil, garlic, pepper, and salt in a blender and mix until smooth
  2. Add the blend with the chicken to a zip lock or storage container. Make sure the chicken is covered in the sauce.
  3. Marinate overnight in the refrigerator
  4. Grill about 20-30 minutes or until they reach an internal temperature of 160F.
  5. Garnish with fresh Italian parsley
  6. Enjoy!

I guess I'm still paying for my indiscretions from this past Sunday. Also, TOM showed up 2 days early (yesterday)... I am so bloated I am round like a beach ball this morning. Yes, I'm GRUMPY!!!!!!!!!!!!!!!!!!!!!!!!!!!
Sunday was the ONLY off plan that I had, have been clean otherwise...so it's not really a *gain* is it??? Why is my body not letting me lose weight!!!!!!!!!!! So frustrating!!!!!!!!

No walk last night, I just didn't have it in me with TOM around. Went to bed with a migraine and a backache Seems like symptoms are getting worse, it really sucks getting old!
