February is a month with obstacles for me. V-Day, my DH's B-Day, my B-Day, MIL B-Day, and THIS year Our Anniversary. We were married on February 29th, 1992. It will be our "5th" anniversary celebrating 20 years of marriage. Hope I can navigate all of these mines in the road that is February. Although, at the end of Feb 2011, I was about 20 lbs heavier.

Kateee....When I eat pizza "out" I gain too, but when I eat it at home, it's not-so-bad.
Here's a recipe I got from a good friend on another board.



Sharon's Pizza for One

I used a 2 c. Pyrex measuring cup, but only filled the cheese to the 1 cup line, that gave me room to mix everything else.

1/2 c. of mozzarella cheese
2 T. of grated Parmesan cheese
couple of grabs of sharp cheddar to take it to the one cup line
sprinkle of garlic powder, basil, and oregano
1 egg and beat this all together well with a spoon.

I spread this in a well greased corning-ware 9 inch pie plate.
Topped this with my 14 pepperoni. This is one serving per/pkg.

Baked at 450 degrees for 10 minutes.
Remove from oven and cool for 5 minutes.

While cooling, I spooned out 4 T. of Ragu and nuked 40 seconds or so till hot.

I used the sauce as a dip and my oh my...........it was delicious!!!

Enjoy!!!

My estimation for the carbs is...
Cheese - 1 c. = 4 carbs
1 egg = 1 carb
1/4 c. Ragu = 4.5 carbs
Total = 9.5 Carbs

So, for my plan that is right on target. You can serve a small salad on the side but I was too full.

Here's another pizza recipe that looks good in case you need more than a single serving.


Thin and Crispy Pizza Crust

Heat oven to 450 degrees

In a bowl thoroughly combine
3 eggs
2 cups shredded mozzarella cheese
1 cup shredded sharp cheddar
1 tsp garlic powder
1 tsp basil
press evenly into Pam sprayed pizza pan or cookie sheet
(this makes one 16 inch pizza crust)
Bake at 450 degrees until golden brown (about 10 to 15 minutes)

Here is what your crust looks like after baking




It will completely lift off your cookie sheet. I patted the grease off of it, but that step is optional




add toppings of your choice

This one has the following toppings~

1/4 cup low carb marinara
1 cup Mozzarella cheese
2 links Italian sausage (browned and crumbled)
1/4 cup sliced back olives



After adding toppings, run the pizza under the broiler until cheese is melted and toppings are bubbly


This slices up beautifully and the crust is crispy and thin




Yes, you can hold it in your hand!



This was super easy to make!

Oh my, those pizzas look fantastic. I asked yesterday and my Costco doesn't carry pepperoni....But, I'm on a mission. I will make pizza...It would be so much better than just eating the toppings.

February is a month with obstacles for me. V-Day, my DH's B-Day, my B-Day, MIL B-Day, and THIS year Our Anniversary. We were married on February 29th, 1992. It will be our "5th" anniversary celebrating 20 years of marriage. Hope I can navigate all of these mines in the road that is February. Although, at the end of Feb 2011, I was about 20 lbs heavier.

Zogo, I can't believe Costco doesn't carry pepperoni Sam's has it in their coolers in big bags. Mine is kept where the shredded cheeses are kept. Maybe ask another worker at Costco's???
