so easy to make and you can make them any way you want. I usually scramble up about 6-12 eggs(depending on which muffin pan I'm using), fry some sausage and bacon, cut up a few green onions and then you put the sausage and or bacon and green onions in the muffin cups(however much you want),
spray the muffin cups with non-stick spray, I usually put about a tablespoon of 'goodies' in the cup, then fill about 1/2 of the way full of eggs and top with cheese. Season with salt and pepper, garlic powder whatever you want. Bake at 350 for about 15 minutes or until slightly browned. Let cool, then put in container or ziploc bag and refrigerate. Pop in microwave 30-60 seconds depending on your machine. You can also add any low carb veggies you want, broccoli is good, whatever you want, just keep them in small amounts and the carb count is very very low.

also found a very cool way to keep green onions....have always gotten them for something specific, dip or recipe I was making, and the rest would go bad. I saw on Pinterest that you can cut them up into the small pieces like you normally would, then wash and dry out a plastic water bottle, put the green onions in there, place the lid on and put in the freezer.....when you need some, shake them out

Cheryl! Happy New Year!!! Hope you had a good Christmas!

me too. I don't understand why I have such a hard time with this, really sucks, but I am ready to have a 'do-over'. Starting Monday, have my menus made, just have to get the food. My new doctor has advised me (like it's a new thing to me) that I must get control of my eating habits or it will end up getting me. SO>>>> I weighed this morning and was at 218.0 MUST do something now!

I know my health is at risk being 40 pounds overweight - I ate terribly over the holidays - I had no business eating chocolate, etc -

My blood sugar is way too high and I am always tired.

I am all up for Monday - not weighing till then, though

ok....Day 1:

B: I didn't eat breakfast, feeling really bloated today
1 diet Snapple Peach Tea(Singles to go), 32 oz water
L: large salad with boiled chicken and ranch
D: 2 egg cheese/ham omelet

I forgot to weigh this morning, have gotten so out of the habit. I will weigh in the morning for my start weight. Do you want to do a weigh in each week? Should we start a new thread you think?
