I recently tried this recipe and thought it was pretty good. Cant give credit to the author of this recipe, I lost track of where I go it from :blush:



LC Three Cheese Spinach Bake


2 (10oz) pkgs frozen, chopped Spinach –liquid squeezed out
½ C + 2 T unsalted butter, divided
1 medium onion chopped
2 cloves minced garlic
1 C of heavy cream
8 Oz cream cheese
¾ C fresh grated Parmesan cheese
Salt and pepper to taste
½ C shredded Monterey Jack or cheddar cheese

Heat 2T butter. Sautee onion til tender. Add drained spinach & garlic. Heat everything 2gether 4 5-10 min. Transfer 2 buttered casserole dish Preheat oven 2 350°.

In same pan sauté onion & spinach, heat heavy cream, cream cheese & ½ C butter until cream cheese is melted. Add fresh grated Parmesan cheese & stir until you have sauce. (If it gets thick, add a lil more heavy cream). Pour the Parmesan cheese mixture over the spinach; salt & pepper to taste. Stir until the spinach & parm mixture have completely blended. Sprinkle shredded cheese over the top, bake 350° oven for 10-15 min until top cheese layer is melted & bubbly. Pull out of oven, sit for 5min.





Here's a dinner recipe, it's mine. It's soooo yummy, if I my say so myself.


HOT TAMALE
3/4 pound ground beef (or a mixture of GB and Spicy Chorizo)
1 Egg (beaten)
1 Oz Shredded Cheddar Cheese
3 Oz Shredded Quesadilla Cheese (or any Mexican cheese for melting)
1/2 C. Black Beans or Soy Black Beans (drained)
1/4 C. Corn, Black Bean & Red Pepper Salsa (pureed)
1/2 C. Mozzarella Cheese (divided into 2-1/4 servings)
Garlic powder
Adobe Seasoning
Crushed Red Pepper



Brown Ground beef in pan , season. Drain off fat, transfer beef to bowl let cool a bit. To the cooled beef add egg and mix well. Add drained black beans, pureed salsa, all the cheddar, ¼ Mozzarella, and 2 Oz Quesadilla Cheese-mix well. Transfer mixture, pack well into baking dish sprayed well with Pam. Top with remaining cheeses. Baked 25-30 mins in a 350 degree oven. last 5 mins turn oven 400 2 brown. I serve mine with sour cream and hot sauce or jalapenos.

Hey JG!! I absolutely LOVE Core Rhythms!!!!!! I did it on Saturday and was hurting all weekend!! Especially the flamingo dips/lunges...OUCH!!!!! LOVE IT!!!!!!

Oh, I forgot to add that so far this week I've got 4 points! I finally got some points!! Woohoo!!!

Time to be honest...

Okay, I never mentioned how much I gained over the holiday season. Well, after Thanksgiving I weighed 244, but I then went on a 7 day cruise and then was hit with Christmas a week or so after. I ate and ate and ate til yesterday, so I'm starting this challenge as a whopping 258!!!!! :O But, I've admitted it and I'm SUADI!!! :blush:

Hey You!! Your partner is doing well!! A little tired today, but I still was able to put in 3 miles on the treadmill today...it was hard but I did it.

Ooh I amgoing on my first cruise in July for my fourth wedding anniversary. We are going to the Mediteranean. My hubby is really into Rome all of a sudden. Where are you going? This cruise is just another thing that is motivating me to get right.

I would love to share recipes! well this is the first day since I started on the first of January that the scale has not moved. And for the first time since I have been weighing daily ( since 2008), I am ok with that. I exercised for an hour yesterday and have stayed on plan. That is usually when I say, "Ok body you don't want to do what I want, I am eating everything." lol. I am super excited for biggest loser tonight. Hey Glory has not shown her face and I have some one who said they would like to partner up. What needs to happen? Who should I speak with?

I ate backwards today..had a late start..missed breakfast hours

Exercise 1 mile and 20 times up and down my stairs once I came home. Still havent got to the dvd yet..but this week I will be sure to do so. I have also been quietly cutting down on my smoking..makes me feel even worse..fat and out of breath is truely not a good feeling. But the combo is stressful..low carbs, adding excersizing, Major water And slowing down on smoking..Eeegads.

I did a crazy thing to myself this morning. I weight myself while TOM was still in town (last day) and I got a 194.3...I'll take it! I OF Course have my fingers and toes crossed that I see a 193 or something nice once Tom is completely gone...

I love the high I get after my walking/jogging session. I feel like I'm floating on air. It it addictive! When I don't get my exercise in, I'm a big grouch...no one can stand to be around me...so, I have to move my butt!

I plan on buying a "bday outfit", and I hope I look good in it...I may have to stuff myself in it...Lol!

Trust me everything has been on plan....Probably way TMI here...but TOM is here and I have an IUD so when it comes it comes full force and it may last 2 weeks...come for a week go for a week....sucks! This is the worst part of having it...but I have a very hard time having children so I had to pick a very effective form of bc......okay with that being said other times that it has hit me like this I have fell off plan but not this time sister! I am looking for the scale to be up tomorrow just for the fact that I have ate way to much today.....

Okay now missy on to youREALLY? You are a rock...I am not mad ....shocked yeah...mad no....

SUPER proud of your 24 miles...how many bonus points is that.....:clap :You really are doing so well and you are an awesome partner!

We are going to do a caribbean cruise so im so excited wow Rome you must post pics when you return and I will do the same we are going in June everyone ive talked that have been on a cruise had nothing but good things to say about them..ive always wanted to go on one..I had a chance to go some years back but i took my husband to see the titanic welp that ended that so im now with my current sweety and he is like yeah let's go!! my friends said "Im the only one that would take there husband to see the titanic after i convinced him to go on a cruise..oh well im divorced from him now and I called him and told him about me going on a cruise and he just laughed and said have fun...

Good morning! I think I'm gonna have to resort to meat and eggs. Yeah, I've been saying that for a while now. But I need to do it. The scale isn't budging. I'm sure that I can do without my blueberries and cream every night. That has to be allowing carb creep and adding a lot of calories. I will surely miss it, though.

hey girl!

i have cleaned my food up a bit too... doing vlc for the week...so far dropped 3 pounds since monday. I'm just about back to my fighting weight.... but i think i'm noticing my portions were too big. (but that just may be ketosis talking, since i don't get that great apetite suppresion in maintenance).
