Hi everyone -
Wednesday and Thursday <20 carbs. Stayed on plan.

Had to go to doctor yesterday - I have a wicked yeast infection on abdomen - taking antibiotics and some other stuff. No exercise for awhile till it clears up.

I will be out of town until Tuesday night. I may be checking in on Sunday.

Ok, yesterday I was very TIRED, i spent six hours making middle eastern pies for my family, they're filled with veggies and meat, but the dough is defenitely NOT LC and I stayed on PLAN, yaaaaaaaaaaaaaaaaaaay. I made a spinach filling that was great, and I sauteed some chicken breasts and had my food. I was too tired to work out, so Today I will, i think another 4-5 miles is fine. I would post some pics, but that would just send some of us over the edge.

but here are the recipes, for the filling, which is great as a side dish and induction friendly

Middle Eastern Spinach pie Filling

1 large onion finely diced
4-6 garlic cloves crushed or grated
6 bags frozen spinach, thawed and liquid drained
1/3- 1/2 cup freshly squeezed lemon juice, I like mine very lemoney, so I used 1/2 cup
2 TB sumac (middle eastern spice, available in middle eastern grocery stores) OPTIONAL
1 cup broth chicken or veggie is oK
salt and pepper to taste
3TB olive oil
1/2 tsp red pepper flakes(optional, if you like it spicy go right ahead )

In a pot heat olive oil and sautee onion and garlic until transluscent.
add spinach, half the lemon and half the broth, stir and cover. When I was making it, the botom of the pan would dry out, so I added the rest of the broth as needed, then cover and let it cook on medium heat for 10-15 minutes.
Lift the cover add Sumac (optional but highly recomended) and taste. If you like more lemon, add as you wish, but I recommend you use the whole amount, its soo good. Salt and pepper, and let stand for a couple of minutes before serving.
You can stuff chicken with this recipe, use it as a side dish, mix it with cream cheese and microwave for a dip, its very versatile.

Meat Filling
2 Lbs ground beef ( I had 90/10)
1 Large onion finely chopped
3 TB olive oil
1 bunch parsley
1/3 cup pine nuts (optional and NOT on INDUCTION)
Salt and pepper to taste
1 tsp seven spice (you can find this in ethnic stores)
1/4 tsp cinnamon
a pinch of nut meg
You can add 2 TB of hot sauce or fresly chopped hot peppers, depending on your liking, I omitted since children would be consuming these.

IN a pot, heat olive oil and sautee onion until transluscent.
Add ground meat, making sure to break the lumps by mixing it thoroughly.
Add in the spices and mix, cook until the meat is completely cooked.
your meat should be fragranced at this point, if you can't smell the fragrance, taste the meat and check the taste, if you want more spice, add more seven spice, IT WON"T HURT.
Take the pot off the heat and add the parsley, and toasted pine nuts(if using) and serve immediately. This is really good with a side salad, or atop roasted veggies, or you can use lettuce wraps to make a sandwich, top it with yougurt or sour cream and you're good to go.

Thanks fieldofroses for those, when I have more time (HA!) I'll definitely have a look at those, they sound great. Did you post your figures for Thursday? Or am I just blind again ?? Good job on all that cooking and sticking to plan through it .

Well yesterday wasn't so great for me food wise, had a couple of vodka's last night, watched a movie and ate . All LC, but calories & carbs both up 2588 & 32g respectively. Also I only did 1/2hr exercise. Oh well, I enjoyed myself at least and I have 2 days until I weigh in so might be able to counteract the damage a bit!

Have already done my UB weights workout and added the 20min cardio I missed yesterday morning to it so did 1hr 20min. Gotta get moving if I'm going to fit everything into my 'free' saturday see you guys tonight.

Things have been so crazy today that I have been eating (very low-carb) just sporadically and haven't counted well. We had guests come over in the time when I was going to exercise. Then when DS went to bed, I helped DH write a paper for school and canned relish. So, no exercise for me today. I'm bummed about that because I was on a roll. Oh well, maybe double tomorrow.

Awe bobbin, you'll get there. I find I need to do my exercise 1st thing in the morning otherwise the day gets away from me and it just doesn't happen.

Logging my food/exercise for Saturday:-
UB weight + cardio & yoga workout (1hr) + extra cardio (20min)
B - bacon & mushroom omelet & green tea
S - Cheese (provided by the blood bank after my donation)
L - Rotisserie Chicken from the supermarket
Dance practice (30min)
D - Chorizo sausage with cabbage & mushrooms

Carbs 14g / Calories 2053 / Exercise 1.83

Going to watch episode 5 of Glee and probably start zzzzzing after that. Big day tomorrow driving 1 1/2 hrs each was to collect DD before school goes back on Monday. Might not get online tomorrow, at least not until the evening.

Ooops, almost forgot. Here's the current spreadsheet. Missing a few for the weekend so far but I'm sure they'll pop in at some stage.

Last Friday (10/2) you can put me down for another for exercise (aka:0). Never did it. I'm a slug. I seriously need to refocus on my priorities. Anyway...

On the bright side, I'm measuring smaller and the scale is going down (10# since this challenge began.) Quite happy about that! I'm going to go shopping in my closet and see if I can find something nice to wear to work. I'm sorely lacking in that department.

Friday I walked ran 4 miles, and stayed on plan both days.

Today, been good, had chicken cabbage cumin soup, sooo good, not sure about workouts yet.

today it is 18 carbs and 0 exercise

Had to go to a birthday party and I did so good, only ate the finger foods, like vegis and dip, cheese and pepperoni and deviled eggs. And because it was such a long ride hope we left before cake and ice cream was served. Yah!!!

Hey guys. I do had a bad night, not food wise but I drank a few beers and a few run and diet cokes with friends. Needless to say no exercise saturday for me. I will run on Sunday. I feel a bit hungover. I hate being hungover. I am a tottal lazy butt when I am hungover.

carbs for saturday 5 carbs so far.

Friday carbs 20 and I slept in late so I was lazy. Man o man am I going to have to pick it up starting Sunday OYYYY. cause I love working out. ANd I have a half marathon I need to start training for.

I am going to the gym for a full workout first thing in the am. It's hard for me to exercise early during the week, as I have to get my son up and ready for school before I go to work, DH is usually gone to work by 6:30. If it turns out he's not working this week, I will give it a go. I used to have a workout buddy who would basically push me into meeting her at the gym with guilt, but she joined another gym and I'm being a whining ninny about motivating myself. MUST TAKE CHARGE OF SELF THIS WEEK!!!!

Bobbin-No worries my dear, while I do believe that working out can change ones body, I have found from personal experience that diet truly does = 80% of change.

SO, DO attempt to work out when you can but DONT let the fact that you didnt work out allow you to sabotaege your diet...

For Saturday, today was my short workout, I walked/ran 2.5 miles,
had a chicken, cabbage soup, very economical

here is the recipe

Chicken cabbage cumin soup
2 TB olive oil
1/2 onion, white or red is fine
half a large cabbage shredded
4 chicken breasts (cubed) or you can use 2 lbs of sausage meat (any cut of chicken is fine, I made this with cut up whole chicken, chicken legs, what ever you have on hand or whatever is onsale
1/4-1/2 tsp cumin, depending on how fragrant and strong you like it to be
salt and pepper to taste
you can add red pepper flakes for a little kick or hot sauce
4 cups of low sodium chicken broth

In a pot, heat olive oil, add onions and sautee until fragrant
Add chicken and sautee until almost cooked
add the cumin, which allows it to flavor the chicken and veggies, not only the broth.
then add the cabbage and allow it to cook down, about five minutes.
turn the heat down to medium and add broth, let the soup simmer for 20 minutes, taste to see if salt is needed, add salt and pepper to taste and serve.

This is simple and delicious, with prep and cooking, meal was ready in 40 minutes, not bad, and I had it for lunch and dinner. yum

I canned relish (for the third day in a row), made LC pizza, did some errands, and then it was 3:30, a.k.a. time to leave for church. Got home around nine and went straight to bed because I'm working the Chiefs' game today. I need to be there at 6 this morning. I will definitely get my exercise today. I'll be on my feet for about 6-8 hours.

Hi guys, hope you are all having a great weekend. I've been out for the day, collecting DD from our friends who've been camping on the sunshine coast (about 1.5hr drive each way). Went to the markets this morning for fruit/veg & eggs and picked up lots of 2nd hand clothes. I have a great summer wardrobe now for next to nothing! Got to wear my new swimmers on the beach and knew I looked good . Kept up with DD in the surf, running up & down the beach, etc. We were taken out for lunch had dinner cooked for us, surprisingly I've done alright on calories today but my carbs are up. Something to do with 2 glasses of wine and some s/f chocolate I expect !!

So I did a cardio workout this morning (50min) + swimming/playing at the beach this afternoon and some walking around. Carbs 41g / Calories 1643. Will be interesting to see what the scale does in the morning (my normal weigh-in day). I'm back to induction levels for the next 2 1/2 weeks before bellydance camp, the next event where I'm not in so much control of the food. Try to avoid the chocolates until then too, especially as I'm at dance classes 3 times a week IYKNIWM.

Bed time for me now (although I snoozed in the car on the way home this evening). Gotta start it all again tomorrow morning. Oh & here's the updated spreadsheet:-

Clearly not induction levels, but am trying to frame carbs around my runs. We'll see how weigh in goes...

Today is a down day for calories bc it is rest day so I will be SURE to be carfeul.

Shelly, glad you could pop in and hope the rowing carnival went well for DD. Also hope you are feeling better with the skin infection, seeing as you've managed some exercise sound like you are a least on the mend.

Well, terrible carb day for me yesterday and I've had an ongoing chocolate attack since Friday. Scale didn't like me this morning I'm up 0.7 lbs this week, but it's mostly water from alcohol, s/f chocoalte and too high carbs. Hopefully will be gone in a few days and next week's official bootcamp weigh in will be OK.

Actually looking at my week I've been relaxing the 20g/induction a little which seems to have lead to a very relaxed weekend. Thinking the chocolate attack might also be hormonal, will see if the next week brings TOM (or maybe mid-cycle ). Oh well I can only go forward from here. Today is on-plan with lots of exercise (HIIT workout done, walking & dance class later on).
