okay, yum, yum and can I say yum?! The cream cheese muffins are very good! I wonder if you could add pumpkin to them? Sort of a pumpkin pie version? oh, but they are really good! I hope I don't eat them all tonight.

It doesnt look like your menu is that salty--maybe the cheese is too salty? I feel bloated when I have too much cheese.

I was eating the Atkins bars regularly before the week before Christmas and was able to lose IF I was extra, extra careful otherwise, BUT, I had stopped being able to lose even with those and I think they were part of the problem. They didn't cause real obvious cravings, but I think they did cause me to mentally think I needed something sweet. I've learned over the last couple of weeks that I can go without sweets most days. I'm loving the new recipes I've learned using real food and not all that extra stuff added in. I feel like I have more control.

There may be a version with pumpkin in the recipe room. Cream cheese muffins were all the rage a few years back. But they are really high in fat, so you have to exercise portion control. I know. Easy to say.

My menu for the day

eggs, bacon
a little ham
lemon tea with hc
a little more ham (basically lunch)
a hamburger patty, 2 slices of quiche
a cream cheese muffin
about two bottles of water

I might need to have one more cream cheese muffin. those are good...oh, I said that already didn't I?

yeah, I just told my husband I might have to be careful making them. In the past, I have suspected the cream cheese pudding I made for causing me to stall, so I'm wondering how these will do. The only thing is it might have been the hc in larger quantities or it just might have been the fact that the pudding is also hard to control portions on! even harder than the muffins cause you can just pile it in a bowl and devour it. I'm actually feeling a little puffy again tonight and know that I am starting pms. I had a migraine all day today that is still wanting to make a comeback. I need to just go to bed, which I'm going to do as soon as I get my shower. I have an appt with the urologist in the morning to find out why I am a kidney stone factory.

oh, you are so right! I had 3 c/sections. Cut me open any day and pull a 8 pound baby out and then sew me up and send me home, just please don't let me have another kidney stone! Of course, it helps that babies are much cuter than stones.

Hi, Everyone! Sundays are really busy around here. I finally got online and just got caught up with the thread.

Today's meals:

Breakfast: 1 fried egg, 2 slices bacon
Lunch: leftover chicken and gravy
Dinner: tuna salad (hard boiled egg, dill relish, mayo, mustard) and cheese chips
Snack: choc cream cheese yummy stuff

And that will be my recipe. It's what I make when I want something sweet and I want it now!

2 oz creme cheese - soften in microwave for 10 seconds
1 packet Splenda
1-2 silverware teaspoons of cocoa
a dab of vanilla

Stir it up until mixed well. Eat. Nice and easy and hits the spot.

I hate it for you, Shannon. My back gets real spastic sometimes. I've learned that when it starts to get tight to take a muscle relaxer at night until it loosens up. Amy, the chicken salad is a great idea! Egg salad would work, too. Maybe the deli has hard boiled eggs, or your neighor would boil up a dozen for you. Tuna salad would be easy to make and not require cooking. Have the deli grind up some ham or some roast beef for you and you can make other salads, too. I get the Di Lusso meats all the time. They are Atkins friendly deli meats and taste really good.

This was AWESOME! I made a double-batch so we could have lunch or dinner tomorrow. I barely have enough now after DH and the kids got to it. This one is going to be a keeper in our recipe file and it was so easy.

I feel like all I did was cook (and wash dishes) today. I made extra food for the week especially a breakfast quiche for DH to be able to pack for his breakfast. He is suppose to start going back to the gym tomorrow. So he has to pack enough food for Breakfast, Lunch and snacks. We have both already prepared our food for tomorrow so that's a good beginning.

Here's my menu for today:
B: 2 eggs, pork chop, coffee w/ 1/2 & 1/2 and splenda
L: spinach salad w/ ranch and a meatloaf meatball, 2 deviled eggs
D: Seoul Chicken, smothered cabbage
96 oz water for today

I have been trying to get enough water in but I still find my fingers feel so pudgy today. We'll see what the scale says tomorrow.

hello!! iz it tooo late 2 join u in this challenge?? i (like many of u) had lost about 60lbs between 2002 - 2004. i maintained my weight around 175 and i was very happy with that weight...what happened?? i gained it all back and then some. when i moved to philly in 2005 i started working in a hospital and got complacent(sp) at home with the bf who said he didnt mind the gradual gain...then before i knew it at the begining of last year i was the biggest i had ever been..297 yup knocking on 300lbs door! i never want to see that again..(i am tiny 5ft even) so im getting my butt ini gear. i have lost about 12lbs since november, (it could have been more but i ate off plan for xmas..)
i would like to get to 160 or so.. i know that for my height i should weigh no more than 145 but i still want to maintain my curves and i feel if that i will look sickly if i go below 140. btw my bday april 7th. i look forward to joining in on this journey with all of u!

Hi everyone-
It looks like I'm the first to post my weight for the week, except I'm not sure how to do it and I'm just a "skip" cause I'm on induction.
