Of course we are cool...YOU are a gem and a WEALTH of lovely and wonderful information! I just had info to ADD based on my personal experience.

I totally understand your objective, however I get concerned when too many "modifications" are made then folks get frustrated with not seeing the results they want (like mine or Kelley's or anyone else's...always dangerous to compare person to person anyway)...but I am sure you get my drift. Please please please keep posting your knowledge...I find it quite refreshing and wonderful to be privy to!

Congrats on your helath!! I am always pleased to hear about that...I lost my Grandma to (among other things) breast cancer...so sad...and a 2 y/o nephew to AML leukemia. Organic and "whole food" eating should have been part of my world a loooong time ago I am proof that YOU CAN teach an old dog new tricks

The point is, I'm not downing EZ bread by any stretch or attacking anyone who recommends or uses it. Or who feels like it's essential to the program, for that matter. I think EZ bread would be a fantastic food, and if I could have it I'd choose it. I lurve ma' organics, like I said.

I sensed you may have felt threatened/attacked/offended by what I posted, and I truly don't want that. You're one of the anchors of our group, and I delight in reading your posts.

Hi Renee and welcome!! WOW....165lb loss in a little over a year? CONGRATULATIONS!!!! I certainly hope this WOE will be your final step in your journey. We have a great support system here. I am starting over tomorrow (joined in July, but only lasted a couple of weeks and then too much vacationing). I truly believe this WOE is the answer for me and gonna give it 100% for the next 8 weeks (and then some).

Okay - here's the edited post, clarified as per Alissa's labels

I also added the rough measurement of ingredients to the Wonderbread description to help you get an idea of the manufacturing process:


"Okay, here's the skinny on EZ bread versus other whole grain breads:

First, I need to be clear: Ezekiel bread IS probably more nutritionally sound than other bread offerings because it contains so many whole grains and is minimally processed. I'm not saying it's a rip off or something absurd. But we're not talking about ideal-perfection here. I'm offering alternatives for those who, for reasons of availability or finance, cannot or choose not to buy the EZ bread.

But we must be careful not to place a magic value on EZ bread. I believe it is an excellent whole grain bread, but equivalent in rough terms to any other high quality 100% whole grain bread.

Okay, so moving on... the common misconception about 'flourless' breads drives a food-scientist like me insane.

I'm going to compare the process for a normal whole grain bread versus Ezekiel Bread and explain how the ingredients differ and how they are the same. I'm going to use a widely available whole grain bread for comparison.

1. Clearing up misconceptions:

First, it's important to realize that the debate about flour versus flourless breads, unless you're on a gluten-free or other restricted diet, is really a matter of marketing.

Ezekiel bread can market itself as 'flourless' because it takes the whole grains and soaks and sprouts them before grinding them into bread dough. Other whole grain breads take the whole grains and grind them, then use this flour to make the bread dough.

If you look at the content of the bread by weight (ignoring momentarily the organic claims) you see what the breads are made from:

I'm going to split this up into macro-categories, by scientific usage rather than common labeling

EZ bread is made from wheat, barley (gluten containing grain), millet, malted barley (flavoring and sugar function), beans (added protein content), water, yeast, and salt.

It's important to note that sweeteners (malted barley) fall 4th in line in order of weight. This tells me that in a 1 pound loaf, reasonably the measurements are something like: 1 c wheat, 1c barley and millet combination, 1/4 c malted barley, 1/4c beans, 1 c water, 1 tbsp yeast, 1 tsp salt. Unlisted should be the water absorbed during soaking. Total wet weight would account for 2-3 c water.

I assume all grains are soaked water and then allowed to sprout for at least 20 hours. This is a pretty generous assessment, because I know that most manufacturers will use the minimum timing or space requirements to reach official 'status' in health claims, and I'm hoping these guys are truly above and beyond the minimum. The sprouting process converts the starches in some of the grains into sugars.

These ingredients are then combined with the rest of the ingredients and mushed up in a big blender - kind of like a commercial kitchenaid. This process mushes up the mix and develops the gluten. At this point you're staring at bread dough. The dough is then fermented (probably a quick ferment of an hour or two), shaped and allowed to rise for another hour or so. If a true low heat method is used, these breads are baked at 275 degrees for a full hour. There are other methods to shortcut the process, but I'm giving the benefit of the doubt here.

For a comparison, let's look at the Wonder bread whole wheat:
Wonder bread contains: wheat, wheat gluten (added protein), corn syrup (sugar), oil, salt, (more) sugars, yeast, dough conditioners, preservatives, flavorings, and more preservatives.

Weight analysis tells me this is roughly split up into: 2 c whole wheat flour, 1/2 c gluten, 1/4-1/2 c corn syrup, 1-2 tbsp oil, 1 tbsp total other sugars, 1 tbsp yeast, trace other ingredients.

Here you see a bunch of unnatural preservatives and some additional oil. In addition, none of this is organic. But really if you strip away the scariness of the ingredients and understand what they do, you're looking at extremely similar mixtures.

Here preground flour is mixed with the rest of the ingredients and mushed up in a big blender - kind of like a commercial kitchenaid. This process mushes up the mix and develops the gluten. At this point you're staring at bread dough. The dough is then fermented (probably a quick ferment of an hour or two), shaped and allowed to rise for another hour or so. This is probably baked at 375 for 40 or 50 minutes.


Although there are some clear differences - the sugars (in the form of malted barley) are 'whole' in EZ bread, the ingredients are certified organic, in terms of science the process is not extremely different. The reason EZ bread is frozen instead of counter-safe is because it uses substantially less preservatives (a plus) and contains less fat (which helps shelf keeping process).

2. Examining Nutritional Claims


There is a difference between a sprouted grain and a ground dry grain in terms of nutrient bioavailability, when you are dealing with raw grains... but these claims are spurious in a baked good like EZ bread.

1. Claim 1: EZ bread claims the sprouting process releases enzymes. This is true. But the baking process (even at the low temperature of 200-275, which they claim as a 'special' baking process) destroys those enzymes. Any temperature which raises the temperature of a food over 115 degrees for more than a few minutes will destroy the enzymes. This is not really an especially problematic thing - the enzymes do not survive in the human body, anyway, since they are destroyed by the hydrochloric acid in the stomach.

2. Claim 2: EZ bread claims it is made without additional refined sugar. True, but it uses malted barley - a commonly used sweetener in the organic and whole foods industry, but a sugar, none the less and rated as high (70-100) on the Glycemic index as corn syrup. This is what helps the bread have a little sweetness.

3. Claim 3: Ez bread's proprietary sprouting method is richer in protein and vitamins than bread made from traditional (flour) methods:
Below, I have listed EZ bread and Wonder 100% whole wheat bread for comparison. Please note that there is a difference of 8 grams in weight between a serving of ez bread and the equivalent of Wonder bread. For comparisons' sake, I divided the nutrient content of each bread by the total grams and then multiplied by a common factor (using the EZ bread as a standard, I used 34 g total weight:

Per 34 g total weight... (vitamins are percentages of RDA)
EZ bread and Wonder bread weighed in at the same amount of protein.

EZ bread had slightly more B6(less than 1%) and potassium; the same amount of magnesium, vitamin A vitamin C; less Iron, Thiamine, Riboflavin, Calcium, and niacin.

This leads me to conclude that while probably well meaning - these claims of additional amounts of protein and vitamins are only completely 'true' when comparing whole grain EZ bread to white bread...

3. EZ claims to be low glycemic and high fiber.

In fiber, per 34 grams, EZ has a slight advantage at 1 g more per equivalent weight serving.

In glycemic index terms: EZ bread is a 35, edging out the Wonder bread, whose index is at 40. (I think this is probably why Wendy loves EZ bread so much).

4. EZ bread claims that the sprouting process makes the sprouts lower in carbs and calories than the original grains.

That may be true, but in a weight for weight comparison, EZ bread is only 9 calories less, and actually has 1 carb MORE than the Wonder Bread.

These extra calories come from the fat in the wonder bread. Wendy really does prefer a 'lean' diet - 2 tbsp of fat a day (from approved sources only) - and my gut tells me this is another reason she loves the stuff.


-- Really, for someone who is unable to locate or afford EZ bread, a good commercial 100% whole grain product - while not as 'clean', organic, or natural -- will be perfectly acceptable in macro nutritional terms.

This is good news for someone like me, who cannot eat EZ bread due to gluten enteropathy (an allergy). I make a nice whole grain teff and sorghum gluten free bread that is more than equivalent to EZ bread and can use this for one of my starches.

This is not to say EZ bread isn't great - it's fantastic!

You've got to remember that Wendy recommends what she has found to be best nutritionally that is easily available in her area and easiest to 'do' for her clients. There is nothing magical about the products she recommends themselves - Wendy is aiming for set protein/carb/fiber goals. If we can meet or exceed those goals, we can feel secure in making the tweak.

Here's an example:
The book suggests making Wendy's crepes with oatmeal. Yet I cannot have oatmeal. My Wendy crepes are made, instead with teff- my variation is actually much higher in fiber and nutrient content than hers (teff is almost completely fiber, protein and B vitamins). I feel this is a completely legal tweak.


As I said, use your analytical tools and make informed decisions.

Tell me about it! And I make it with creamed corn in it, so it's extra yummy and moist. I made the twins take it home with them. One of em said, oh yeah, i love carbs. They're young (23) and out on their own, they don't eat enough IMHO. So I load em up with carbs sometimes, homemade bread etc. however, since changing my WOEing, I haven't been making homemade bread and bagels.

I run only to my Christian Rock...that song just makes me want to feel the wind rush past me. Seriously, it makes me cry.

8 weeks ago I did not know I would be able to run...for any distance or length of time. I just said...well, I'm going to give it a try when Kelley and I decided to embark on the C25K thingy together What a difference a few weeks can make!!

Can someone please check the package on their [COLOR=navy]EZ bread[/COLOR] to see if it may contain nuts or made in a nut facility? I have found some other kinds of sprouted grain flourless bread but they all say “may contain traces of nuts”. I am allergic to nuts so I can’t have it.

[COLOR=#ff6600]Halloween candy[/COLOR] didn’t buy any this year as we live out of town and in 18 years we haven’t had any kids come by. I usually buy a box of nut free mini chocolate bars and DH asked me to get some and I was tempted by the 50% off sticker . . . but did not buy any. DH is seeing me changing, physically an emotionally and he is being very supportive. I think he likes it!

Haven’t been on in a few days so really behind. [COLOR=teal]Congratulations to everyone on continuing on this WOE and hello and welcome to all the newbies. [/COLOR]

These first 8 weeks have went by so fast (almost starting on week 9). I remember posting that I couldn’t wait to get here and now I am here. Won’t have my measurements for a couple of weeks again – get it done at curves – but I am down 14lbs. Now, I am so excited to see what the next few weeks brings! I am [COLOR=purple]LOVING this WOE[/COLOR] and I am managing to stay away from the scale (thanks to Kelley and Alissa).

[COLOR=red]Kelley & Alissa[/COLOR] – I have a question. Because I didn’t not have my book in week 1 (carb deplete week) and I was not recording my food on fitday.com then, and I cheated with a bowl of raisin bran (didn’t know that I should have started week 1 over after that) I am wondering if I should start week 9 (week 2) or go back and start all over with week 1 – the carb deplete week. I have lost 14lbs but just wondering if I would have lost more if I did week 1 correctly. Any ideas on that? I did read we are not supposed to do more than 3 carb deplete’s in a year (I think it was 3) so maybe there isn’t any harm in starting the WOE from the very beginning. Please let me know your thoughts on that one. Thanks.

Hehehe – haricots vert is green beans in French! I am from Canada so used to reading the French and English. Just made me smile.

I'm excited tomorrow is week 4. My friend who talked me into doing this with her can't believe the time has flown so quickly. Still trying to convince her it's easy. She has tried twice and not able to get past first week. I have faith she'll do it when she's ready. Everyone is doing great with ignoring their scales. Mine has me worried about tomorrow, but will just have to wait and see.

Did I tell you that I have the C25K podcasts ready to go on my IPOD? I think I need to use those first to get used to the program, then I'll run to my Christian music. I used to run 5 miles when I was in my 20's. I'll happily take 5K now!!!!!

Regarding the deplete...you know if you are having cravings...then maybe I would suggest a mini-depelte but you have not mentioned one sweet tooth craving...so I am thinking you are OK. You are going into the 5 carb down day stretch before Saturday carb up...how you feeling about that? I say if your succss is good, keep working the program.

I'm excited to hear about your measurements!! Way to go girl!!

I'll look up my EZ bread after Megs goes to sleep

Julie...You wil do it!! I loved the podcasts for the first 5-6 weeks...it is only for the long run stretches that I prefer my own music. I think the first several weeks are exxential to use the podcasts and I LOVED THEM!!

I'll share all my music lists with you! From my 20 min run to the 25 min one and 28 mins etc I find my attention and drive is more powerful on the non-stop runs with that personal inspirational boost. it is wonderful worship time for me...I feel God with me when I run

I am glad you liked it...This Man...Jeremy Camp again...you'd like that too...very powerful!

There is a guy who does a Christian c25k podcast...I may go hunt it down and give it a listen

Thanks Alissa. I will have to read about what to do going into week 9. so i do 5 carb down days and day 6 is a carb up and then what for day 7? i will give it a try. Amazingly enough, i do not have sweet cravings. I really look forward to my salads etc. I just made greek salad and broccoli salad and mmmmm, it was delicious and i served it to guests and they loved it too. I am really liking this WOE and can't wait for the days to go by. Am having my mom for 2 months but plan on continuing the eating program and exercising. Set up a sewing room for her in the basement so she has something to do when i am at work or exercising. Thanks for the advice, I will give it a try and i am secretly happy that i don't have to do week 1 over but i would if i had to. Have a good night!

Day 7 would be a baseline (you pick up week 2 on day 5 but it is a carb down...that is why you have 5 carb down, then carb up then baseline...then you move into week 3 as usual ) Got it??

I think the deplete should be considered if you are having a hard time with cravings...otherwise the recommendation to get back on track or re-start if carb down 4 days and p/u week 2

Didn't weigh!!

Though I'm not dressed- drank alot of water and a coffee- now I can't weigh, as anyways it won't register properly- only one more day of staying off the scale til Wed.
P4 already- oh man, had to read 2 last pages of last week's thread also.
DSalmost16 got himself up and out this morning. I was up since 5:30 anyways, but it was such a pleasure to see him get himself out of bed at 6:40 and out by 6:55. He done me proud!!!

Let me just bring up a point you didn't cover. It's not only the numbers. I've been to a well known and respected naturopath nutritionist and he taught me something very important that over time has proven to be very true for me.
Here's a link to some of his work and philosophy:

He told me that I should stay away from flour in general, even organic, whole wheat, or whatever. He claims that some people don't do well with ground grains- any flour of any sort. He calls these people "lymphatics" as our lymphatic system is prone to be sluggish. He says that if I want to eat grains of any sort it's preferable to eat them cooked, and not in a flour form. I've seen that I react badly to flour, though in small amounts it's OK when I've been eating "clean" in general.
This may be behind the success Wendy has seen with EZ, as it's processed differently.
I've bought 100% whole wheat rolls here that my body reacts to as badly as white- it's very finely ground, tastes great, but my body seems to see it as white flour....
I've also seen EZ recipes that grind the grains in a flour mill- not sprouted, and would stay away from that.
Meanwhile , after over 2 months on this WOE, I've eaten flour only on while carbing up, and even then, rarely for breakfast- I stay "clean" til lunch.
So, bottom line is, that it's not only the nutritional numbers....
You are much more knowledgable that I am in nutrition , but I've experianced that it's not only the numbers.
I could probably eat a whole loaf of Wonder bread, and stay unsatisfied, paying for it for days, but feel happily satisfied with a loaf that is less processed, even if it has some flour in it, as long as I don't go overboard! My eldest DS used to take loaves of sprouted bread with him to school as he felt lousy after eating the dorm bread- he would overeat it, and then feel sluggish...
Hey, I wonder if that bread is still available- I'm gonna check it out at the HFS- and see what the ratio of sprouted to flour is in there....

If it helps any.... I've been going through super stresses here, and for the first time, have not binged in response, and it makes me much more capable to cope with the stresses. I see Sundays are harder for me after carbing up- I feel so much more vulnerable emotionally.

When I cook something for the family that I know thay will gobble up and not leave any for me... I cook more, and put some aside in a container in the fridge, sometimes even labeling it that it's mine. The kids are used to the fact that there are alot of things they eat that I don't, hence my "right" to have my own stuff, especially when I label it as such....

I just love supportive families. Why can't everyone be like that? If we love each other, isn't it obvious that we naturally want the best for them???

I get so warmed up just running to the gym , up and down the stairs there getting dressed and grabbing a machine that I am warmed up b4 I even start- I usually start full speed after 2-3 minutes...
WOnder why.... according to About.com even pumpkin is allowed on induction... oh well, I have learned not to question...(or have I?)

How lovely, and how familiar that sounds!! I've made it a habit to put each item straight back, as I've made a mess on my bed in the frenzy of trying things on!
