You are absolutely right - I actually read it somewhere that the more you have to lose, the more loss you will see at the beginning. So thank you, Kelly, for the encouragement and kind words I just want my pants to be loose. I have this damn stomach that I want to get rid off more than anything and I know that that would probably be the last thing to go. OK, enough of this whining

I think I did really well today. Breakfast was EZ muffin with scrambled eggs on top and just a pinch of cheese. For my lunch I had about 12 grilled shrimp and 1/2 cup of brown rice and some green beans. Oh, and a small side salad with balsamic vinegar and a bit of olive oil. I have to say that I didn't feel as badly and tired as I did last week after my second starch of the day.

I am getting ready to have dinner. I think it's going to be some chicken strips and salad with all the other stuff on it.

I also did 30 min on my bike and did 20 min of callanetics.

How'bout you?

Congratulations! I ended week 1 with a 4 1/2 lb loss and also starting TOM. I was a little bummed about the small loss, but I have also been low carbing around 20-30 grams for a while now, so I guess my body didn't respond the same way it would have had I been used to eating carbs.

HOLY COW! You all have been busy...

Vladis, not sure if you saw my post, but I did answer my opinion about the hummus and how to count it based on the ingredients of hummus. I hope you saw that.

I had a busy and demanding day. I can't read the whole board so if a question does not get answered (and it looks like the lovely Kelley is on so she'll get to most of them if not all ) please repost it...I'll try to get back on later to address any that I can.

Roasted Broccoli Medley

This is a great recipe. I made this last night and it was great. DH ate some raw and was just as thrilled. I had some leftovers tonight for dinner and it tasted just as good. I will also post this on our menu thread.

This recipe is from The Whole Foods Market Cookbook (love it!!!)

4 cups broccoli florets
2 med red peppers, seeded and thinly sliced
2 med green peppers, seeded and thinly sliced
1 large red onion, thinly sliced
1/8 cup olive oil
1/8 cup tamari
2 tsp dried Italian herbs
1/4 tsp ground pepper
pinch of salt
1 whole garlic, cloves separated and peeled
1 TBSP olive oil
4 plum tomatoes, quartered

Preheat oven to 400F.
Steam broccoli 2 min then chill in a bowl of ice water for another 2 min. Drain and dry on paper towels.

In a large bowl, place broccoli, red & green peppers, onion, olive oil, tamari, Italian herbs, pepper & salt. Toss to combine.

Place veggies in a baking pan and roast for 8-10 min until broccoli is tender yet firm.

In the meantime, toss garlic cloves with oil and roast them separately for 10 min (just on a separate rack) until golden and tender. Add tomato quarters to the broccoli pan and roast for additional 4 minutes until tomatoes begin to soften. Remove the veggies from the oven. Add roasted garlic and toss lightly.

Enjoy!!!

Per 1 cup serving:
90 cal
Fat 5 g
saturated fat - 0.5 g
cholesterol - 0 mg
sodium - 270 mg
carbs - 9 g
protein - 3 g

Linda, I did weight as much as him (well, 4 pounds more). He was dragging me all over Creation And yes, he is my "baby" for now and I love him to pieces

P.S. He is sitting right next to me now looking at me with those huge brown eyes as if he knows that I am professing this L-O-V-E for him

It is AWESOME! It's by Steve Petusevsky and Whole Foods Market Team Members. I love it because you can find not only cool recipes but a wealth of info on various foods, veggies, etc. I also like that every recipe gives you the nutritional info.

OK,so this morning I made my crepes (which I LOVE) except I added the puimpkin like someone (sorry I forgot who) suggested and they turned out great! I added 1/2 t baking powder, some vanilla, and some pumpkin pie spice. Boy were they thick! Good breakfast if you know you will have a long wait until you can eat your lunch. I'm in a pumpkin mood. I found a recipe for pumpkin chile. I might try that tomorrow. It has balck beans in it. Sounds interesting. I'll post the recipe on the other thread if anyone is interested. I'm so happy to be caught up on all the posts - Yea for me LOL!!

I gained 3lbs

Wendy I gained three pounds on week two but I am still down 6 so I am going to keep trying but if the scale dosen't move I will be sliding on a slipery slope lol

Linda, tamari is a traditional Japanese soy sauce made with water, soybeans, and sea salt. You can find it in your grocery store in the dressings section. I buy a low-sodium variety. Regular soy sauce contains wheat but tamari sauce does not.

I did low carb. Usually around 20-30 grams per day. It's just that in the the last few months I haven't lost hardly any. I am anxious to get the rest of the weight off.

Nope, it has everything for every taste. It's just full of wholesome, healthy recipes - love it. Some recipes are more involved and others have just a few ingredients and are very easy. I highly recommend it! I had it buried on my cookbook shelf and then, after I couldn't look at broccoli any longer, I decided to dig it up in the hopes of finding something cool

I had the Power oats for breakfast this morning. They were pretty good, but I could really taste the protein powder. Next time I am going to try the oatmeal without the protein powder and just eat some eggs with it.

I have also been very inspired by all of the people doing the running program. I have never ran in my life, but I always wanted to be able to do it. I went and paid my gym membership today so I can get back into my exercise.

It'll happen, look at Alissa... she had a slow loss up front and look at her now.

THe kids and dh are having mac and cheese and sausage. After last night, I figured I better make something I know they'll eat. I'm not sure yet what I'm having. I bought some stuff to make a greekish salad with grape tomatoes, feta, calmata olives. I have some chicken defrosted in the fridge, so I'm thinking it'll be that. I just need to keep it simple for me and I'll be ok.

Are we both on B days today? I know I switched up late last week, but thought we were back on track. I had some rice with lunch, i had that sluggish feeling all afternoon again. eeek. Thinking I just need to eat cleaner. The EZ bread doesn't cause those weird sluggish feelings, so I'm thinking I need to stick with that for a while. Both potato and rice have made me feel it. Guess it's a good thing to figure out the triggers.

Water is boiling, I'll be back after the kidlets are sleeping. TTFN

I do still go to my scale and jump on and off real quick because it has been voodooed soooooooo you never know it may self destruct while I am on it .

Yes, we are both on B. What kind of rice did you have? I had brown and it didn't do me in. I am going to make some buckwheat for my next baseline lunch. I actually LOVE it.
I just read in my newlyfound book that [COLOR="red"]buckwheat (kasha) is actually the edible fruit seed of a plant related to rhubarb and is gluten-free[/COLOR]!!! Who would've thunk it? I would think Wendy would be all over this one
