I am here, sorry I have been gone... I am doing great though. I weighed today and am down to 170.75.. WOO HOO.. I have been writing every little thing down and keeping my carbs below 20. I even had some wine yesterday and was still down. I have a low carb creme brulee in the oven right now. I have never made it before and am hoping it is great. 3.5 carbs each.. Wheeee... love me some creme brulee. I just got a new cookbook. I think it is called Low Carb simply delicious deserts.

Jo - I am sorry I didn't check in last Saturday or do the chart. I still have to figure out a way to do the chart and have it format correctly without having to type it all in everytime. Do you mind if I wait until Saturday to work on it. I got your number from Saturday, went offline to mess around with the chart got distracted and somehow it became Thursday. Great Job by the way 175 WOO HOO

Rebecca - sorry I missed your last post, I just came straight to this new link. It sounds like you are doing awsome. Keep up the work.

Sunny - Thanks for the link, the motivation, the purdy flowers, everything. You rock. But there is one very important thing you missed. How are you? are you okay? do you feel well? how is work, work stress? your diet? your health. How are ya' man?

Paws - Are you still with us girl? You have just got to get back here and start inductiony stuff again. Make yourself a big batch of sugar free lemonaide, cook up some hot poppers and some grilled shrimp, go outside and sit down under a tree and dream about water skiing this summer. oooh fun.

Ophelia - Are you having fun? I bet you are getting lots of exercise walking around. I hope you are having a good time and getting some good work done too.

Sophie - I bet you are exhausted. I can almost feel it. I am just giving you a shout out. I hope your back is getting much better and your abs are getting good and tight and you aren't working yourself too hard.

Blanche - hey there, I am missing you around here. I know you are super busy too, I imagine just as pooped as Sophie. I hope your grass isn't growing so much that it is keeping your from having fun.

I'm back from my trip! Yeay!

I'm afraid to step on my scale, though, knowing how bad I was! I will wait a few days for the bloat to go down.

Have been tired from my schedule and jetlagged, so my exercise is off, but I think after a good night's sleep, I should have the energy to start my yoga back up. Goodness knows, I need it!

There were nights that I was literally out until 6:00 am! And I'm usually the one getting UP at that time to practice yoga, so you can imagine the toll it took on me! I don't know how people live like that on a daily basis. I'm a morning person.

Anyway, the trip was fantastic and I shouldn't say this, but the splurging was worth it. I did do a LOT of walking around, and managed to do a bit of yoga here and there. Just gotta crack down now and get serious.

So happy to see that everyone is doing so well. You will inspire me to start weighing and measuring and counting and tracking again!

O.

Jo- congrats on your great success. No need to change your goals if what you are doing is working!! Like you, I don't like to set goals if I think I might be disappointed. Instead of a scale goal, I try to make my goals related to successful and healthy eating. You are doing so well.

Bridget- congrats to you too you little loser! the 60's! woo hoo! Sounds like you have a winning formula. Creme brulee? What time should I be over!!?? yummers Which link were you thinking me for? The how much protein should you eat link? So what have your menus been like? Thanks for asking how I am. See below.

Ophelia- glad you are back! So happy the trip was a blast fantastic. What made it so great? Do tell more about it. Sometimes a splurge is worth it.

Rebecca- you are on a roll!! Things are working for you. Rah rah rah!!

Paws- please check in again.

Sophie- if you read here, would love to hear about your Passover dinner

Blanche- woman --I miss you being around!!
_____________
In answer to your questions, I am doing well too. I have been consistent with the rules and have avoided anything with SF sweeteners in it, no gluten, minimal cheese, etc. My menu is mostly chicken, varieties of fish, eggs, cream cheese, ground turkey, avocado, coconut oil, fish oil, some veges, (cauliflower, green beans or broccoli) and sparkling mineral water.
My carb count is uaround 15 carbs. Fats are running about 65-72%.

I did very well at a party last night to say goodbye to my dear godson. My BF geared it around my needs and everyone loved it. Grilled halibut, snapper, and ahi and lots of veges- mushrooms, a spinach dish, green beans and pine nuts and a great green salad with avocado etc. I just avoided the dessert. I did have a few glasses of a wonderful wine they brought back from Australia. Yum!! I just don't think some wine now and then will hurt since it is so full of antioxidants!

I am on my gazelle 4x a week for an hour. I am trying to go for the Managing Leptin plan of sustained exercise. It is the sustained aspect I am working on. Hard to find something that is consistent and ongoing for one hour, but my gazelle seems to work.

I am still not weighing on the scale. BUT I know I have lost some pounds because everything is much looser and I see it in my face, neck and boobs.

I am really happy that we are ALL doing so well and are on track. Keep it down you losers!!

Super Sunny!!! 5 years WOO HOO Can you imagine what life would be like if you hadn't found this wol. Congratulations

Ohhh, the party sounds fantastic. Bittersweet because it was a goodbye party but how nice to have it catered around your needs. I bet that made you feel so loved!

I am so glad to hear you are doing so well on your program!! You go girl Did I hear you say you are doing the gazelle 4 times a week at an hour wop. Oh my I bet you are just feeling fantastic.

About the link oops, I meant thread

My menu is pretty much the same as yours right now. I am keeping it very simple and around 15 carbs. I have also added back my lsd workouts sooooo that is why I'm in the 60's. I am soooo motivation right now. I went out and re-purchased dandr and re-read it. It fired me up. This is the 3rd time I have bought the book but I keep lending it out and not getting it back...

Congrats on your anniversary. Great job!!!

Thanks, my friend.

Yes 4 hours on the Gazelle and before I could hardly walk, huh?

I am thrilled to hear of your motivation right now. It is also good for the thread because I think we can feed off each other's success. Reading the books gives me motivation too. I have read my Leptin book about 8 times now. Every time I read it, I pick up another tip I had forgotten about.

Are you working on a quilt??

That my friend is a loaded question . I have 4 quilts waiting to be quilted and 4 that are waiting to be pieced, 3 more that I am working on, 1 that I am hand appliqueing (this will take a while), 1 waiting for a binding, I just signed up for another class, and I have taken up the art of making rag rugs/placemats to use up my scraps. Now here is the rub. This has been the same situation for about a year. I am just having trouble finding the time... Every day I say to myself, today I am going to make time but well you know the story by now, ha ha...

What about you? are you working on your stained glass?

I think it is awsome that you are able to do that much exercise. Fantastic!!! Isn't it amazing how food can affect how we feel! Amazing... I have been sluggish all year, just plain tired. Okay maybe for a while longer, but since I got real strict with my diet I have been able to do more exercise too. Like a couple of weeks ago we got on our bikes, 8 miles darn near put me out. I mean it took days to recover. 4 days ago we rode 13. Cake, we would have rode more but needed to get home. Today, we dropped our car off at fil's house and walked home. 4.5 miles up hill.. Can you believe that... Honestly, I was giving it to old age, that is what I thought my problem was. Eating right makes a huge difference. I am so happy you got your groove on. I can't imagine doing 1 hour on the gazelle, I think it would kill me. You rock!

Reading has always helped me too. I have so many books, ha ha. Oh the creme brulee is waiting for you ... The torch on splenda didn't work on a test on a plate so we ate it without it and it was still yummy!

8 egg yolks
1/2 cup splenda (next time I will use a little more. dh didn't think it was sweet enough)
2 1/2 cup cream
1 tsp vanilla

Mix the egg yolks and splenda until pasty, add the cream and vanilla mix until well blended.

Fill a pan up about half way with water and then put in your small bowls. You know the ramikin type, I just used the little pyrex bowls you can get. Put the bowls in the pan and fill 3/4 full with mixture. Cook at 300 for 50 to 60 minutes. Give it the jiggle test (no liquidy jiggle means it is done) If it is not done continue to cook at 300, check in 10 minute intervals. Mine made 6 servings. I thought it was just the right amount. It came out to just under 3.5 carbs...

Please tell me you can have cream.

Once again, congratulations my super low carbing friend. I am so glad to hear your clothes are getting loose and you are feeling better. What a great reward for all the hard work you have done over the years.

I just finished reading post secret and then I read your cartoon and it made me sad ...

I was going to post last night but I got distracted listening to the link you put up. That was very interesting. Makes me glad I don't use much aspartime. Thanks for posting it.

I am doing good this weekend, getting ready to go on a bike ride, visit fil, and go to home depot. We are going to buy a little camera on a flexible rod because we have developed a mouse problem. It is under the island in our kitchen. We can't for the life of us figure out how they are getting in there. We have trapped 3. One ran off with a trap and we can smell has died. There are no openings any where outside our house ???? Wish us luck that the camera will give us a clue.

Today I am going to try another recipe from my new cookbook. The last one was so good. Tomorrow we are having all the folks over for a cinco de mayo lunch. I have just put a pork butt in the crock pot with garlic and peppercorns. Tomorrow I will shred it. Then we are going to make taco meat mixture. Dh is going to make a casserole with chicken, green chili, cheese, cream, and low carb tostada shells (I won't eat any of these because I won't know how to count the carbs for my carb counting). We will have low carb taco shells and tortillas. We are also going to have pork rinds with queso dip and I am making guacamole. Ha, everyone who comes here must eat low carb, ha ha .. The dessert will be whatever recipe I decide to make later. I will let you all know.

My weigh in was 169 ...

Bridget, didn't mean to make you sad.

I don't use much aspartame either and am glad of it!! It is quite scary. I do use some Splenda though so hope they don't find such bad stuff with that!

I wish you luck with your 'lil critter. I would have never thought of a camera. I had one once that was trying to get water behind the washing machine. He died back there and Oooooooooo did he stink. I had to get him out of there myself.
I needed to use tongs and had to throw them out of course. I got sick afterward. I hope your DH will take care of it once found.

Ooooooooooo that pork butt sounds great. Yum. I am making Mexican halibut for my celebration. I really want to have hot corn chips, salsa, and guacamole, but I won't.

I am using Fitday conscientiously and I am seeing how quickly you can add up carbs and calories. You really cannot add in many vegetables in a day and stay under 20 carbs. 3 ounces of avocado and 1/4 cup of salsa takes you over 20!

Just finished my hour on the gazelle!

Happy Cinco de Mayo everyone.

Real quick note because I only have 1 second but I just had to say

OMG!!! I just died and went to heaven from a dessert I just made and it was only from licking the spoon. The dessert has to set in the freezer over night but OMG!!!! and only 1.3 carbs each.

That being said this is the second recipe I have made from the book Low Carb Sinfully Delicious Desserts by Victor Kline.. The man is a genious. I highly recommend the book because 2 winners in a row and both quick and easy.... Just saying. Okay gotta run.

Oops forgot to say what I made. Chocolate coconut cruch cups

Wow. All I can say is life has been intense. I haven't even been able to blog since February. I can barely keep up, but so far none of the dishes have hit the ground. Ayeee!

Good to see you all here. I'm so glad all of you are sticking with your programs! It's encouraging!

Passover was awesome. We had 128 people come and some who remained on the waiting list because we were booked. Everything went very well (except my stupid lapel mic that fed back so loud I nearly lost all my teeth). I turned off my lapel mic and had to speak and sing loud enough for the whole room, but everyone said they could hear me so that was good.

I'm still under a load of work that never seems to let up for the organization and we are now in our first fundraising phase and it is a doozy. So I don't know when I'll be able to peek in, but I'll certainly try. I miss you all!

Keep up the GREAT work! Thanks for the shout outs. It means so much to me!

Can you post the recipe? Oh my, but that sounds wonderful. Sure a girl can live on chocolate and coconut. Didn't you hear? Coconut is the WONDER food and chocolate is full of antioxidants. You are making me drool!! How was the cinco celebration?

Sophie, you are here!!! Thanks for reporting in. I was a bit worried about you!! Glad your passover was a success. I couldn't imagine in being any other way! Stay in touch when you get a moment. We are thinking of you.

I want bridget's recipe, too! Yum!

Hi, Sunny. Sorry to leave you in the lurch! Can't seem to get on track and stay there these days. I will watch the clip you posted.

Sophie, good to see you!

I don't have much to report: weight is up, still eating too much food, still exercising...just not enough.

Spent Cinco de Mayo alone! None of my friends could come over last night. Waah. Unfortunately, I consoled myself with calories. Bad!

Feeling a bit down today for no reason. Probably from last night's dinner.

More later,

O.

I'm really trying to get back on track, but gone are the days when the rest of my family was on board. Oy. Now I have things that have crept back into the fridge/pantry that are not low carb and I'm struggling to ignore them.

I haven't bloated up to whale status, but I need to stay strong so that I don't. Anyway, here I am just letting it all hang out. I had eggs and ham this morning and I'm trying to get my water in so it helps me feel full.

Here we go...again.

By the way, HAPPY MOTHERS DAY to all the mothers out there. This includes all the awesome aunts who may not have children of their own, but are great with the nieces and nephews!

Mothers or not. You all ROCK!
