At least the distances are a lot less than in America . Which places have you enjoyed, and what's left for the rest of the month?

Sounds fun . It's pretty brave starting LC while you're travelling around and presumably eating out a lot! How's that going?

My husband's just given me a new book: Food, the History of Taste . Apparently it was supposed to have been a Christmas present, but they messed up the order, and it only arrived today .

Hi all

it's fri nite here now... 10.15 pm. today's lunch n dinner was just mixture of stirfried eggs, meat n veg... how r u guys doing?

do u all make stuff like oopsies, cauliflower pizza bases, lagsana, fauxtatoes, flaxseed muffins? if yes, how do u rate them? like from favourite to least favourite? hehe

i made all of the above and also cream cheese muffins on and off, if i'm not feeling lazy.. favourite will be lagsana using button mushrooms and mashed cauliflower. i like the way the mozarella cheese gets stringy when u lift a spoonful up....that looks sooooooo tantalizing!!!

made the flaxseed muffin once and was totally disgusted by the smell! i used the regular flaxseed instead of the golden one and it was like..... eeks!!!! the entire kitchen was filled with that smell!!!!!

haha..... do u gals cook before u adopted this WOE? or learnt from scratch?

Amber

Morning gals:

Ailuros, I hope you enjoy your new book, only five months late.

Tooter, you're back!!!

Things are still going relatively smoothly with little Pear, we're on edge waiting for the next big conflict with her. We made her clean her room yesterday, she wasnt too happy about that. She's been trying to pull her grades out of the gutter. So far, so good, but it may be a matter of too little, too late.

Can you post your recipe for the cauliflower lasagne? Sounds good! It is cleo's recipe? I dont do much cooking. Hubby does most of it, and I usually have a nice piece of meat for dinner at night. I wish I had more time to cook a more complex meal.

My laptop has died - so if I'm not around for a while, don't worry, it's just my computer that's sick, not me .

hi gals

yah the cauliflower lagsana is something like cleo's...but i just estimated the amt of cauliflower.... not exact like the recipe... haha.

i boiled the cauliflower with some salt in the water, then take it out after boiling it till quite soft... then i mash it further with spoon or whatever.

my recipe is really not following rules... in fact i just mix the cauliflower with 2 tablespoon of mayonnaise, add pepper. i layer half of this mixture in a pan with parchment paper beneath. then i add a slice of sandwich cheese..tearing them and covering the caluliflower. after that i add the rest of the cauliflower and sprinkle mozarella cheese on top..set convection in oven and bake about 10 mins.... so basically there is no lagsana sauce to speak of, no other ingredient i've added...but somehow it tastes good still!!! u cal add bacon or anything u like. hehe... i'm just lazy...

Please forgive me, for not being around the last few days. I have been busy in another thread.

Pear, One of the New "Poster girls" for Kimkins was in the fascination thread.

To make a long story short. She saw the "truth" and left in a blaze of glory.

I just wanted to make sure she had some "support". One of her friends from K.K. is in the thread now too.

As you can imagine, it's an emotional time for both of them.

I'll be back soon. I only had "so much" time, and I was spending it there.

Most likely I will be back serial posting on Monday.

Miss you all and can't wait to get to know the Newbies.

Ailuros, I hope your computer gets "well" soon.

Tooter, I saw you were busy over there. I did a bit of reading, but not enough to follow everything that was going on - and I think the blaze of glory happened after my laptop died, so I missed that.

I have a desktop, which is what I'm using now, but it lives up at the top of the house, and the kitchen is in the basement, so I'm a lot less likely to keep checking in all day if I have to keep running up and down stairs to do it .

Amber, I don't cook oopsied, faux-tatoes and the rest very often. They never actually taste like what they're imitating, and I'd rather have something different that's just being itself, rather than something pretending to be what it isn't. It's just a personal philosophy that I mainly stick to eating things that people who aren't following dietary restrictions would still eat just because they taste good. After that, it probably won't come as a surprise that I've always enjoyed cooking, so although the repetoire changed a bit when we started to eat LC, I didn't have to learn from scratch.

Hello...to the newbies here!!!! It's nice to see you here!!!!

Well, my grades were posted for the semester.

History...100%
Health....92%
Art........90%

Normally, this would be no great feat, but with everything that happened this semester, I must confess...I am a little proud that I was able to get A's in all three classes.

I have one more week of heck. I have to go do my clinicals for the CNA class Mon-Wed from 8am-3:30pm, and then...go directly to class until 9 pm. After that, I have to work. So, I'm not expecting to get much sleep. Then, on Thursday, I go and take the state test, and my name should be on the registry. Then, I can get my application to the LPN Program completed. It seems that sometimes, unless I just remain the same and not try to strive for something better...life can be a bit over-whelming. I do not understand why everything must be a pain in the butt?

Well, I'm off to work now. I just wanted to stop in, and say hello to everyone!!!!

Nice pictures, Amber. The last few pictures, are they really cheese crisps?

My weekend menu:
Eggs with leftover sloppy joes for brunch and coffee with half and half
Steak from the barbeque
Ice cream bar for dessert.

We saw Snoqualmie falls yesterday, the river is almost at flood stage from the quick snow melt.

This is what it normally looks like:

Pear, that looks incredible!

Amber, I don't routinely post my menus here, because I'm at maintenance, and eating a higher carb level than people who are in the weight loss phase. I don't mind doing the occasional one for people who want to know what my maintenance level looks like, but I don't think it's helpful for people to keep seeing lists of things they are trying to stay away from at the moment.

Tooter, we were promised serial posts . Here's some coffee to help you get started .

Hubby and I didn't go to the lake this weekend. It was rainy, so we stayed home.

I babysat Irelyn, Saturday night. All the kids were over for dinner on both Saturday and Sunday. It was a nice weekend with the family.

My 2 oldest boys made dinner on Sunday. I could get used to that!

Here's some pictures of my Sunshine!

Kissing herself in the Mirror.

Breakfast this morning was AWESOME!! Scrambled eggs with Cream Cheese, Chives and Nova (Thin sliced, smoked salmon).

I normally don't like breakfast this early (more of a brunch kinda girl) but it sure did "hit the spot".
