ok so I subbed heavy cream for
coconut milk! oh my! very tasty! i Drank it half hour ago and im still very full, from now on if I use the coconut milk in it, I will have to use 2 eggs instead of 3. and there is 2g's of carbs per half cup of coconut milk (which Id say im only having 1/4th a cup anyway) so Im actually saving some carbs by using this, but the calories are about the same as heavy cream! the coconut milk has a very thick rich creamy texture. It made my eggcream far more rich and creeamy. I got mine at an asian market from around the corner from my house. It was 79cents a can!

Ohhh...the coconut milk sounds wonderful. Darn it! I just got back from the store! Oh well, I'll have to try that next time. :-)
For the next challenge---we'll I think your title sounds great. Definitely, let's keep it egg cream related, because I think they are totally responsible for my good mood and energy levels of late (also inches lost of course!). Also, I think the exercise aspect is good. Any other thoughts??? Glad to see some new people checking in. This will be great for the next challenge! |

I am all for this. I have no problem weighing and measuring in.

wow tomorrow is the last day! holy poop it went fast!
we all had our ups and downs, and I feel as though i made some great friends on this thread! I really look foward to reading everyones posts every day... and I can't wait to do it again!!!! I just wanted to let everyone know.. the coconut milk gets semi hard in the fridge.. like frozen coolwhip.. it mixes great in the blender and makes the eggcream VERY THICK! and VERY FILLING.. im happy to say while using it, im not able to cut my eggcream down from 3 eggs to 2 eggs! 3 eggs with the coconut milk made me so full I was sick to my stomach full for like 6hrs |

Yes, it did go by fast. I really like this challenge. I've tried to jump in on others before and felt like if it had started prior to my joining that I couldn't quite fit in. But, here, I felt connected right away, so I appreciate that! :-)
I'm looking forward to our next Challenge! Thanks for coconut milk ideas. I'm definitely getting some during my next grocery store trip. I tried to make an egg cream with Chocolate Soy Slender today. 1 net carb per serving. Wasn't too great. I've never been a big soy fan, but I thought it might be nice to have something chocolatey. Didn't really do it for me, though. I'm still loving my coffee egg cream and the occasional lemon or diet root beer. I'm thinking once I've lost a little more, I might try to make a peanut butter one, because PB is like my favorite thing on EARTH! Hope everyone has a nice holiday weekend.

I am now ordering an XL black Decaf at the drive-thru when i get my coffee..
then I freeze it in cube trays when I get home, this way I can have an EC after 2pm and not be up all night! I made one for my hungover friend yesterday, she is addicted to Tim Horton's Ice Capp's (at a kabillion carbs) and she said these were JUST AS GOOD ![]() And she felt great within an hour of drinking it. |
