Angelica---welcome! I have had the Joseph's pitas and they are very good! I've seen the lavish bread but I wasn't quite sure what to do with them...if I remember right they are huge. What do you do with them? Maybe for pizza or something? I also like the Flat Out wraps that they have at Wal-Mart, the italian one is really good.
Lei--how cool about the pigeons--that sounds like a fun hobby! I can't decide what I think about James---he annoyed me at first with all his honesty crap, I mean come on--this is a game of deception! I like him more now that he is "playing the game." Thumper--how old is your daughter? Does she do some kind of competitions with horses? I absolutely love horses--I had a pony when I was little and I pretty much lived and dreamed horses for years! Good luck on your job hunt! Deb--hmmm, that must be why I like the butter lettuce. I never thought about it as sweet, but that makes sense! Lisa--ahhh, now I know who Linda is. Linda--come join us!! We aren't a scary bunch--well, not usually! Seriously, the more the merrier! Pumpkin Muffin recipe for all those interested: 8 ounces cream cheese (I've used light or reg--both work great) 1 cup butter softened (I've used reg or smart blend--both work great) 4 eggs 1/2 cup Maple Sugarfree syrup 1 cup canned pumpkin 1 teaspoon vanilla extract 1 cup sweetener (I don't know if splenda would work very well here because it doesn't add any bulk...I use diabetesweet and erythritol) 2 teaspoons baking powder 1/4 teaspoon salt 2 teaspoons cinnamon (I actually use a heaping tablespoon--I love cinnamon!) 1 teaspoon pumpkin pie spice (I usually double this also) 3 cups low carb flour (I think the original recipe that I "tweaked" this from called for almond flour, which worked OK--but I like to mix almond flour and Carbquick for most muffin/cake recipes-I think it has a much better texture. Last time I subbed out about 1/2 cup of the almond flour and used flax meal and I couldn't tell any difference). Makes 24 Muffins (the first time I made these I made 1/2 recipe. I discovered they freeze great so now I make the whole thing and freeze a bunch for later) Preheat the oven to 325F. Spray muffin pan. Combine wet ingredients together in a blender until smooth. Mix dry ingredients together and then fold in wet ingredients. Pour into muffin pan. Bake for about 25-30 minutes (I never time stuff) or until toothpick inserted in center comes out clean. Total Net Carbs: 60 Per Serving: 2.5 I didn't calculate the carbs, that was with the original recipe. Since none of my tweaks should have added much in the way of carbs it should be pretty close. I think the original also called for 1 cup of pecans or walnuts--I just am not too into either of those so I don't add them. These are very similar to the pumpkin pound cake you may have seen on this site or Linda Sue's but way better--I think the cream cheese makes all the difference! Sometimes I top with whipped cream cheese, but not usually, it's just not needed. On the granola bar recipe---I will try my new "tweak" this weekend and then post it. Have a great night everyone! |

Okay Im on and off real quick, I have lots of things to do today. Yesterday DH and I had grilled kabobs that we made, they were soooooo good. However, I had way too much beef yesterday and the potassium isnt enough Beef is not something I was used to having daily, and now I have it at least once a day. I think imma cut back on it, because i can't drop my friends off at the pool today Anyhow, I also made some leg of lamb last night in the slow cooker and its ready for lunch, YUUUUUUUUM, its so buttery soft :drool: b: cappuccino (2 egg yolks,1 whole egg, CO, cream) Brunch: left over kabobs and probably some asparagus S: Whatever I can find D: Lamb with greek salad on the side ![]()

Hey ladies...I'm crawling in to confess---I have had a not good day eating wise. I'll spare you the gory details but let's say that I had the already big breakfast that I planned, which was followed by about 1500+ more calories--all carbs and fat.... What is wrong with me you might ask? Well, I'm still trying to figure that out. I have a ton of excuses going through my head but I'm not even buying them! I think it's a culmination of a lot of stuff that has been building and I have been ignoring. This morning I was just in kind of a pity pot mode about a lot of silly little things and decided to have one small piece of something not good for me. I do this on occasion--maybe once every month or two---with no problem---but I usually do it when I just want to taste something, not when I'm in a mood. Today, it's like something broke lose and I continued to eat and eat. I don't think I've ever done that before without intending to---in other words I usually know when it's coming on and then choose to do it or not, but at least I'm aware that I'm getting ready to make that choice. Today--it's like it just happened--although I know better than that. Anyway, I'm still sorting it out which isn't keeping me very focused in meetings. I did a presentation to about 60 people this morning and I had a hard time not thinking about how much my stomach felt like it was bulging out....ugg---I don't want to feel like that. Well, off to get ready for the afternoon round of meetings but wanted to get in here and get some of this off my chest. Thanks for listening!

Oh yeah whip cream, it's low carb is it legal. I've seen it in menu's and didn't know if it's the reg kind or some home made or special kind. I thought it was okay as long as I stayed in my # carbs yesterday but wanted to double check since it does say it has sugar.

No Electricity from 9am to 6pm eek........
Can you believe that.....the electricity company said they were fixing a pole and it would take 2hrs...yea right.

Ok maybe the 1/2 hamburger bun might be the problem with you NOT being in ketosis .....have you ever made the oopsies....it is a OK substitute for bread...i don't love them but they do the trick if I am feeling for a burger or something I can eat with my hands.....................as for the keto sticks........I used to use them in my early atkins days....when i was still doubtful that Atkins worked........but now I don't use them anymore cause I know I am losing weight........it is best to use them first thing in the morning (first urine) it is more accurateQuote:

It mignight and I can't sleep...
Ok i just did a "Teresa special" and cooked up a storm.....since one of the things that I also got to do today (becasue of no electricity) was a long and leisurely grocery shopping
![]() so I made : cheese paste ( cheddar cheese, pimento pepper mayo, mustard & onions blended in the food processor) curried cumin pumpkin in coconut milk triple cheese caulitaters OMG....out of this world ![]() smoked herring with red cabbage and pimento pepper & onions yogurt/yocheese so I have enough sides for the week and i just need to add whatever meat tickles my fancy AND I need to make some more almond crackers So I was invited to a small get together for a friend of mine who lives in Canada but is back home visiting in T&T...........my friends friend, called me and said it was 10 ladies invited and if I could walk with dessert......particularly brownies.....since MY friend raved about it.............Why Oh Why is it that the LCber always has to do the HC stuff ...................before I was told what to bring I suggested that i could bring devilled eggs.....but was told that all the savory stuff was taken care of and could I please walk with brownies or a cake.........I asked what kind of savory stuff would ther be and the first thing i was told was chicken wings.....so I felt happy that there would be ONE thing I know I can eat......I even explaind to my friends, friend that i was on a diet so I just wanted to make sure there was something I could eat...so you see peeps, I took your advice and I am getting better at this....not perfect, but better ...............so anyways i am planning on eating before I go so that I will not be too tempted AND I plan on walking with my own diet soda because I am sure there there will be none there for me ...this will all take place on Sunday at 5pmOk goodnight peeps...sleeptight ![]() Last edited by lcq : 04-03-2008 at 09:35 PM. |
