Well....guys....it seems that when Ms. Toots-A-Lot leaves...the whole crowd shuts-up. Sooooo.....I'm going to go have my second breakfast, and then....I'll see if anyone is 'talking' yet!!!!
So far today: vitamins hard boiled egg-dipped in mayo 1 slice of bacon VERY small glob of left over peirogi filling Now: 2 scrammbled eggs with a hotdog diced up in it. |

Greetings All,
Sorry, I have been busier than a one armed paper hanger and just have time to post a note. I haven't even read today but twice yesterday, I started to post but by the time I read I didn't have time so will do it first. So bear in mind that I way behind. About nine of us from work met yesterday for lunch. Linda's friends. We spent several hours together as the retirees stayed and the employees came and went on their lunch hour. Her service will be tomorrow at noon. Lots of phone calls and that sort of thing plus my own family's needs (Amanda's play) have me a bit overwhelmed. When I need comic relief, I know just where to come, that is if I can work it in... Y'all are amazing. Thanks for the humor, it has helped me tremendously.Gotta run my Sr. friend for his morning cuppa and will try to get back later. Jean |

Here are a couple of more recipes posted by cleo...they look good!!!!
Mozzarella Cheese Sticks pork rinds Mrs Dash Seasoning Blend (I use Garlic and Herb) string cheese 1 egg hot oil in a skillet (I use canola) Preheat the skillet with oil in it. While the oil is heating, crush the pork rinds in a gallon ziplock bag with a rolling pin until the pieces are bread-crumb-fine. Add Mrs Dash. Mix the egg in a bowl. This is going to be the egg bath. Take the string cheese, completely cover it with egg in the egg bowl. Transfer the cheese to the ziplock bag. The crumbs will not want to stick to the cheese, and because you need the cheese to be completely covered, you are going to want to firmly "mold" the rind crumbs around the cheese. Cook in preheated oil until the coating is lightly browned. Move to a plate covered with a paper towel to drain. Serve warm with ranch dressing or marinara sauce ![]() Chix' Boneless Buffy Wings canola oil chicken breast, cut into smaller pieces pork rinds Mrs Dash (garlic and herb) egg sauces (listed below) ranch dressing (optional) Heat a skillet with canola oil. While the skillet is preheating: mix an egg in a bowl. Set aside. In a ziplock bag, crush pork rinds to very fine texture using a rolling pin. Add Mrs Dash to the bag, and mix well. On a cutting board, slice breasts in half, the long way, and then cut across to make 8-10 bite-sized pieces (your number of pieces will vary according to the size of the breast). Dip the bits of breast in the egg bath and then plop into the bag of rind/spice mix. Coat by shaking the bag. Once the pan and oil are heated, add the coated pieces to the oil. Cook on both sides, until the chicken is lightly-to-medium brown (5-9 minutes, depending on the oil temperature and size of the chicken pieces). Remove chicken pieces to a plate lined with a paper towel to absorb excess oil. Place drained chicken tenders on a plate and coat with sauces of your choice. For plain Buffy: While we know there's nothing ever plain about Buffy, these served up without any sauce come in very well within induction levels, at approximately 0 carbs. I mean, chicken, pork rinds, oil and a little seasoning? Bwah! Take that, induction! I can eat these and be absolutely safe! For zesty Buffy: I used Bulls-Eye original Barbecue Sauce. This is NOT low-carb, coming in at 13 carbs per 2 Tbsp. If you can find something "cheaper" in carbs that has the same delicious twang, do it! (If you have a low-carb recommendation, please let me know). For spicy Buffy: I used Texas Pete Buffalo Style Chicken Wing Barbecue Sauce. It'll rip your lips right off of your face, but it's darned good stuff. And at only 3 carbs per 2 Tbsp, it's a might bit "cheaper" than the Bulls-Eye. ![]() ![]() ![]() These sound really good.....hmmm...super bowl food? Thought that you all would like a couple of ideas that I found. ![]() |
