Have you ever noticed that you think you are hungry and it's time to eat but by the time you get something fixed and sit down to eat, it really isn't all that? I'm so used to craving food that I really savor it, but not now.

It's rare when I get really excited about a meal like I did with the meatloaf. My whole day used to be built around food and this is so new to me. That is what makes low carb so much easier than the low cal.

There IS a difference between the cheap bikes and the good bikes. My girls always seemed to break their bikes, and mine has always been perfect.
I love summers also, it's so much easier to get the healthy exercise we need. I can't wait!

Now.....I've been downstairs...with the treble (spelling?) light...trying to re-organize, and re-pack.

I guess that some people are just never happy. They complain when I don't do enough...then....they complain when I do anything?

Like I said at the beginning of this new year...I am done trying to change the things that I can not change.

I CAN NOT WAIT TO GET OUT OF HERE!!!!! They are driving me nuts!!!! But....atleast the house is clean.

OOOOpppps...I guess that my youngest ate some chips....Now I'm getting yelled at about that.

BETTER GO!!!!!

Atleast.....I was somewhat close on my interpretation of the "feeling" of the picture----dusk...instead of dawn. None the less....it's just beautiful. And by the way....English Gardens are just breath-taking to me. I used to try and copy them here in the midwest with all of the perenial gardens that I used to have. (One of my hobbies---hopefully, not lost forever )

Remember the blondie recipe that you and I made? Here it is

Rebecca's Flourless Blonde Brownies:


1 C (2 sticks) butter, melted
1 C Splenda
1 T Vanilla
2 C Almond Meal
1 T cinnamon
4 Eggs, beaten

Melt butter in large microwaveable bowl
Add Splenda and vanilla to melted butter, cool slightly
Add almond meal, cinnamon and eggs, mix thoroughly
Pour into buttered 8" square glass baking pan
Bake @ 325 for 40 minutes
Once thoroughly cooled, refrigerate
Cut into 16 squares and serve.

For 1 of 16 squares: 216 cals/ 19.8 fat/ 4.1 carb/ (1.5 fiber)/ 5.3 protein

Ok, well, I got this "Idea" from thinking about that.

I made banana bread from this:

1 Cup melted butter
1 splenda quick pack (equals one cup of splenda but without the fillers and extra carbs)
1 box Sugar Free instant banana pudding
2 Cups of Almond Flour
1 teaspoon of Banana extract
4 eggs

----------------------

I baked it and everything just the same as the blondies. OMG, BANANA BREAD!!!

This is a great base for any snack cake we would want to make. Heck, just add the instant sugar free pudding and a little more "extract" if you want to.

The Reason I used the "Splenda Quick Pack" (Which can be found in the Koolaid section, 5 packets to a box) It was made to sweeten Koolaid, teas...etc... It's a small packet that doesn't have all the fillers and actually has less carbs then the bulk splenda.

Do you realize how many different snack cakes we could make?

Next, I will make a Pistachio Snack cake!!



I hadn't order anything from Netriction yet, and I kept thinking "How" can I do this? My son (The one who is out of the Marines) looked at me and said "You're a Marine Mom, Improvise, adapt, overcome, It's what you DO"!!


Well, I Did and IT WORKED!
Tooter...I am so excited about this!!!!!

Chocolate snack cake with whip cream......that would be yummy too!!!!

How about a layer of banana, and a layer of chocolate...separated with whip cream?

Or....hey...you know how we used to make the marble cakes? Do that with the chocolate and banana...maybe, add some nuts!!!!

Like a broken record...I can't wait to have my own place to try all of the good ideas on here!!!!

One of the first things that I will buy when my money comes...is a magic bullet, and to replace my food processor---which I sold....thought that I would be here for 4 years. It was a $250 Quissinart (spelling?) too!!!

No....I can't...and it's mostly my Dad!!!!

One thing that I can say though...I used to always get up and get all of my "chores" done by noon. I haven't felt good enough to accomplish that in years. Seeing that I could still do it, and noticing how much better I feel....was worth (I guess!!).

Me too Jean!!!

My whole day was a carb/nap cycling type of diet.

Food was an integrated part of my day.

It's wierd not having that craving/hungry feeling every minute of every day anymore.

Yesterday...I was naughty (I'm not talking romance novels niether ). I got so busy...I forgot to eat until 2 pm. I had 2 romaine/chicken salad roll-ups. Later I had some (alot) of ham with cream cheese.

Today.....I will be much better....I have too....or I will probably stall again.
This is all so different.....having to remind myself to eat!!!!

Hey, the banana bread, snack cake I made? I had a piece of it for breakfast. The flavor is great. VERY happy with it. I just need to tweak it a little more...make it fluffier. I'm thinking baking powder and sub a little Vital wheat gluten for some of the Almond flour.

Jean? Pear? Lost and Found? Hippiegirl? What do you think?

I'll experiment with that in my next cake. Just need to "bounce" off you guys.

How much baking powder and how much vital Wheat gluten to sub.

I wish that I could give some good ideas here.

I don't know anything about this way of cooking yet...you know...I haven't been given the opportunity to cook for my woe yet. I have to adjust my plate to their dinner. Looking forward to the changes. Maybe, then, I might be able to contribute to the good ideas here!!!

Well....girls....A little more time in the basement today....and I will be ready to go!!!!

I can't tell you how good it feels. I repacked and re-arranged yesterday...just a little more to do today. I'm down to bare essentials...everything else is packed and ready to go again.

Then, when the phone call comes...I'm already ready to go!!!!

Hey....it will be kinda' like a birthday...I'll have my life back again...along with my sanity!!!!

I just wandered off for a few minute, but I'm still around . I'm so happy for you that you've made the decision to move. Even if it's tough working it all out, at least you will be able to do it your own way. I hope you don't have to wait too long for that call!
