Whoosh Fairy Visited!

Yippee, the whoosh fairy visited last night. I went from 198.8 to 197.0 this week! Don't ask me why I thought it was Friday but I don't think I was awake yet.

I woke up real fast and went down stairs to use the digital to confirm that the analog scale was correct. This WOE of eating is still a mystery to me but I am soooo happy!

We will do this together, Click, Pear and Hippiegirl, and weather the little bumps in the road because we will always get beyond them. Listen to the pearls of wisdom just roll of my tongue, err, ah, fingers...

I love Onderland!

Jean, if I have something sweetened, I normally stick with sugar or honey, then I count the carbs so it means I only have a very small portion, and I generally don't make it very sweet, and don't do it very often. If I want something sweet after my meal I more often have something like a square of dark (70 or 85%) chocolate, with a few walnuts and a couple of raisins if I want to dress it up. There are some almond biscuits I make that are just tiny thin wafers. They're quite sweet and made with sugar, but they're so thin that they only work out about 2-3 carbs each, and go really nicely with an espresso.

When I first started LC I used to chop up a square of dark chocolate and mix it up with almond butter for a little treat, or a snack. As time went by, I think I became better at putting together meals that were a bit more filling, so I found less need for little things to snack on in between. Now I normally have three meals, and only snack if one of the meals is going to be delayed.

Ailuros, oh, what a week we have had. I was so excited that I posted my weight loss before even reading the posts. You really have this WOE eating down and it is so encouraging to read your posts.

Do you think you were retaining water after your trip and it just went whoosh?

You are eating more of a purist way if you just use natural sweeteners. I admire that. We never know what these chemicals will do in the long run.

I am so excited and happy that we can celebrate together this morning. I haven't even read the rest of the posts yet so better get busy.

Jean, yes, I think I was just retaining water from too many carbs while I was away. But it's still thrilling to see the numbers go down, isn't it? Even when you know it's just water, it's still weight you're better off without, as well as being an indication that your body is switching over from carbs to fat as fuel - which is a good start for burning off the rest of the pounds .

Which just goes to prove that this WOE is so much healthier. We know it, feel it and can take heart by it.

I'm off to take my car in so will be back to finish posting and answering some of Click's questions to me.

Thank you, Woe!

Hey, I found out what was wrong with my computer...why it was slow and I couldn't use the Smilies or the "Drop Downs".

My one son bought a re-router? A wireless one so he could use it with his Play Station 3...and so that hubby could use his laptop.

Anyways, it seemed like it was more trouble then what it was worth. Disconnecting etc.

Last night he unplugged it and now just my computer is hooked up to the connnection and well...everything is working right now.

Dang Kids!

I was thinking that exact same thing. Things just work better with low carbs. This is reinforcement! Thanks for sharing with us.

Hey guys...

Tooter, glad you solved your problem.

My weight is staying the same right now, but my body fat percentage is going down. I have one of those fancy Tanita scales. Does this mean I'm gonna whoosh soon? My percentage has gone down 6 points since this whole weight gain thing started. I'm still at 216.

Jean...is this the fudge that you made?

Low carb fudge

16 oz. cream cheese, softened
2 oz unsweetened chocolate, melted and cooled
1/2 C Splenda sugar substitute
1 teaspoon vanilla
1/2 C chopped pecans or walnuts (optional)

Line an 8-inch square baking pan with foil, waxed paper or parchment paper.
In a small mixing bowl, beat the cream cheese, melted and cooled chocolate, sweetener and vanilla until smooth. Stir in nuts (if using) and pour into pan. Cover and refrigerate overnight. Cut into squares. Serve chilled.

It's too good
Click, I did make this before but didn't care for it and threw most of it out. I don't care for dark, bitter chocolate and this is just what this was. It looked like milk chocolate but tasted very bitter.

Perhaps I didn't use enough sweetener but it was sweet enough for me as I don't like anything real sweet but not bitter either. It may be a real balance. The sweetener that I used was a combination of Stevia and liquid sweet-n-low. I have used S-N-L for so many years that it is my preferred sweetener. It works great in the Blondies and CO bark.

The peanut butter fudge that I used the erythritol in is a different recipe and has fantastic fudge texture and taste if one can get the sweetener balance right.

I HTH!

Never "heard" anything about it before, but not too many people have that type of scales.

Hey, it sounds good to me!

Jean, I make fudge out of the Peanut butter recipe. Instead of using the peanut butter I add Cocoa Powder. You can tell if you have enough when you mix it up (I eyeball it) and I still use the Vanilla whey protein powder.

It comes cout AWESOME!! I also put some chopped walnuts in it. Seriously...I think it's the Vanilla whey protein that helps take away the bitterness. Give it a shot and let me know what you think.

Pear, when you say 'percentage points' are you talking about body fat? I have a scale that measures BF and Water content and the BF percentage changes a few percentages at random and I often think it may be the amount of fat I ingested that it is measuring.

Having said that, if it has changed 6 points, something is working big time. How encouraging to see that you are losing FAT! One more example of the scales not always being the best source of measurement. Click, are you listening?

Congratulations, Pear!

I am using the BF Percentage. I've noticed that it jumps up and down alot due to how much water I've been drinking, but the range is not usually this low, I've traditionally been in the 46 - 48 percent range. It's been declining, and this morning it was 42 percent. I guess time will tell if it has a relation or not.

I just ordered a 1oz bottle of sweetzfree to try it out. If the 1oz bottle is equivalent to 24 cups of sugar, buying the equivalent of Splenda would cost me more than $18. I figured it was worth a shot.

Tooter, I think you have hit the nail on the head, as usual. Anything I make low carb with the baking chocolate is too bitter for me.

I noticed that when I use cocoa it just works and I use less! I will have to re-try this recipe, but to be honest, I think I am comparing everything to the bark for the flavor that I like and it is the best. Yep, prolly because of the cocoa.

I hope your baby is doing OK. There's nothing worse than our pets or children that can't tell us what is wrong and the concern for their health. I wish him well.

My BF has gone from 43 to 40 and has been measuring fairly consistantly so I think I am losing fat also.

You go girl! Please let us know how you like sweetzfree.
