Last night, I had the cabbage and hamburger mixture. Then, I had some ACV in water. I was just waiting for some kind of explosion.

I'm just say'n....cabbage mixed with ACV and stomach acid !!! I know had I thrown some carbs in there (my old woe) there would have been some LOUD explosions!!!!

Good morning, L&F . I'd love it if we could all lose a pound a day until we reached our goals, but it doesn't usually work like that . I think that what I'm seeing is the loss of some water that I held on to because I was eating lots more carby stuff than usual while I was away. I don't think I'm losing fat that fast! Of course, I'm pleased that what I gained was mostly water, because it's much easier to get rid of.

I'll keep my fingers crossed for your weigh-in tomorrow.

Thanks Ailuros!!!! (If you know how to cross your toes...cross them too will ya'? )

It's kinda' funny...to me...how bloated I must have been, and how sick I must have felt while eating almost nothing, but carbs. I had felt that way for so long that the bloating and sick feeling was normal, and I didn't even notice it as "wrong". Now, at Christmas time, when I ate a Special K bar...I felt sick??? Just from one bar....??!! Do you think that we always felt this way and just notice it now, or do you think that the carbs effect us differently once we change our woe?

What are people on other threads losing (other challenges) when they are dropping pounds so fast? Muscle? Or do you think that it is possible that they actually are losing fat?

I don't read any other challenge threads, so I don't know what people are reporting. My own weight loss was about 7 pounds the first month, 5 the next, then about 2 pounds a month until I reached my goal. I'm 5' 2" and started out with about 30 pounds to lose. Progress is faster for people who are bigger, for those who have more to lose, for younger people, and for men, on average. My husband seems to lose a couple of pounds a week if he stays on plan - but he's 6' 3" and twice my weight, so a pound or two isn't much to him.

I forgot to tell all of you something.....

While in Minnesota, I just had to run into my local Wal-Mart to see if they had everything that everyone mentions getting at Wal-Mart.

My first stop was the vitamin aisle. They carry the CO for $9 something. The Wal-Mart here doesn't even have it. So, I have to pay nearly $13 for it in another store.

Then, I went to the chip aisle. Of course, they have pork cracklins. I can only find them here in the small .99 "Jays" brand bag. I can imagine using these for a variety of things. Crushed up for breadings, and substituting them, also, for crackers in meatloaf, meatballs, fried chicken, etc...!!!

I'm sure that since they carry these things, I'll find all of the other things that Tooter has mentioned getting at Wal-Mart that I can't find in this Wal-Mart. (Another good reason to move!!! I guess that I am just trying to find more reasons!!! )

Oh my...a couple pounds a month? It will take me forever!!!! I'm not young!!! I do have alot to loose though. So, maybe the 2 pounds/month will wait until I'm closer to goal then.

Everybody's experience is different - there's no reason to expect yours will be the same as mine. The 2 lbs a month was when I was only about 3 pounds above the top of the "healthy" range for my body. And I think you're young .

I will post some recipes (chocolate things) that I found on another thread:

Coconut Cashew Chocolate Truffles

net carbs 1.5


3/4 cup heavy cream
2 tbsp granular sugar substitute (i used splenda mocha)
2 tbsp (1/4 stick) unsalted butter
5 atkins endulge chocolate candy bars, finely chopped
3 ounces unsweetened chocolate, finely chopped
3/4 tsp vanilla extract
1 cup unsweetened dried coconut, divided
1/2 cup very finely chopped unsalted cashews

combine heavy cream, sugar sub, and butter in a saucepan, simmer. Place chocolate bars and chopped chocolate in med. bowl. Pour hot cream mixture over chocolate and let stand 5 mins.
Stir chocolate gently until completely melted. Stir in extract ad 1/2 cup of coconut. Refrigerate til firm. (about 1 hr and 45 mins, stirring occassionally).
Will be easier to form if not too firm.
Toast remaining coconut in a dry skillet over med. heat shaking often til lightly browned. Transfer to bowl and cool.
Roll the chocolate mixture in to balls the size of large marbles. Roll half the balls in cashews and the other half in coconut. Place in airtight container. Refrigerate up to a week.

(I got more out of this recipe than the recipe calls for...they said 32 truffles....i made about 50. I also didn't add the coconut in the truffle just rolled them in it and I didn't have any cashews. For the Endulge bars, because i couldn't find any I used dark chocolate chocolate chips.)

This was worth the effort!!!!

Thanks for the compliment, buuuuut.....40 something is no longer a spring chicken...if you get my drift....and I'm 40 something!!!

Here's another one that I found:

Chocolate Macaroons

net carbs: 2 grams


1 1/2 cups unsweetened shredded coconut
1/4 cup unsweetened cocoa powder
3 tbsp heavy cream
1/4 tsp vanilla extract
1/4 tsp coconut extract
2 large egg whites, room temp
1/4 tsp cream of tartar
2/3 cup granular sugar substitute ( i used splenda french vanilla)

Heat oven to 350 degrees. Line two large baking sheets with parchment or waxed paper, set aside.
Combine coconut, cocoa powder, cream and extracts in a large bowl, mix well.
Combine the egg whites and cream of tartar in the medium bowl of an electric mixer. Beat on high with a whisk until thick and frothy.
Gradually add sugar sub and continue beating till stiff peaks form. Fold coconut mixture in to egg whites in three additions.
Drop slightly rounded teaspoonfuls of mixture about 1/2 inch apart. Bake rotating baking sheets from bottom to top to bottom after 5 mins. Macaroons should be slightly browned on the edges. 10-12 mins. cool on baking sheets 1 min then on wire racks til cool.

(i didn't alternate the racks when baking and they came out great! This was another good one!!!)

Here's another that I found.

Jean...is this the fudge that you made?

Low carb fudge

16 oz. cream cheese, softened
2 oz unsweetened chocolate, melted and cooled
1/2 C Splenda sugar substitute
1 teaspoon vanilla
1/2 C chopped pecans or walnuts (optional)

Line an 8-inch square baking pan with foil, waxed paper or parchment paper.
In a small mixing bowl, beat the cream cheese, melted and cooled chocolate, sweetener and vanilla until smooth. Stir in nuts (if using) and pour into pan. Cover and refrigerate overnight. Cut into squares. Serve chilled.
