I have a very bad craving for taco salad. Which I think would be fine...except....it's just not the same without the Doritos. So, how do you make the cheese chips? Put some cheese on a plate, and microwave...until burnt (I mean crispy)?

The son doesn't like tacos. So, I was thinking of making a salad, keeping the meat separate, and having it in the fridge for "my" lunches?

What do you all think?

Without making it home-made, do any of you know of a low-carb spaghetti sauce?

They had "real" chicken breast...buy one package, get one free. I was thinking of making chicken parmesan low carb...of course. Using pork rinds as a substitute for the potato flakes in the "breading", and spaghetti squash for the angel hair pasta. My mouth is drooling...just thinking about it.

Click, I have heard of people using a sugar free spaghetti sauce as low carb. Guess you'll have to read the labels, and pick the one with the lowest carbs. Chicken Parmesean doesnt use that much sauce, you'd probably be ok.

I also make taco meat and keep it in the fridge for salads. Havent done it in a while but it is sounding good again.

No wonder you are losing weight, you are exercising like a fiend.

Ailuros, not much new today, I'm working, then going home, eating then sleeping.

I think we skeerd away all our new friends. Do I smell bad?

Well.....

I still haven't got in the shower!!!!

Pear...maybe, that's why our new friends aren't here!!!! I am so excited for you!!!! Just looking at your stats...makes me...!!!! The BIG 2's will be gone soon!!!!! It's been a "learning experience," but I knew that we'd get there!!!!


Yes!!! This isn't a huge town...but it's not small neither!!! So, if you can imagine the size of the clinic? All of the doctor's personal offices, x-ray, casting, nurses stations, all of the hallways of doctor's rooms (the one's that you sit in forever), all of the waiting rooms, urology, bathrooms, lab, procedure room, records, etc...!!! It's ALOT of work. Just imagine how much garbage I haul out of there alone...not to mention the vacuuming!!!

Someone was suppose to start their first day last night, and they didn't show up. So, I did their work, and, also, "inherited" the open Wednesday night shift. So, that's twice my normal Wednesday night's work (like working a double shift...except not 8 hour shifts)...and on a permanent basis too.

That's why I haven't showered yet!!!!

I was starving...and that's when I don't follow my woe. I just grab something...like pretzels...or something.

Soooo, I diced up 2 hotdogs, fried them in butter, and scrammbled 4 (yes...4) eggs, mixed in the hotdogs with a little colby-jack, cayenne pepper and garlic salt. Now, I'm fine!!!!


I don't know if it's because I'm sooo tired, or if I might have a surprise coming, but I'm jiggly again!!! My a$$ is jiggling while I walk today....probably all of the physical activity from last night's work, but a girl can only hope...right?

Tonight, I clean at the clinic until 11, and then, go clean the vet.

Not bad....considering the owner doesn't "like" to give a bunch of hours to just one person. Then, when they quit, or go on vacation, he has to have all of their spots filled. In three weeks, I went from 6 scheduled hours to 20+ scheduled hours, and that's not including the "unscheduled" hours. It seems that I am always getting called, and asked to fill in due to some person's inability to work...or even show-up for that matter. It seems that the work ethics of many (the younger generation), is just not as strong as our generation's. They don't understand the meaning of working hard.

Pear...have you ever heard of the "Chi-Chi's" brand of restaurant seasonings packet? It doesn't make the ground beef all red...it seems that it is mostly dehydrated seasonings. I really like to use it for making taco meat. So, I'm going to look at the label...next time I'm in the store. I noticed on another brand that there were "no no's" in the ingredients. I'm hoping that this brand will be acceptable. Also, I want to know how people make the "cheese chips". That would take the place of the crushed up doritos. I don't know why, but I have a real craving for taco something...for some reason?

Since I was called-in early to work last night (without much notice), I wasn't able to make what I had planned for supper. I didn't eat supper, and I just heated a frozen pizza for the youngest. So, tonight...I HAVE to make the salmon dinner, as I defrosted it already.

So, tonight:

Salmon---fried in butter
broccoli and cauliflower...with butter and parmesan

The youngest will get a baked potato with his.

Pear...I wonder if we could make a "lower carb" version of something to put on our taco salads, as I always put sour cream, and French dressing, or salsa on it?

Could we take cream cheese, add just enough taco sauce, or salsa, to mix it...and use that instead? Do, you think that would help keep the carb count down?
