Jean, here are the next two purses that I made.



Lauren picked the denim blue yarn and bright orange fur, its really eye-popping.



Meghan picked out more subtle colors, classy, yet elegant.

Peanut Butter Noodles

8 ounces tofu shiritaki noodles
1 Tablespoon natural peanut butter
1 Tablespoon low sodium soy sauce
1 Tablespoon rice wine vinegar
liquid Splenda -- equivalent to 1 Tbsp sugar
1 Tablespoon green onion -- sliced
4 ounces boneless skinless chicken breast -- cooked, diced


Drain and rinse noodles in cold water, then drain on paper towels spread over a layer of newspaper. Put noodles in a bowl and set aside

Heat medium saute pan until hot. TURN OFF HEAT UNDER PAN.

Add peanut butter, soy sauce, vinegar, splenda and scallions into pan (keep heat off) and stir with whisk until totally blended. It might look odd until the peanut butter is completely combined with the other liquids. If it get too thick, add 1 tablespoon of water.

Add chicken and noodles into pan and turn heat on for about 1 or 2 minutes.

Optional: Add a few drops of hot oil and blend well.

Optional: Add sauteed broccoli or snow peas with chicken and noodles.

Per Serving (the whole recipe): 283 Calories; 10g Fat (34.2% calories from fat); 33g Protein; 12g Carbohydrate; 5g Dietary Fiber; 66mg Cholesterol; 765mg Sodium.

LF has been on my mind. I sure hope she gets internet access soon.

I should have told her to go to the local library to use one of their computers to at least "check in" with us. DANG IT!!! Why didn't I think of that sooner?

I had a busy and wonderful day, yesterday.

Did most of my couponing and coupon shopping.

Went to CVS and got $30 worth of stuff.
Paid only $13 for it and got $15 ECB back (Money I can use on my next purchase).

Went to 2 grocery stores and got a bunch of bargins.

Got new coupons, cut them out and filed them.

Did a bunch of cooking (Low carb and Non-low carb)

Had the entire family over and we just spent the day playing games, watching moves and playing with Irelyn and the dogs.

It was a wonderful day. I LOVE Sundays!

It takes about two evenings to make one.

Went to bed last night with nausea and a headache. I still have the headache. Bleh!

Its sunny today, hopeing for a nice lunchhour.

Tooter, I mentioned to LF that she could use the internet at the library. I hope she remembers. She needs to get online soon anyway for school.

I was eyeing the babies at church yesterday, we've got several new ones. They are just so cute and makes me want one... then I look at my teenagers and the feeling is cured.

Morning... Trying to wake up. Have blood work this morning then sposed to be going to the soup kitchen... I'm so tired tho. Not sure what was up, but I had a bad sllep last night, what sleep I got anyway..

It'd be bad to blow it off, but I did warn them last week, I may not be there today...

That makes sense, then .

I'd give you a potted intro like the others have, but it's pretty dull compared to some . I'm in English, married, no children, 46yo, been low carbing nearly five years, 4 1/2 in maintenance, though I'm a relative newcomer to this board. I like cooking and will write pages about food given the least bit of encouragement.
