A few days before he died, I went to visit him. He was so afraid of dying. He asked me what made me 'believe'. I told him that it was something I knew in my heart. I told him that if i didn't know that my sister would be with me forever, and I thought that was it when we buried her, I would have had a break down. He closed his eyes. I know now he was thinking. Then he looked at me, with tears and said softly, "thank you." The next morning I got a call that he died during the night. He was a Harvard Medical School graduate, and thought everything had to be proven by science. I hope that he died in peace with hopes that there was something more than just an end.
Yah!! I'm a scale-a-holic too!!! I just like to see results for my efforts!!! I do try my hardest with whatever I do!!!

I do not like the idea of a "final" ending neither. I like to think that the people I love aren't just laying in the cold earth...and that they have a better place that they have gone to. Also, I like to think that I can "talk" to them at times...and that they can hear me!!!

I hope that the Dr. went to the light...when he had his chance too!!!

Mornin oldies and newbies!

Check out the Fascination drama ... there was a new broadcast last night (showing tape from the deposition). The Big K admits all the lies! ketosis typed a transcript, but we're still waiting for the tv station to upload the broadcast ... oh my! What a tangled web we weave ...

L&F Looks like you are feeling better ... I'm not understanding which plan you decided on?? I have to eat a lot more than you list above to keep my metabolism going strong and my energy level up. It's important to get healthy fats, a key to success, really.

Busy day, ugh, but tomorrow is Friday!!

cheers,
Wendy

Good Morning, CentralPa (as I sit here drinking a cup of coffee IN Central Pa)

You are SOOOOOOOOOooooooooooooo Right About Good, Healthy Fats. I think for awhile there I limited them and worried about calories and such. Not anymore. Fats make a WORLD of Difference in your health and hunger factor.

I loves me my Fat!

Maybe we should make a list of healthy fats for Lost and Found.

Butter, olive oil, lard and other animal fats, coconut oil, and cream are the main "good fats" that I use regularly.

Good morning Ailuros!!!

This concept of eating these things are so far from my instilled mindset of healthy eating ...that it is hard to even think of HOW to use them!!! I mean....what do you do with lard?

CentralPa is right, you need to pick a plan, get the book for it and read up on it. On Atkins induction (the frist 2 weeks) you would not eat peanut butter, nor would you have yogurt. You see, the book and a plan would help you with this and have something that you could refer back to. It's not anyone being "snotty" with you. I guess it comes down to, do you just want a quick fix diet without changing your lifestyle and learning...Or do you want to do this right (With all the information you can get) Learn about low carb, your body and learn how to not fall back into the old ways of eating to keep your weight where it should be and your health at it's best. Did that make sense?

Information is Power.

There are other plans besides atkins. I have a host of other lowcarb diet books at my house. I have learned a great deal from them all. The reason most people choose some form of atkins is because it takes you down to the bare minimum for 2 weeks (Induction) and then slowly you add healthy carbs back in. All the while learning about "Your" body and it's reactions. You start to climb the carb ladder and realize which foods you can have all the time, those you can have once in awhile and others that if you have them at all, "will" cause you problems with weight gain, health and cravings.

So, you see...It really is important that you pick a plan and learn all that you can learn about lowcarb. Then you will know Why it works, how it works and how to make "better Choices".

One of the best books to read about Why low carb IS healthy and why we have not been told the truth as to what "Healthy" Eating is.... Is "Good Calories, Bad Calories" by Gary Taubes. It's not a diet book. Taubes is a science writer and investigated all the so-called studies and also the history of what was going on when the medical field decided that Lowfat, high fiber was truly a healthy diet. It's not true and none of the studies back it up. After reading that book (just a little while ago) It makes you realize Why low carb is so healthy and fat is important in your diet. I will never have any doubts, ever again, after seeing all those facts.

I use lard or beef dripping for browning meat/vegetables when I make a casserole, or just a little to stop sausages from sticking. I also use them on the occasions when I have a small serving of roast potato (I'm eating about 60g carb per day at maintenance, so I can accommodate the occasional potato ), and I sometimes preserve meat in jars under fat (along the lines of duck confit). Lard is good for that, but beef fat sets a bit too hard.

I make clarified butter, so that when I want a more refined flavour in a fat I'm cooking with, I can use that. Coconut oil works too, but I love the buttery flavour.

Foods with fat in them are another source: cheese, cream cheese, nuts...

I just couldn't eat low fat. I like carby things, but there are so many good things without them, that I don't feel deprived, but I couldn't imagine eating my food without a good amount of fat. Lots of the flavours in food are in fat soluble compounds, so you can't taste it as well without the fat, and there have been studies showing that people who eat salad without fat don't absorb the lycopenes and other useful micronutrients (olive oil, sour cream, avocado, cheese dressing would all work for that).

If you keep hanging around with us, you'll soon learn to love fat .

Hi I'm new here! but what about the cholesterol in the animal fats? I'm concerned about mine (cholesterol, that is). I'm interested in coconut oil because I love coconut. I've never thought about putting it in my coffee. what does that do to the coffee? Hope you don't mind my butting in!

Your body needs Cholesterol to function properly. Cholesterol is raised by high carb foods (There is an exception with some people who have a hereditary disease with Cholesterol, but that's not most people). People Assumed that eating cholesterol would cause your Cholesterol to rise. Not true. The Gary Taubes book covers this.

Virgin Coconut oil (it has not had the good stuff processed out) has a host of good qualities to it. It used to be used all the time (years ago) but when the Cholesterol thing came out and the stuff on saturated fats, OUT went Coconut oil and In went fake fats. ALso heart disease and obesity rose, co-winky-dink? I don't think so.

Back to coconut oil. It's been called the low fat, fat. The way your body process' it. It has anti-yeast qualities (great for Candida/yeast) anti-bacterial properties.

Ingesting it? You go slow, to get your body used to it. It helps your skin, hair and makes you feel full. It rev's your metab and gives you energy (don't take it at night) Since using it, I don't get colds at all. I haven't been sick at all. I also use it on my skin as a lotion and to aid in healing (Scratches, cuts, pimples..etc..) I no longer get razor rash when I shave my legs or delicate areas I just put it on, right after a bath. Alot of people swear by it to lose weight.

I like it in my Tea (not my coffee) It will leave an oily film. That's ok in my tea, but leave my coffee alone!! LOL It gives me energy after I drink it and it also gives you a full and satisfied feeling that helps you control any cravings.

I hope that helped.

I LOVE coconut oil. I even have my DIL using it on My Granddaughter. Her skin is amazing. I just wished I had learned about it years ago. *sigh* At least I know about it now.

I also use it in cooking. Stir frys, cooking fish and I will make coconut Oil bark out of it (It's like a candy bar you keep in the fridge). If I bake anything low carb, I will also use it as part (or all) of the fat/oil in the recipe.

Lost and Found, I hope you didn't take my posts as "Please don't ask questions, just read the book". That was not my intent at all. I want you to ask questions. I just want you to have all the information that you need to make low carb work for you and so that you will truly understand it. It's alot to "take in" at once and having a Plan and a book to refer to would greatly help you.

Did that make sense?

Lard is the one thing I haven't used yet. I'll be doing that soon.

When I'm really busy (and in a rush) I rely on the coconut Oil and the Cream cheese (A tablespoon or so with sweetner) to help me "Get by" until I can fix myself something good to eat. So I don't "lose it" and cave to temptation because I'm so hungry without alot of time. So far, it works. I'll take it, things calm down and then I can make myself something to eat without going over board or losing control.

Wow. that's amazing. I'm going to research it more on the web. Until yesterday (and today) I never thought of using it for anything, but there are so many uses. and the fact that high carb foods cholesterol is amazing, too. Have I been living under a rock? By the way, if the baby on your avatar is your grandaughter, she is sooooo very beautiful. I'm at work which has been very slow this week, but it's getting a little busier this a.m., so gotta go for now.

Yes, do some reading. (((((((((hugs))))))))) Yes, the baby in my Avatar is my Granddaughter. She has Never had any diaper rash. Isn't that amazing? She is my first grandchild and I'm just NUTS about her. Thank you so much for your comments.

Imustbecrazy, if you can get the Gary Taubes book (Good calories, bad calories) it will amaze you with all the information in there. You could also get it from your library (but there usually is a long line for the book). It will answer almost all the questions you have and give you the information you need to make up your mind about it. BE WARNED, you will get mad when you read the book and realize the line of "Bull" and bad science that they gave us and that we believed.

Have a great day and stop back in when you can.
