Sorry to be AWOL the last few days. Ds sold $2300 in popcorn for Cub Scouts and we've been delivering it. What a job! And he has already informed me that his goal next year is $4000! I WILL be devising a better plan by then!

I've been having a bit of trouble staying on plan. Not deviating too far off, but enough Tonight I ate Raman noodles for dinner This is what happens when I get too busy - I don't take the time I need to plan my food out. So, tomorrow I'm back at it. I am down 7 pounds and my indiscretions haven't caused me to gain, but I don't dare let that derail me either!

Anyway, I'm here, really, and am all caught up on reading the thread!

Some More Ideas...

Steak-ums/minute Steaks. If you buy the store brand they can be VERY cheap. I usually stock up on them when they are buy one box get on free. These cook up really fast.

First of all, you can break them up (in to bite sizes) while they are frozen, throw them in a frying pan, add salt/pepper and then add shredded cheese to them. When the cheese is melted it's done. Place it on top of your salad and you now have a fast "Steak Salad" For dinner.

Even if you don't have the salad, the Steak-ums are Fast and will also help you kill a craving fast.

One day I was missing manicotti and decided to use the Steak-ums as the pasta part of the manicotti. I fried about 8 of them up whole (Being careful not to rip them, they are in a rectangle shape) I drained them on a paper towel. I then made up manicotti filling. Placed part of the filling on one end of each Steak-um and then rolled them up. Put them in an 8 X 8 Caserole dish with a little Tomato Sauce on top and baked them in the oven for a little bit. They were good. Since then a bunch of us have experimented and made enchilldas out of them etc..

My tip is to use your crock pot ...

When I first started Atkins, I used a lot of deli meats as my protein source ... But I found that to be expensive ... and I also found that deli meat has too much sodium, even the expensive cuts ... So I started buying the roasts on sale at the grocer, and cooking them all day in the crock pot.

My two favorites are inexpensive cuts of beef (marked down in my grocer because the "use date" is about to expire) and frozen turkey breasts ... I cook on low for 10-12 hours, simply the meat, nothing added. Then I drain all the liguid into a separate container, and cover the meat well for the fridge. If I do one beef and one turkey breast, it lasts all week.

For a quick lunch or dinner, just slice a few pieces of meat, add some "juice" (just the meat drippings) and put in the micro. Along with a salad, and/or veggie, this is a hot meal that takes just seconds to prepare. For a cold salad, just slice some turkey, add lots of mayo and some good quality lettuce (arugula and mesclan mix are my favorites).

We never go hungry here: a quick nutritious meal takes only seconds to prepare.

cheers,
Wendy

Hi, Everyone!!!

Quick question!!!!!

Someone else made some home-made vegetable soup in the house!!!!

I thought that this would be fine, but they diced up a few potatos...will the carbs from the potatos transfer into the broth fom being simmered in there? Or will I be fine if I pick out the potatos?

Hi, Everyone!!!!!

Before losing your weight, did anyone here weigh over 200 pounds? I know that Winslow and Tooter look great now, but just wondered if you had a problem with your excess skin after losing your weight? Did it shrink too....or did you need to have it surgically removed???

Sorry I've not been on much! Work. Work,. & more work...I had my ethics meeting last night and didn't get home until 10 PM. Long, busy days lately. Who am I kidding? I LOVE IT!

The truth, L&F, is that I look better in clothes.

I'm sure that you look great any old way!!! I just wondered if the flabby skin that I've seen on some people...talk shows.... ever tightens back up after significant weight loss? I ask because most of my weight seems to be carried in my gut....if I loose all of my weight...I will probably have a lot of skin still there....and that would be alot of skin!!!!

On a serious note...what do people do with all of that skin? Fold it up neatly...as not to take up so much room...inside of their, what could be a smaller size if it weren't for all of skin...pants????

Tooter,

Boys can be a challenge for sure but I think my girls caused me more headaches. Of course any time you add more boys to the mix, well, I can just imagine. I have one boy and two girls.

My oldest daughter was a tomboy and what did she have, three boys! I had them for the summer one time and they can be rowdy but didn't come with all the emotional baggage that girls do, if you know what I mean.

I am getting some good ideas from your suggestions. I made some buns last night from Sherrie's recipe that was posted in 2002. They were so awesome that I had to package them up to keep from eating more than I should. The best low carb recipe to date. Have you tried them?

Keep the ideas coming.

BTW, do you have any idea why the little box under options won't activate. I copy and paste but the box won't cooperate. I thought I was doing it the way you suggested but no luck.

Jean

Lost and Found,

I know what you mean about getting around the idea that some of these foods go against the grain, so to speak. We have been taught all of our lives to avoid them, then suddenly they are our staples.

I have been having a real struggle getting enough carbs and calories in. I have to make myself eat during the day.

You asked about the vegetable stew with potatoes. How did you do with that? I think I would have picked out the potatoes and left the gravy as I agree, that would be full of potato carbs.

At the Atkins site they no longer recommend vegetables by the cup, but by the carb count. The more you get in, up to 12-15 a day, the better you will do and as Winslow suggested, lots of dark, leafy greens.

Sorry I wasn't here yesterday, sometimes life gets in the way, the day was just not long enough.

How are you feeling today?

Jean

Jean!!!

The vegetable soup is for tonight....and it is soup...not stew. Only broth made from boiling a ham bone, cabbage and other vegetables...I was just worried about the potatos contaminating the broth!!!!

Seriously...do you think that they will?

Hang in there, ever hear of a Whoosh? It's a low carb term that people use when they lose a few pounds all at once. You could wake up in the next day or 2 and could lose 2, 3, or even 4 pounds over night.

Don't focus on the scales (They can really mess up your head) Try and focus on the other "Tools". How do you feel? What are you moods like? How are you clothes fitting.

I would also suggest that you use a tape measure and measure yourself (Waist, thighs, hips etc...) Why? Because on low carb you might not be seeing the pounds but you are still losing inches.

You are doing Great. 5 days isn't that long. Hang in there. I bet the Whoosh Fairy shows up soon.

Oh, hon, it's not that bad. It's not bikini beautiful. No folding necessary. I go to the gym. That helps.

That's What Sarongs are for.

We go "boating" and out when we are mooring, hubby wants me in a Bikini. I will because no one is around...If boats come by, I put on a Sarong or a bathing skirt. It's not the skin with me, nor the weight loss. Umm...I gave birth to 4 sons in 6 years and they were 10 lbs!! I have a road map of Pennsylvania on my stomach!!
